CHOW MEIN NOODLE CASSEROLE

This is a very tasty dish that even my kids love! It can easily be cut in half. It uses soy sauce and chow mein noodles to give it an Asian flair.

1 pound ground beef
1 onion, chopped
2 stalks celery, chopped
½ cup slivered almonds
1 cup cooked rice
1 (10.75 ounce) can condensed cream of chicken soup
½ cup water
3 tablespoons soy sauce
5 ounces chow mein noodles

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet over medium high heat, saute the ground beef for 5 minutes. Add the onion and celery and saute for 5 more minutes.
  • In a separate medium bowl, combine the almonds, rice, soup, water and soy sauce. Mix together well and add to the beef mixture. Place this into a lightly greased 9x13 inch baking dish. Top with chow mein noodles.
  • Bake at 350 degrees F (175 degrees C) for 20 minutes.

6 ripe plantains
8 cups chicken stock
1 1/2 pounds pork meat with fat, such as boned pork ribs
Salt and pepper
6 cloves garlic, mashed
Juice of 2 lemons
8 slices cooked bacon, crumbled
1/2 cup sliced green onions

Steps:

  • Cut the ends off the plantains and discard. Slice each plantain into 2-inch chunks and score the skins with a knife along one edge. (Do not remove the peel.) Combine the plantains with the chicken stock in a large pot. Bring to a boil, then lower heat, cover and simmer until tender.
  • Cut the pork into approximately 1-inch cubes. Season with salt, and place in a large sauce pan. Add enough water to just barely cover the pork. Bring to a boil and simmer, uncovered, until all of the water has boiled away and the pork begins to fry in the rendered fat. Continue to cook just until brown but not crispy. (The meat should be tender and stringy.)
  • Remove the fully cooked plantains from the broth, reserving the broth. Peel the plantains. Mash the plantains with a little of the broth, just enough to make a soft paste, like mashed potatoes.
  • Mash together the plantains, garlic and lemon juice. Mix in the pork and half of the bacon. Season with salt and pepper. Garnish the top with the remaining bacon and green onions and serve hot.

This knocks spots off the local take-away stuff. Only a few minutes to make and is miles cheaper. Very tasty, too.

2 tablespoons vegetable oil
2 eggs, beaten
6 green onions, sliced
4 ounces boneless skinless chicken breasts, roughly chopped
1 clove garlic, finely chopped
1 inch fresh gingerroot, finely chopped
1 red pepper, seeded and diced
2 ounces pepperoni, thinly sliced
2 ounces frozen peas, thawed
1 tablespoon soy sauce
8 ounces cooked long-grain rice

Steps:

  • Heat a little of the oil in a wok or large skillet.
  • Tip in the beaten egg and stir with a chopstick until set.
  • Remove from pan and set aside.
  • Heat the remaining oil in the pan and stir-fry the chicken, garlic, ginger and pepper over a high heat for 5 minutes.
  • Stir in the pepperoni, peas, onions, rice and eggs and continue to cook, stirring, for a further 3-4 minutes until piping hot, Season with the soy sauce and serve.

TO-FU MANCHU

1/2 cup orange juice
1 1/2 tablespoons honey
1 cup raspberries
1 cup diced banana
1/2 cup diced mango
1/2 cup soft silken tofu

Steps:

  • Place the orange juice, honey, raspberries, banana, mango, and tofu in a blender and mix on low speed until the mixture is blended. Continue mixing, gradually increasing the speed, until the mixture is smooth.
