2 quarts chicken broth
2 stalks fresh lemongrass, sliced on a bias in 2-inch pieces
4 kaffir lime leaves
1-inch piece fresh galangal or ginger, sliced
2 red chiles, sliced
2 tablespoons fish sauce, such as nam pla
1 1/2 teaspoons sugar
1 (8-ounce) can straw mushrooms, rinsed and halved
1 pound large shrimp, peeled with tails on
2 limes, juiced
2 green onions, sliced
1 handful fresh cilantro, chopped

Steps:

  • Bring the stock to the boil over medium heat in a saucepan. Add the lemongrass, kaffir lime leaves, galangal, and chiles. Lower the heat to medium-low, cover, and simmer for 15 minutes to let the spices infuse the broth.
  • Uncover and add the fish sauce, sugar, and mushrooms. Simmer for 5 minutes. Toss in the shrimp and cook for about 8 minutes until they turn pink. Remove from the heat and add the lime juice, green onions, and cilantro. Taste for salt and spices; you should have an equal balance of spicy, salty, and sour. It's a good idea to tell your guest's that the lemongrass and lime leaves are for flavor only and should be avoided when eating the soup.

4 tablespoons vegetable oil
4 cloves garlic, crushed
1 small red onion, finely chopped
7 cups water
1 tablespoon black pepper
1 stalk lemongrass, cut into 2 inch lengths
1 (1 inch) piece fresh galangal root
3 fresh red chilies, thinly sliced (amount optional)
3 fresh green chilies, thinly sliced (amount optional)
4 kaffir lime leaves, scored (if using dry, soak in warm water until pliable)
1 lb medium shrimp, cleaned and deveined
6 tablespoons fish sauce
2 tablespoons fresh lime juice
1/4 cup chopped fresh cilantro

Steps:

  • Heat oil in a pot with garlic until aromatic; add onion and cook, stirring, until onion is light brown.
  • Add the water and bring to a boil.
  • Add black pepper, lemongrass, galangal, chiles, and lime leaves; return to a boil and boil for 2 minutes.
  • Place shrimp in the pot along with the fish sauce and lime juice.
  • Simmer for 3 more minutes, or until shrimp are firm and cooked.
  • Garnish soup with fresh cilantro before serving.

3 or 4 stalks lemon grass
4 cups chicken stock, preferably homemade
3 kaffir lime leaves, very thinly sliced
5 ounces oyster mushrooms, trimmed and quartered
8 ounces jumbo shrimp
2 to 3 bird pepper chilies, stemmed, seeded and minced
2 to 3 teaspoons nam pla (fish sauce)
3 to 4 tablespoons (or more) lime juice
5 sprigs cilantro, washed, dried and chopped
4 whole kaffir lime leaves, for garnish

Steps:

  • Trim the bottom of the lemon grass, and remove tough layers. Using a food processor or Japanese or French mandoline, slice the bottom 3 or 4 inches of the stalk tissue-thin.
  • Bring the stock to a boil. Add lemon grass and sliced lime leaves, and boil one minute.
  • Add the mushrooms, and simmer until mushrooms have softened, 2 or 3 minutes.
  • Add the shrimp, chilies and fish sauce, and cook until shrimp are just done. (Do not overcook the shrimp.)
  • Stir in the lime juice, tasting as you add. Serve, sprinkled with cilantro and the 4 whole lime leaves.

Of all the Tom Yum Goong recipes I've seen and tried, this is by far my favorite. Reminiscent of the first time we had it at Pearl of the Orient in Rocky River, OH. It's a good idea to tell your guest's that the lemongrass and lime leaves are for flavor only and should be avoided when eating the soup.

6 whole Thai chiles
2 quarts Thai chicken broth
1 cup peeled and deveined medium shrimp
1 (15 ounce) can whole straw mushrooms, drained
6 tablespoons fish sauce
6 tablespoons lime juice
3 tablespoons Thai garlic chile paste
6 kaffir lime leaves
6 sprigs fresh cilantro

Steps:

  • Preheat the oven's broiler and set the oven rack at about 6 inches from the heat source. Line a baking sheet with aluminum foil. Place the peppers onto the prepared baking sheet.
  • Cook under the preheated broiler, turning occasionally until the skin of the peppers has blackened and blistered, about 5 minutes. Place the blackened peppers into a bowl, and tightly seal with plastic wrap. Allow the peppers to steam as they cool, about 20 minutes. Once cool, remove and discard the skin, seeds, and stem. Chop the roasted chiles.
  • Pour the chicken broth into a large pot, and bring to a simmer over medium-high heat. Stir in the shrimp, mushrooms, and chopped roasted chiles. Return to a simmer, and cook until the shrimp are no longer translucent in the center, about 1 minute. Stir in the fish sauce, lime juice, and chile paste until the chile paste has dissolved. Ladle into bowls, and garnish each bowl with a lime leaf and a sprig of cilantro.

