1-1/2 cups water
1-1/2 cups uncooked instant rice
1 tablespoon butter
1/2 cup slivered almonds, toasted
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon minced fresh parsley

Steps:

  • In a large saucepan, bring the water, rice and butter to a boil. Remove from the heat. Cover and let stand for 5 minutes or until water is absorbed. Stir in the almonds, salt and pepper. Sprinkle with parsley.

Steps:

  • Melt 4 tablespoons butter in a pot over medium-high heat. Stir in 2 cups converted long-grain rice, 1 teaspoon salt and 1/2 teaspoon pepper. Cook, stirring, until the rice is golden, about 5 minutes. Add 2 cups each chicken broth and water; bring to a simmer, then cover and cook over low heat, 15 minutes. Remove from the heat and let stand 5 minutes. Fluff with a fork and stir in chopped scallions and parsley.

1 tablespoon butter
1 small minced onion
1/4 teaspoon ground coriander
Coarse salt and ground pepper
1 cup long-grain rice
1 can (14 1/2 ounces) reduced-sodium chicken broth
2 tablespoons chopped fresh parsley
1/4 cup toasted sliced almonds

Steps:

  • In a medium saucepan, melt butter over medium heat. Cook onion, stirring occasionally, until golden brown, about 8 minutes.
  • Add coriander; season with coarse salt and ground pepper. Add rice; cook, stirring, until edges are transparent, about 2 minutes.
  • Stir in 1 can chicken broth. Bring to a boil. Cover; simmer over low heat until liquid is absorbed, about 15 minutes. Remove from heat; let stand, covered, 10 minutes.
  • Stir parsley into rice. Sprinkle with almonds, and serve.

4 Tbsp. PLANTERS Peanut Oil, divided
1 egg, lightly beaten
1/4 cup sliced almonds
2 Tbsp. green onion slices
1 clove garlic, minced
3 cups cooked rice, chilled
1 can (8 oz.) peas, drained
1 can (8 oz.) sliced water chestnuts, drained
1 jar (2 oz.) sliced pimentos, drained
3 Tbsp. soy sauce
1/2 tsp. sugar

Steps:

  • Heat 1 Tbsp. of the oil in large skillet or wok. Add egg; stir-fry 1 to 2 min. or until set. Remove egg from skillet; cover to keep warm.
  • Add 1 Tbsp. of the remaining oil to same skillet; heat 30 sec. Add almonds, green onions and garlic; stir-fry 2 to 3 min. or until almonds are lightly toasted. Remove from skillet. Heat remaining 2 Tbsp. oil in same skillet. Add rice; stir-fry 3 min.
  • Return egg and almond mixture to skillet. Add peas, water chestnuts, pimientos, soy sauce and sugar; mix well. Cook until heated through, stirring constantly.

1 c white rice or brown rice
1/3 c chopped dried apples
1/3 c slivered almonds, toasted
1 Tbsp parsely flakes
1 Tbsp chicken boullion granules
2/3 c apple juice or apple cider
1 Tbsp butter
1 1/2 c water

Steps:

  • 1. Combine rice, apples, almonds, parsley, bouillon granules, apple juice/cider, butter and water in a 2 to 3 quart saucepan.
  • 2. For brown rice, use 1 3/4 c water; white rice uses 1 c of water.
  • 3. Bring to a boil, stirring once or twice.
  • 4. Lower heat to simmer, cover with a tight-fitting lid.
  • 5. Cook for 15 minutes (45 minutes for brown rice) or until the liquid is absorbed.

1 tablespoon soy sauce (low sodium)
