HAMBURGER CASSEROLE

This hamburger casserole is a hit at my house. Uses only four ingredients so it is a simple recipe to put together.

Number Of Ingredients 5

1 lb box medium shells
1 lb ground hamburger (, cooked with garlic powder, dried onion, salt and pepper to taste. We use 2 tsp each. )
21.5 oz tomato soup (2 cans)
1 cup cheddar cheese
1 cup mozzarella cheese

Steps:

  • Cook noodles according to package directions. Drain.
  • While cooking the noodles, in a frying pan, cook the hamburger until no longer pink. (If you are using salt and pepper, add it while cooking the hamburger).
  • Pour cooked noodles in a greased 9x13 baking dish.
  • Stir the cooked hamburger and tomato soup with the noodles. I just stir everything in the pan. I also sometimes add 1/2 cup of water to the mixture for a little more moisture. Completely optional.
  • Sprinkle cheese over casserole and cover with foil.
  • Bake in a 375* oven for 20 minutes.
  • Remove foil and bake for 10 minutes longer.
  • Can bake under broiler for 3-5 minutes to brown cheese, if desired.
  • Note: If you want to use 2 cups of one kind of cheese (example: mozzarella) instead of the combination, you canDried onion and garlic powder is completely optional and can be adjusted to your family's tastes

1 jar (7 ounces) oil-packed sun-dried tomatoes
3 medium onions, halved and thinly sliced
3 tablespoons balsamic vinegar
1/2 cup finely chopped red onion
2 tablespoons dried basil
2 teaspoons ground cumin
2 teaspoons ground chipotle pepper
1/2 teaspoon salt
1/4 teaspoon pepper
3 pounds lean ground beef (90% lean)
1 cup crumbled goat cheese
8 hamburger buns, split
Mixed salad greens, optional

Steps:

  • Drain tomatoes, reserving 1/3 cup oil; set aside. In a large skillet, saute sliced onions in 3 Tbsp. reserved oil until softened. Add vinegar. Reduce heat to medium-low; cook, stirring occasionally, until deep golden brown, 30-40 minutes., Meanwhile, chop sun-dried tomatoes and transfer to a large bowl. Add the red onion, seasonings and remaining 7 tsp. of the reserved oil. Crumble beef over mixture and mix lightly but thoroughly. Shape into 16 thin patties. Place 2 tablespoons goat cheese on the center of 8 patties. Top with remaining patties and press edges firmly to seal., Grill burgers, covered, over medium heat until a thermometer reads 160° and juices run clear, 5-7 minutes on each side., Place buns, cut side down, on grill until toasted, 1-2 minutes. Serve burgers on buns with onions and, if desired, mixed greens.

I saw this recipe in the Real Simple July issue...had the ingredients...didn't have DH at home for dinner...So had a great..great 'chick' meal (quote from DH) Recipe can be adjusted to any quanities you want.

6 large tomatoes, ripe (approx 2 1/2 lb)
2 tablespoons olive oil
1 teaspoon kosher salt
1/4 teaspoon black pepper
1 large garlic clove, thinly sliced
8 ounces fresh mozzarella cheese
2 sprigs fresh basil, leaves picked

Steps:

  • Heat oven to 450 degrees.
  • Slice a thin piece from the rounded bottom of each tomato, so they sit upright.
  • Slice each tomato in half horizontally. Arrange the tomato halves, cut side up on a shallow roasting pan or rimmed baking sheet lined with foil.
  • Drizzle with the oil, then sprinkle on the salt and pepper.
  • Scatter the garlic over the tomatoes.
  • Roast until they're softened and warmed through, approx 15 minutes.
  • Mine took longer -- approx 25 minutes. Mean while, cut the mozzarella into 6- 1/2 inch rounds.
  • Using a spatula, sandwich each cheese slice between 2 hot tomato halves.
  • The heat of tomatoes will melt the cheese slightly.
  • Drizzle with the juices collected in the roasting pan and garnish with basil.
