1/4 cup rice wine vinegar
1/4 cup chopped fresh basil leaves
1 teaspoon sugar
Salt
Freshly ground black pepper
1/2 cup extra-virgin olive oil
8 ears corn, grilled in the husk, kernels removed
1 sweet onion (such as Vidalia or Walla Walla), halved and thinly sliced
1 pint Sweet 100 tomatoes or cherry tomatoes, halved
8 ounces blue cheese, crumbled
Fresh basil sprigs, for garnish

Steps:

  • Combine the vinegar, basil, sugar, 1/2 teaspoon of salt, 1/4 teaspoon of pepper and oil in a blender and blend until smooth. Can be made 2 hours in advance and refrigerated. Bring to room temperature before using.
  • Combine the corn kernels, onion and tomato in a large bowl. Add the dressing and toss to coat, season with salt and pepper. Let sit at room temperature 30 minutes before serving. Top with crumbled blue cheese and garnish with basil sprigs just before serving. Salad can be made 1 day in advance and served cold or at room temperature.

3/4 cup soft fresh goat cheese (plain, peppered, or herbed)
4 large plum tomatoes, thinly sliced into rounds

Steps:

  • Prepare barbecue (medium heat). Cut baguette crosswise in half. Cut each half lengthwise in half to form 4 pieces total. Combine oil, garlic, and herbs in small bowl. Brush all cut sides of bread with half of oil mixture.
  • Grill bread, cut sides down, until lightly toasted, about 1 minute. Remove from grill. Quickly spread cut sides of toast with goat cheese. Top with tomatoes and olives, dividing equally. Drizzle remaining oil mixture on top.

A great summertime dish, this is an incredibly delicious recipe. I like to serve these eggplant stacks with grilled steak or chicken but these tasty stacks are good enough all on their own. The combination of the basil oil drizzled on the layers of eggplant with the goat cheese and tomato work so well together. You can't go wrong if you want to use feta instead of the goat cheese, I made a few with each and they are both equally delicious. If you are entertaining, these are a perfect choice to make ahead of time and than bake when you are ready to serve and they make a beautiful presentation!

1 large eggplant
3 large tomatoes
1 cup goat cheese or 1 cup feta
1/2 cup fresh basil leaf
1/2 lemon, juice of, fresh
2 garlic cloves

Steps:

  • Preheat oven to 350 degrees.
  • Cut the eggplant into ½" thick rounds. Lightly season them with salt on both sides and let sit on a paper towel for 30 minutes to let water to come out of the eggplant.
  • Brush or drizzle olive oil on top of each slice and grill them for 2 -3 minutes each side until cooked.
  • Blend the basil leaves with 4 tablespoons olive oil, 2 garlic cloves, lemon juice, and 1 teaspoon salt in a food processor or blender until smooth.
  • Cut the tomatoes crosswise to 1/4" thick rounds.
  • On an oiled baking pan or using parchment paper, arrange 4 eggplant rounds side by side. Spread 1/2 tablespoon of the basil-garlic mixture on top of each one, then generously sprinkle the cheese crumbs. Top each with tomato rings. Add another layer of eggplant, basil spread, cheese and tomato rounds and top with the rest of the crumbled feta. Make as many layers as you can. Usually, 1 large eggplant will make 4, 3 layer stacks.
  • Bake for approximately 20-25 minutes until the tomatoes are wilted and the cheese is soft and melted.

8 slices white bread
12 ounces Gouda or Swiss cheese
1 large ripe tomato, thinly sliced

Steps:

  • Butter one side of each slice of bread. Arrange 4 slices, buttered side down, on clean work surface. Divide cheese evenly among 4 slices of bread. Arrange tomato slices over cheese, cutting slices in half to fit if necessary. Scatter basil leaves over tomatoes. Top with remaining slices of bread, buttered side up.
  • Place sandwiches on a medium-hot grill, off direct heat. Cook until bread is golden and cheese is beginning to melt, about 4 minutes depending on heat of grill.

1/4 cup soy sauce
1/4 cup Worcestershire sauce
4 -5 tablespoons brown sugar
4 -5 tablespoons honey
juice of one lemon
juice of one lime
one chopped hot chili pepper
5 -7 tablespoons olive oil
3 -4 garlic cloves (chopped)
3 tablespoons Old Bay Seasoning
salt and pepper
5 -7 basil leaves (fresh)
one heirloom tomatoes
goat cheese
2 salmon steaks

Steps:

  • Mix first 10 ingredients in bowl.
  • Pour marinade into large freezer bag.
  • Marinate fish at least 20 minutes with bag sealed at room temperature.
  • Thinly slice the tomato and sprinkle with salt and pepper.
  • Place fish on hot grill. Add salt and pepper to taste. (Fresh ground is preferred).
  • As the fish cooks (3-5 minutes per side), use a brush and mop the marinade onto fish.
  • Turn salmon a quarter (90 degrees) after a quarter of the way through cooking. (This will give it nice grill cross hatch marks).
  • Flip fish half way though cooking. Add salt and pepper to taste to this side as well.
  • Continue to baste the fish with marinade. (Try to use all if possible).
  • Turn fish another 90 degrees after 3/4 done cooking.
  • Before fish is completely cooked, top it with thinly sliced tomato. Top tomato with fresh basil. Top basil with crumbled goat cheese. Shut the grill for a minute or two before taking fish off. Let rest a few minutes and enjoy!
  • Feel free to make the marinade to taste. It should be sweet, and salty, and sour. I did not measure anything out when making this dish. I simply tasted it a few times until it was balanced the way I liked it.

