Time 35m

Yield 12 servings

Number Of Ingredients 9

8 ounces large jarred or canned butter beans, drained and rinsed
24 cherry tomatoes, each stabbed with a knife (so they don't pop in the oven)
1/2 cup extra-virgin olive oil, divided
3 cloves garlic, 2 thinly sliced and 1 peeled and left whole
Flaky sea salt and freshly ground black pepper
2 tablespoons fresh sage leaves, thinly sliced
1 tablespoon vegan Worcestershire sauce (no anchovies)
12 slices baguette
Chives, cut into 1-inch pieces, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Arrange the butter beans on one side of a baking dish and the tomatoes on the other side. Drizzle with 2 tablespoons olive oil, the 2 sliced garlic cloves and a sprinkle of sea salt all over.
  • Sprinkle the sage only over the butterbeans and drizzle the Worcestershire sauce only over the tomatoes. Toss each section individually with a couple of spoons and keep separate, to keep the flavors separate.
  • Bake until the butter beans start to turn golden and the cherry tomatoes are soft and roasted, about 15 minutes. Remove from the oven.
  • Meanwhile, put the slices of baguette on a baking sheet, drizzle each with 1/2 tablespoon olive oil and toast in the oven until golden, about 12 minutes. Then remove to cool.
  • When the toasts are cool, rub one side of each with the remaining whole garlic clove.
  • To assemble, lay some of the butter beans (about 4) on each toast, pressing down gently with a fork to slightly crush so they do not roll around. Arrange 2 roasted tomatoes on top and garnish with a few chives. Arrange on a serving plate and eat!

EASY BUTTER BEANS WITH TOMATO AND MARJORAM

Easy Butter Beans With Tomato and Marjoram image

Fasolka po bretońsku, as these beans are called in Polish, are earthy and full of flavor. Canned butter beans or lima beans work just as well.

Provided by Zuza Zak

Yield Serves 2

Number Of Ingredients 8

400 g (14 oz) dried butter (lima) beans, soaked overnight (or 2 x 14 oz cans, rinsed and drained)
2 Tbsp. neutral oil
1 onion, roughly chopped
6 slices lean bacon, chopped
1 Tbsp. dried marjoram
1 tsp. paprika
1 400 g (14 oz) can chopped tomatoes
Salt and white and black pepper, to taste

Steps:

  • If you are using soaked dried beans, drain and rinse them and then cook them in a large pan of boiling, salted water for about 35 minutes, or until soft (but not falling apart).
  • Meanwhile, heat the oil in a large pan over a medium heat and fry the onion and bacon for about 5 minutes, stirring occasionally, until the onion is softened. Stir in the marjoram and paprika and cook for a further minute or two.
  • Once they're glossy, add the chopped tomatoes and the now cooked and drained butter beans (or canned beans). Allow to simmer for 20 minutes, stirring occasionally, before serving with some crusty bread.

PAN CON TOMATE

Pan Con Tomate image

Some version of tomatoes on toast - a juicy American B.L.T. or Italian tomato-topped bruschetta - is always a good idea, but that's especially true during high summer, when tomatoes are at their peak. One superior combination comes from Barcelona, where a slice of toast is rubbed with garlic and juicy ripe tomatoes, then anointed with olive oil. Most Catalan cooks simply cut the tomato crosswise and vigorously massage the toasted bread with the cut side. Others grate the tomato flesh and spoon it over the bread. This version adds tomato slices and a scattering of cherry tomatoes for a substantial first course.

Time 30m

Yield 4 to 6 servings

Number Of Ingredients 7

3 or 4 very ripe medium tomatoes (about 1 1/2 pounds)
1 pint cherry tomatoes (about 12 ounces)
4 to 6 large slices sturdy sourdough bread, about 1/2-inch thick
4 to 6 garlic cloves, peeled
Salt and pepper
Extra-virgin olive oil
Basil leaves, for garnish (optional)

Steps:

  • Cut 2 tomatoes in half crosswise. Place a box grater in a shallow bowl and grate the tomato flesh from the cut sides, pushing through the large holes. You should have 1 cup or so of coarse tomato purée. Set purée aside, and discard tomato skins.
  • Cut remaining large tomatoes into 1/4-inch slices. Cut cherry tomatoes in half. Set aside.
  • Toast the bread until nicely browned and crisp. (Toasting over a charcoal grill yields a rich, smoky flavor, but a toaster, toaster oven or broiler works just as well.)
  • With your fingers, rub the top of each toast with a garlic clove. You will see the cloves get smaller as the garlic is dispersed, pushed into the bread. (For a less garlicky toast, press lightly when rubbing.)
  • Place toasts on a platter or individual plates. Spoon and spread a heaping tablespoon of tomato purée over each toast. Then arrange tomato slices and cherry tomatoes randomly on top.
  • Sprinkle generously with salt, pepper and a tablespoon of extra-virgin olive oil per toast. Garnish with whole or torn basil leaves, if using.