1 1/2 lbs medium shrimp
9 1/2 cups water, divided
1/2 cup chopped peeled fresh galangal or 1/2 cup fresh ginger
1/2 cup peeled fresh lemongrass (2-inch pieces, about 4 stalks)
6 fresh kaffir lime leaves or 6 lime zest
1/2 cup canned straw mushroom, quartered
2 tablespoons roasted red chili paste
1 tablespoon fish sauce
2 Thai chiles
1/2 cup chopped green onion
1/2 cup chopped fresh cilantro
1 tablespoon fresh lime juice
6 tablespoons chopped dry-roasted unsalted peanuts
4 lime wedges

Steps:

  • Peel and devein shrimp, reserving shells. Combine shrimp shells and 6 cups water in a Dutch oven; bring to a simmer. Cook 1 hour.
  • Strain broth through a sieve into a bowl; discard solids. Combine broth and remaining 3 1/2 cups water in a large saucepan; bring to a boil.
  • Add galangal, lemongrass, and kaffir lime leaves to pan; simmer 10 minutes. Strain broth mixture through a sieve into a bowl; discard solids.

4 cups Shrimp or Chicken Stock
1 stalk Lemon Grass, the white center only. smash, and cut into 1 ½" sections
10 slices Galangal Root, Center section cut into 8 to 10 quarter size slices
6 pieces Lime Leaves, 6 each, Bruised and cut into small strips. Remove string like vein from center.
2 pieces Thai Chilies 2 each, cut bruised and cut in half only. So you can see them.
2 pieces Tomatos, 2 each med size, cut into bite size pieces
3 cups Mushrooms, Oyster, or ??????
8 pieces Prawns, 8 each, fresh raw cleaned, and butterflied,
3 tablespoon Fish Sauce, Tiparos (Thai Fish Sauce is Nop La, Bateece)
4 tablespoon Thai Chili paste with Shrimp in Soy Bean Oil.
1 1/2 teaspoons Sugar
.5 cup Lime Juice, fresh squeezed
10 pieces Cilantro leaves, 4 to 5 on top of each bowl as a garnish on top of plated soup
1 bunch Cilantro stems and a few leaves cooked in the stock with Lemon Grass.
2 heads Shallots cut into bite size pieces
4 cloves Garlic Cloves

Steps:

  • Soup Base:
  • Add Stock, Lemon Grass, Galanga root, Lime Leaves, Thai Chili pods, Garlic, Shallots, and Cilantro stems in to a pot, and bring to a boil. Lower heat to keep it simmering.
  • When you can smell the flavors of the stock, you can continue.
  • Add Mushrooms, Tomato's and bring to a quick boil, and then back to a simmer.
  • Add Shrimp and bring to a quick boil, and turn off the stove. The heat will cook the shrimp to perfection.
  • Add the rest of the ingredients, Lime Juice, Fish Sauce, Chili Shrimp Paste, and Sugar.
  • Serve when the shrimp are cooked.
  • Some put cilantro leaves as a garnish.

Chicken or Shrimp
Mushrooms, sliced
5-6 shallots
2-3 small garlic cloves, minced
4-5 Kafir Leaf (from asian grocery store)
2-3 Lemongrass stems
1 medium size slice of Galanga
Fish Sauce
1 pkg. Tom Yum paste (Lobo brand is best)
Lime
Vegetable Oil
Coriander

Steps:

  • 1. Peel shrimp and cut back. Keep the shell. 2. Saute garlic in pot until brown. 3. Add shrimp shells and 1 cup of water (for 2-3 people). Bring to boil and then remove shells. 4. Add galanga, shallots, lemongrass, Tom Yum paste and mushrooms. 5. Add fish sauce, lime juice, coriander and kafir leaves. 6. Bring to low-medium heat. 7. Add shrimp 5 min before serving.
