GRILLED HAM AND GOUDA CHEESE WITH CARAMELIZED ONIONS AND ROASTED TOMATO MAYONNAISE



Grilled Ham and Gouda Cheese with Caramelized Onions and Roasted Tomato Mayonnaise image

Number Of Ingredients 15

1 tablespoon unsalted butter
1 tablespoon olive oil
1 large Spanish or sweet (Vidalia) onion, halved and thinly sliced
Salt and freshly ground black pepper
1 plum tomato, halved and seeded or 2 sun-dried tomatoes in oil, drained and patted dry
1 tablespoon canola oil (if roasting tomato)
Salt and freshly ground black pepper
1/2 cup Hellmann's mayonnaise
2 cloves garlic, chopped
2 teaspoons fresh thyme leaves or 1/2 teaspoon dried thyme
8 slices good quality white bread (Pullman loaf) cut into 1/4-inch thick slices
1 1/2 cups grated Gouda cheese
Caramelized onions
8 slices prosciutto, sliced about 1/8-inch thick
8 tablespoons unsalted butter, at room temperature

Steps:

  • Caramelized Onions:
  • Heat the butter and oil in a medium saute pan over medium heat. Add the onions and cook, stirring occasionally, until golden brown and caramelized, season with salt and pepper.
  • Roasted Tomato Mayonnaise:
  • 1. Preheat the oven to 375 degrees F. Place the tomato in a small dish or baking sheet, drizzle with oil and season with salt and pepper. Roast until the tomato is very soft and golden brown, about 20 minutes. Remove from the oven and let cool slightly.
  • 2. Put the mayonnaise, tomato, garlic and thyme in a food processor and process until smooth, season with salt and pepper. Scrape into a bowl.
  • Sandwich:
  • 1. Place 4 slices of the bread on a flat surface, divide half of the cheese among the slices. Top the cheese with 2 slices of prosciutto then top the proscuitto with some of the onions and the remaining cheese. Place the 4 remaining slices of bread on top to make four sandwiches. Butter the top of the bread using half of the butter.
  • 2. Preheat a cast iron pan or cast iron griddle over medium heat. Place the sandwiches in the pan, butter-side down (may need to do in batches) and cook until lightly golden brown. Spread the remaining butter on the bread facing up, then flip and continue cooking until the bottom is golden brown and the cheese has melted. Serve with roasted tomato mayonnaise on the side.

⅓ cup diced fresh tomato
1 tablespoon chopped fresh basil
1 French baguette, sliced and toasted

  • Place Gouda cheese in a microwave-safe bowl; heat on high for 1 minute. Stir cheese and continue cooking in 30-second intervals until cheese is melted, 1 to 2 minutes.
  • Stir tomato and basil into melted cheese. Serve fondue with baguette slices.

Smoked Gouda Mac and Cheese with Green Tomato Chow Chow and Sweet Tea Chicken image

4 family-size tea bags, preferably Lipton
1/2 cup brown sugar
3 cloves garlic, smashed
3 sprigs thyme
1 Vidalia onion, thinly sliced
Kosher salt and freshly ground black pepper
3 cups ice cubes
Eight 8-ounce skin-on chicken breasts with drum attached
Vegetable oil, for frying
1 cup prepared sweet tea
12 cups roughly chopped green cabbage
3 cups roughly chopped onions
3 cups roughly chopped green tomatoes
2 cups roughly chopped roasted red peppers
3 cups sugar
2 cups white vinegar
1/4 cup pickling salt
1 tablespoon mustard seeds
1 teaspoon ground turmeric
Pinch of crushed red pepper
1 stick (8 tablespoons) unsalted butter
1/2 cup all-purpose flour
4 cups heavy cream
4 cups whole milk
2 teaspoons liquid smoke
1 teaspoon ground white pepper
18 ounces smoked Gouda, grated
2 cups grated Parmesan
2 teaspoons chopped fresh thyme
Kosher salt and freshly ground black pepper
24 ounces cavatappi pasta
Panko bread crumbs, for topping

