1 1/4 cups flaked or shredded coconut
1 1/4 cups sliced almonds
3 cups sugar
2 3/4 cups all-purpose flour
1 cup plus 2 tablespoons best-quality cocoa (recommended: Dutch-process)
2 1/4 teaspoons baking powder
2 1/4 teaspoons baking soda
1 1/2 teaspoons salt
3 eggs
1 1/2 cups whole, 2 percent fat, or 1 percent fat milk
3/4 cup vegetable oil
1 tablespoon pure vanilla extract
1 1/2 cups very hot water
1 1/2 cups sugar
1/3 cup water
1 1/2 cups heavy cream

Steps:

  • Preheat the oven to 350 degrees.
  • Spread the coconut and almonds on separate baking sheets and toast, stirring occasionally, just until golden brown, 10 to 15 minutes. Set aside to cool.
  • Line the bottom and sides of a 14 by 17-inch baking sheet (with sides) with parchment or waxed paper. Sift together the sugar, flour, cocoa, baking powder, baking soda and salt. Transfer to a mixer fitted with a whisk attachment (or use a hand mixer) and blend briefly.
  • In a medium bowl, whisk together the eggs, milk, oil and vanilla extract. Add to the dry ingredients and mix at low speed for 5 minutes. Gradually add the hot water, mixing at low speed just until combined. The batter will be quite thin. Pour the batter into the prepared pan. Bake until a tester inserted in the center of the cake comes out clean (a few crumbs are okay), 25 to 30 minutes. Let cool in the pan.
  • Caramel: Pour the sugar into the center of a deep saucepan. Carefully pour the water around the sugar, trying not to splash any sugar onto the sides of the pan. Do not stir; gently draw your finger through the center of the sugar to moisten it. Over medium-high heat, bring to a boil without stirring. Reduce the heat to a fast simmer and cook without stirring until amber-caramel in color, 10 to 20 minutes. Immediately remove from the heat. Using a wooden spoon, slowly and carefully stir in the cream (it will bubble up and may splatter). Stir in the toasted coconut and almonds. Set aside.
  • When ready to serve, cut the room-temperature cake in the pan into 6 even strips, each 3 inches wide. Using diagonal strokes of the knife, cut each strip into 4 triangles. If the sauce has stiffened, rewarm it over low heat (or in a microwave) until softened. Place a triangle on each plate, drizzle with sauce, and rest another triangle on top at a different angle. Drizzle with more sauce and serve.

Coconut-Chocolate Icebox Cake with Toasted Almonds image

Chocolate wafer cookies and coconut whipped cream layer up into this impeccable no-bake dessert. Frost the outside of the cake with more whipped cream if you like, or leave it "naked" with the layers visible for all to see.

3 (13 1/2-fl-oz [400-ml]) cans full-fat coconut milk
1/2 to 1 tsp almond extract
3/4 cup [90 g] confectioners' sugar
1 1/2 cups [360 ml] heavy cream
1 1/2 cups [90 g] sweetened shredded coconut, toasted
9 oz [255 g] crisp chocolate wafer cookies
1/2 cup [60 g] sliced almonds, toasted

Steps:

  • Place the cans of coconut milk in the coldest spot in your refrigerator upside-down and leave them there for 24 hours. This will allow the coconut cream in the milk to solidify and separate from the liquid.
  • Line a 9-by-5-by-3-in [23-by-12-by-7.5-cm] loaf pan with plastic wrap that hangs slightly over the sides of the pan.
  • Flip the cans of coconut milk right-side up, open the cans, and, using a rubber spatula, carefully scrape the solid coconut cream into the bowl of a stand mixer fitted with the whisk attachment. Save the liquid for another purpose. Add the almond extract and confectioners' sugar, and whisk on medium speed until smooth and thick. Add the heavy cream and whisk on medium-high speed until the cream holds stiff peaks, about 2 minutes. Add the toasted coconut and fold it into the cream with a rubber spatula.
  • Using a small offset spatula or the back of a spoon, spread a thin layer of the whipped cream on the bottom of the lined pan. Cover as much of the cream as possible with a layer of wafers, filling any gaps with broken wafers, to create a solid layer of wafers.
  • Continue layering whipped cream and wafers until you run out or reach the top of the pan, ending with a layer of wafers. Gently cover the surface with plastic wrap and refrigerate for at least 6 to 8 hours, or preferably overnight. If you have whipped cream left over, store this in the refrigerator along with the cake.
  • Remove the cake from the refrigerator prior to serving and peel off the plastic wrap. Place a serving plate over the pan and invert the cake onto the plate. Carefully remove the pan and plastic wrap lining and, if using, thinly spread the remaining whipped cream over the sides and top of the cake. Re-whip the cream if it looks too soft to spread. Sprinkle the cake with the toasted almonds, lightly pressing them into the cake.
  • Using a serrated knife, cut the cake into slices and serve. The cake will keep, lightly wrapped with plastic wrap, in the refrigerator for up to 3 days.

1 1/2 cups - milk
2 cups - sugar
1/4 cup - gold rum
8 ounces - bittersweet chocolate (60%), chopped
3 tablespoons - unsalted butter
4 - large eggs, seperated
1 cup - heavy cream
1/2 pound - unsweetened coconut flakes, toasted
1 1/2 cups - heavy cream
2 tablespoons - unsweetened cocoa powder
3 tablespoons - sugar

Steps:

  • PREPARATION Make Cake: Preheat oven to 325º. Butter and flour two 9 inch cake pans. Sift the flour with the baking powder and salt into a bowl, set aside. Cream butter and sugar in a large mixing bowl. Beat in melted chocolate. Add egg yolks one by one, beating well after each. Add vanilla and mix. Beat in dry ingredients in 3 batches, alternating milk, and beat until smooth. In another bowl, beat the egg whites to stiff peaks, then fold into the batter. Pour into the pans and smooth the tops. Bake until cake tester comes out clean, about 35 minutes. Let cool for 3 minutes on a rack, then invert pans to unmold, and let cakes cool completely. Make Rum Syrup: Bring 2 cups of water to a low boil over medium heat. Stir in the sugar and cook until dissolved, about 1 minute. Stir in the rum and set aside to cool. Make Mousse: Melt chocolate and butter in a double boiler over simmering water until chocolate is just melted, stir until smooth. Remove from heat and stir in egg yolks while chocolate is still warm. Scrape into another bowl and let cool. In a clean bowl, beat cream into soft peaks, then fold into the chocolate mixture. I've been dreaming about developing an icebox cake featuring the flavors of chocolate, coconut, and almond since cowriting Icebox Cakes. The Pecan Refrigerator Cake recipe from Best Cake Recipes (1929) influenced my version here. The original calls for ladyfingers layered with uncooked eggs (!) and sugar, but I chose to use chocolate wafer cookies and coconut whipped cream, made from coconut milk instead. If you have leftover whipped cream, use it to frost the outside of the cake, as in the picture. Although, truth be told, I prefer the cake "naked," with the layers visible for all to see.
