Dredging tender fish fillets in an herby coating and flash searing them along with green beans and cherry tomatoes makes an easy and healthy dinner. We like to use thin green beans -- they cook much faster.

Number Of Ingredients 10

2 tablespoons all-purpose flour
2 teaspoons chopped fresh oregano, plus more for garnish
2 tablespoons chopped fresh parsley
Kosher salt and freshly ground pepper
Four 6-ounce tilapia fillets
4 tablespoons unsalted butter
1/2 pound thin green beans or haricots verts
1 clove garlic, chopped
1 cup grape or cherry tomatoes, halved
Juice of 1 lemon

Steps:

  • Combine the flour, oregano and parsley in a shallow dish. Season with salt and pepper.
  • Place a large skillet over medium-high heat. Dredge the fish in the flour mixture, shaking off the excess. Melt 3 tablespoons butter in the skillet, then add 2 fillets and cook until golden brown on the bottom, about 4 minutes. Flip and cook through, 1 to 2 more minutes. Transfer to a plate and keep warm. Repeat with the remaining 2 fillets.
  • Add the green beans and garlic to the skillet and cook about 2 minutes. Season with salt and pepper, then add the tomatoes and cook until just softened, about 1 more minute. Stir in the lemon juice and 1/4 cup water, then cover and cook until the beans are tender, about 3 more minutes. Remove from the heat and stir in the remaining 1 tablespoon butter until just melted.
  • Divide the fish and vegetables among plates. Garnish with oregano.

1 pound fresh or frozen green beans, cut into 2-inch pieces
1/2 cup water
1/4 cup slivered almonds
2 tablespoons butter
1 teaspoon lemon juice
1/4 teaspoon seasoned salt, optional

Steps:

  • Place beans and water in a large skillet or saucepan and bring to a boil. Cover and cook until crisp-tender, 10-15 minutes; drain and set aside. , In a large skillet, cook almonds in butter over low heat. Stir in lemon juice and, if desired, seasoned salt. Add beans and heat through.

Most of the amandine recipes posted here are fried, but this one is baked. The fish also gets a little extra flavor from the creole seasoning. Recipe is from the Clinton High School Booster's Club, in Clinton, MS.

1/4 cup butter, melted
3 tablespoons lemon juice
6 tilapia fillets (about 2 lbs)
1 1/2 teaspoons creole seasoning
1/2 cup almonds, sliced

Steps:

  • Combine the melted butter and lemon juice in a shallow dish. Dip the fish fillets in the butter mixture, and place in an ungreased 13x9x2 inch baking dish.
  • Sprinkle the fillets evenly with the Creole seasoning. Bake, uncovered, at 375 degrees for 15 minutes. Sprinkle the fillets with the sliced almonds, and bake an addtional 10 minutes or until the fish flakes easily. (Cooking time varies with the thickness of your fish).

2 1/2 pounds green beans, preferably haricot verts, trimmed
1 teaspoon kosher salt, plus more
1/2 cup (1 stick) unsalted butter
1 cup (3.5 ounces) sliced almonds, preferably skin-on
2 tablespoons fresh lemon juice
Do Ahead
Green beans can be blanched 1 day ahead. Let dry, then transfer to an airtight container and chill.

Steps:

  • Cook green beans in a large pot of boiling salted water until crisp-tender, 5-7 minutes. Drain, then immediately transfer to a large bowl filled with ice water. Drain again and pat dry.
  • Melt butter in a large, deep-sided skillet over medium heat. Add almonds and 1 tsp. salt and stir to coat. Cook, stirring occasionally, until fragrant and beginning to brown, about 3 minutes. Add green beans and lemon juice and stir to coat; cook just until warmed through.
  • Transfer green beans to a platter. Pour butter sauce and almonds over and serve.

TILAPIA WITH GREEN TOMATO TAPENADE

The tapenade is great in pasta, served as an appetizer on bread rounds, or over another mild fish or thin chicken breast. It's a great way to use up your green tomatoes at the end of the season. You can also make a big batch and freeze it. It is a nice taste of late summer when it's cold out. I do have to say, I think this is good enough; I am looking forward to summer's first tomatoes that might just not get a chance to ripen!

1 teaspoon olive oil
¼ large onion, diced
1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)
2 green tomatoes, diced
1 tablespoon capers
1 pinch dried basil
salt and ground black pepper to taste
1 ½ pounds tilapia fillets
1 tablespoon olive oil
1 tablespoon lemon juice

Steps:

  • Heat 1 teaspoon olive oil in a skillet over medium heat. Add onion; cook and stir until translucent, about 5 minutes. Stir in diced tomatoes, green tomatoes, capers, basil, salt, and pepper. Cook, stirring occasionally, until flavors combine, about 5 minutes.
  • Season tilapia fillets with salt and pepper.
  • Heat 1 tablespoon olive oil in a large skillet over medium heat. Add tilapia fillets; cook until flesh flakes easily with a fork, about 3 minutes per side. Transfer to a serving platter.
  • Pour lemon juice into the skillet; swirl to pick up browned bits off the bottom of the skillet, 30 seconds to 1 minute. Pour over fillets.
  • Spoon tomato mixture over fillets before serving.