  • 1. Heat olive oil over medium-low heat in a dutch oven or large pot. Once hot, add onion and cook, stirring occasionally until softened, about 10 minutes. Add the garlic and cook for 1 more minute, stirring to avoid burning the garlic. Stir in the tomatoes, chicken stock and salt and pepper. Bring to a boil, then reduce heat and simmer for about 20 minutes. Remove from heat and let cool slightly. Carefully transfer mixture to a blender and puree until smooth. Return mixture to the pot. Stir in the cream, basil and sugar, bring to a boil and let simmer for another 20 minutes until thick and creamy. While soup is simmering, make grilled cheese. Melt butter in a skillet over medium heat. Place a piece of bread in the skillet and layer with prosciutto, Gruyere, cheddar and apple. Top with another slice of bread, and repeat for all 4 sandwiches. Cook for about 5 minutes on each side until bread has browned and cheese has melted. Serve sandwiches immediately with a bowl of soup, topped with fresh basil, Parmesan cheese or sour cream. NOTES *If you can use homemade chicken or veggie stock, I highly recommend it. It lends so much more flavour to the soup. *If you have an immersion blender, use that to puree the soup instead of transferring to a blender. Less mess, easier, and much more convenient!

Grilled Tomato, Basil, and Goat Cheese Sandwiches image

16 ounce(s) french bread baguette
2/3 cup(s) olive oil
8 large garlic cloves, finely chopped
1/2 cup(s) chopped fresh basil
1 tablespoon(s) chopped mixed fresh herbs (such as tarragon, thyme, rosemary)
3/4 cup(s) soft fresh goat cheese (plain, peppered, or herbed)
4 large plum tomatoes, thinly sliced into rounds
2 cup(s) coarsely chopped pitted mediterranean olives

Steps:

  • Prepare barbecue (medium heat). Cut baguette crosswise in half. Cut each half lengthwise in half to form 4 pieces total. Combine oil, garlic, and herbs in small bowl. Brush all cut sides of bread with half of oil mixture.
  • Grill bread, cut sides down, until lightly toasted, about 1 minute. Remove from grill. Quickly spread cut sides of toast with goat cheese. Top with tomatoes and olives, dividing equally. Drizzle remaining oil mixture on top.
  • Return open-face sandwiches to grill. Cook until bottom sides are toasted, cheese melts, and tomatoes begin to soften, about 3 minutes. Cut each sandwich diagonally in half and serve.

Grilled Pizza With Tomato, Basil, and Cheese image

Number Of Ingredients 8

2 tomatoes, large, fresh, ripe, cored
6 tablespoons olive oil, extra-virgin, or as needed
salt, coarse (kosher or sea) and freshly ground black pepper, to taste
1 recipe Basic Pizza Dough (see recipe)
2 cloves garlic, minced
2/3 cup fontina cheese, shredded or diced
1/3 cup Romano cheese, freshly grated pecorino
16 basil leaves

Steps:

  • 1. Preheat your grill so that one side is on high and the other is on medium. If using charcoal, set it up for two-tiered grilling, arranging the coals in a double layer on one side and in a single layer on the other.2. Cut the tomatoes crosswise into 1/2-inch-thick slices. Brush each with a small amount of oil and season with salt and pepper. Quickly char the tomato slices on the hot side of the grill, turning with a spatula, about 2 minutes per side. Transfer to a plate and let cool.3. Generously oil a large baking sheet and place one disk of dough on it. Use the fingers and palms of your hands to stretch out the dough into a 13 3 9 inch rectangle (it needn't be too even). This stretching technique takes a little practice, so don't be discouraged if your first rectangle isn't picture perfect. Stretch out the other disk of dough on another oiled baking sheet.4. Working with one stretched-out piece at a time, using both hands, gently lift the dough rectangle from the baking sheet. Drape it onto the grill over the hottest part of the fire. Within a minute or so, the underside of the dough will crisp, darken, and harden and the top will puff slightly. Turn the dough over with tongs or two spatulas and move it to the cooler side of the grill.5. Quickly brush the top of the pizza with 1 tablespoon of the oil. Scatter half the garlic over, then sprinkle with half the cheese and arrange half the tomato slices and basil leaves on top. Drizzle the surface of the pizza with another tablespoon of oil and season with salt and pepper.6. Slide the pizza back over to the hotter part of the grill, rotating to ensure even cooking. Cook until the underside is slightly charred and the cheese is melted on top, 2 to 4 minutes.7. Remove the pizza from the grill, cut into serving pieces, and serve while you repeat the procedure with the second stretched-out piece of dough.Makes 2 pizzas serves 8 as an appetizer, 2 to 4 as an entrée
