6 fresh basil leaves, chopped
2 tomatoes, sliced
4 ounces fresh mozzarella cheese, sliced
⅛ teaspoon red pepper flakes

Steps:

  • Slice the loaf of bread in half lengthwise. Layer the basil, tomato slices, and mozzarella cheese between the two halves of bread. Cut into four sandwiches.
  • In a small dish, stir together the balsamic vinegar and red pepper flakes. Use as a dipping sauce.

8 medium tomatoes
3 (16-ounce) balls fresh mozzarella
4 loaves ciabatta, sliced in 1/2 lengthwise
1 cup prepared pesto
Kosher salt and freshly ground black pepper
32 basil leaves

Steps:

  • Core the tomatoes and slice each tomato and each ball of mozzarella into 1/4-inch thick slices.
  • Place the sliced ciabatta loaves on a work surface, and spread each half evenly with 1/8 cup pesto. Place 4 slices of tomato and 3 slices mozzarella side by side on the top of each half loaf and sprinkle with salt and pepper. Place 4 basil leaves on top of each sandwich.
  • Slice each half loaf crosswise into 4 serving portions, making sure that each piece has a slice of tomato, mozzarella and a basil leaf.

1/2 cup tapenade (recipe follows)
2 large ripe beefsteak tomatoes, thickly sliced
2 tablespoons extra virgin olive oil
coarse salt and fresh ground white pepper
1/2 cup fresh ricotta cheese
12 large basil leaves
2 whole salt-packed anchovies
1 cup pitted kalamata olive
2 teaspoons capers, rinsed

1 teaspoon cognac or 1 teaspoon brandy
1 small garlic clove, minced
fresh ground white pepper

Steps:

  • For the tapenade, place the anchovies in a small bowl and cover with cold water. Let stand for 10 minutes to remove the salt. Drain.
  • Using a small knife, lift the anchovy fillets from their bones.
  • In a food processor, pulse the anchovy fillets with the remaining ingredients until coarsely chopped. Transfer to a small bowl and mix well. Serve at room temperature. Makes about 3/4 cup.
  • To make each sandwich, spread 1 toasted bread slice with 2 Tablespoons of tampenade.
  • Cover with a few overlapping tomato slices, drizzle with olive oil, then season with salt and pepper.

Place the whole peppers on a sheet pan and place in the oven for 30 to 40 minutes, until the skins are completely wrinkled and the peppers are charred, turning them twice during roasting. This sandwich screams summer to me. I made it after going to the farmer's market and getting lots of fresh ingredients, including wonderful herbed ciabatta bread. If you don't like garlic much, just rub a clove on there (sliced to get the flavor. This is also delicious cold, or with a drizzle or balsamic vinegar on the tomato. For a slightly different (equally tasty, if you ask me) option, use havarti slices instead of mozzarella. Enjoy!

THIS IS A SANDWICH THAT REALLY SHOWS OFF THE CHEESE. We use Flagship and Just Jack cheeses, but any semihard cheese, such as Cheddar or Gruyère, will work beautifully. For a heartier sandwich, add a few slices of smoked turkey.

1/4 cup Basic Mayonnaise (page 234) or any all-natural mayonnaise
1 1/2 tablespoons whole-grain mustard
2 dashes Tabasco or other hot sauce
8 slices hearty artisanal white bread
4 ounces semihard cheese (page 23), cut into 8 thin slices
2 tomatoes, sliced 1/4-inch thick
12 fresh basil leaves
2 ounces semisoft cheese (page 23), cut into 8 thin slices

Steps:

  • In a small bowl, whisk together the mayonnaise, mustard, and Tabasco sauce until fully combined.
  • To assemble the sandwiches, spread half of the mayonnaise mixture on 4 slices of bread. Layer 2 slices semihard cheese, 2 slices tomato, 3 basil leaves, and 2 slices semisoft cheese on top of each piece of bread. 1 tomato, sliced
1 clove garlic cut in half
mayonnaise
onion sliced thin - as much as you like
mozzarella cheese, shredded or sliced
fresh basil leaves
salt and pepper as desired
2 slice rustic bread, toasted - per person

Steps:

  • 1. Toast the bread. Rub one side of each slice with garlic.
  • 2. Slice the very ripe tomato in half and rub into the toasted bread.
  • 3. This is what the tomato will look like. (save for veggie soup or stock)
  • 4. Slather with mayonnaise.
  • 5. Top with tomato slices, a little salt and pepper, onion, basil leaves and mozzarella.
  • 6. Top with the second piece of bread and serve. Note: You could add a couple of slices of crispy bacon, if desired.