Steps:

  • For the chicken: Bring 16 cups of water to a boil in a large pot and drop in the tea bags. Boil 2 to 3 minutes. Add the brown sugar, garlic, thyme, onion, 1/4 cup salt and several grinds of pepper and return to a boil; cook for 10 minutes. Add the ice cubes to the marinade and refrigerate it until cold, about 1 hour. Add the chicken to the brine and marinate at least 12 hours.
  • Heat enough oil to coat the bottom of a large nonstick skillet over medium-high heat for about 2 minutes. Working in batches, remove the chicken from the brine, pat it dry, and add it, skin-side down, to the pan; reduce the heat to medium. Cook until the skin is golden brown and crispy, about 3 minutes. Reduce the heat to low; flip the chicken and continue cooking until an instant-read thermometer inserted into the thickest part of the breast reads 165 degrees F.
  • Simmer the sweet tea over medium heat until it is reduced by half. It should be thick enough to coat the back of a spoon. Set aside.
  • For the chow chow: Working in batches, pulse the cabbage, onions, green tomatoes and roasted red peppers in a food processor until minced. Combine the minced vegetables with the sugar, vinegar, pickling salt, mustard seeds, turmeric and crushed red pepper in a large pot. Bring to a simmer and cook until the flavors are blended, about 10 minutes. Cool for 30 minutes at room temperature, then refrigerate for at least 5 hours.
  • For the mac and cheese: Preheat the oven to 350 degrees F.
  • Melt the butter in a large saucepan over medium heat. Add the flour and stir to incorporate, creating a blond (very light brown) roux. Add the heavy cream, milk, liquid smoke and white pepper. Cook over low heat, stirring occasionally, until the mixture is thickened and an instant-read thermometer inserted into the sauce reads 145 degrees F., 15 to 20 minutes. Slowly stir in the Gouda and Parmesan until melted. Stir in the thyme and season with salt and black pepper.
  • Meanwhile, bring a large pot of salted water to a boil. Cook the pasta for 7 minutes and drain. Immediately combine the pasta with 2 cups of the sauce in a large baking dish. (Reserve any remaining sauce for another use.) Top the pasta with some panko and bake until the bread crumbs turn golden, about 30 minutes.
  • Divide the chicken among 8 plates, placing it skin-side up. Top the chicken with some chow chow and drizzle with the sweet tea reduction. Serve with a scoop of mac and cheese.

TOMATO AND GOUDA GRILLED CHEESE SANDWICH



Tomato and Gouda Grilled Cheese Sandwich image

This is a wonderful way to use up all those tomatoes in the summer.

1 medium vine ripe tomato sliced
3 oz gouda cheese
1 Tbsp virgin olive oil
4 slice whole wheat bread
kosher salt and ground black pepper

Steps:

  • 1. In large skillet over med heat add the oil and coat pan. When the oil is hot add the tomato slices and season with salt and pepper. Cook until softened, 1 or 2 min. per side. Transfer to a plate.
  • 2. Brush the bread on both sides with some of the oil and set 2 or 3 tomato slices onto 21 of the bread slices. Grate the gouda over the tomato and top with the remaining bread.
  • 3. Wipe out the saute pan and place it over med heat. When the pan is hot, add the sandwiches and cook until the bread is golden brown 2 0r 3 minutes. Turn the sandwiches over and grill the other side another 2-3 minutes. Serve immediately.

1 1/2 cups chicken broth
1/2 cup whipping cream
1 tsp dried summer savory
1/2 tsp celery seed
3/4 cup grated Gouda cheese
Chopped fresh parsley
Additional grated Gouda Cheese

Steps:

  • Melt butter in heavy medium saucepan over medium heat. Add onion and saute until tender, about 8 minutes. Add tomatoes with their juices and chicken broth. Break up tomatoes with spoon. Simmer 30 minutes. Add cream, savory and celery seed and bring to simmer. Season to taste with salt and pepper. Ladle soup into bowls. Stir in 2 tbls grated cheese into each. Sprinkle with parsley.
