Tilapia with tomatoes and capers is easy to make for a weeknight dinner, healthy, and full of flavor! Serve it with wilted spinach, angel hair pasta, or both.

4 tbsp butter
1 lb tilapia fillets
2 tsp Adobo seasoning
2 cloves garlic (minced)
1/2 cup white wine
1/4 cup capers
28 oz canned diced tomatoes (undrained)
1 tbsp cornstarch
2 tbsp chopped Parsley
1/2 lb angel hair pasta
5 oz fresh spinach
1 tbsp olive oil

Steps:

  • Melt 1 tbsp butter in saute pan over medium high heat.
  • Season both sides of tilapia with Adobo seasoning. Cook for 2-3 minutes on each side without moving. Set aside and cover with foil to keep warm.
  • Melt remaining 3 tbsp butter in pan. Add garlic and cook until fragrant, about 30 seconds. Add white wine, capers, and tomatoes. Bring to a simmer.
  • Add about 1 tbsp cold water to cornstarch and mix to make a slurry. Pour into sauce mixture while stirring and simmer about 5 minutes, until thickened.
  • Cook angel hair pasta according to directions. Drain.
  • To save dishes, while the pasta is draining in a colander, add olive oil to the hot pasta pot, add spinach, and stir until just wilted, 1-2 minutes.
  • Divide pasta, fish, and spinach between plates and spoon sauce over everything.

8 ounces angel hair pasta
2 (14 ounce) cans diced tomatoes with basil oregano and garlic, undrained
1/4 cup chopped fresh parsley
1/4 teaspoon dried oregano
1/2 teaspoon crushed red pepper flakes
4 (4 -6 ounce) tilapia fillets
2 tablespoons fresh lemon juice
2/3 cup crumbled reduced-fat feta cheese
chopped fresh parsley (to garnish)

Steps:

  • Cook pasta;drain. Heat oven to 400°F.
  • Spoon tomatoes into shallow baking dish. Stir in parsley, oregano and crushed red pepper flakes. Put fish on tomatoes. Drizzle with lemon juice. Spoon some tomato mixture on fish. Sprinkle with feta. Bake 12-14 minutes, or until tomato mixture is bubbly and fish is opaque. Serve on pasta. Garnish with parsley.

4 ounces elbow macaroni
2 tablespoons light olive oil
2 tilapia fillets
1 tablespoon lemon juice
⅛ teaspoon dried oregano
1 pinch dried basil
1 pinch dried cilantro
1 pinch salt and ground black pepper
1 tablespoon light olive oil
¼ cup freshly grated Parmesan cheese
1 teaspoon lemon juice
1 pinch garlic powder
1 pinch dried basil
1 pinch dried oregano
1 pinch dried cilantro
1 pinch salt and ground black pepper

Steps:

  • Bring a saucepan of lightly salted water to a boil over medium heat, stir in the macaroni, and return to a boil. Cook the macaroni uncovered, stirring occasionally, until it is cooked through but still firm to the bite, about 8 minutes. Drain well.
  • Meanwhile, heat 2 tablespoons of olive oil in a skillet over medium heat. Sprinkle both sides of the tilapia fillets with lemon juice, oregano, basil, cilantro, salt, and pepper, and lay the fillets in the heated skillet, making sure they don't touch. Sear the fillets for 2 to 4 minutes on each side, until the fish is golden brown on the outside, and opaque and flaky inside.
  • Return the hot, cooked macaroni to the saucepan, and stir in 1 tablespoon of olive oil to coat the pasta. Sprinkle on the Parmesan cheese, stir to mix, and stir in 1 teaspoon of lemon juice, the garlic powder, basil, oregano, cilantro, salt, and pepper. Divide the pasta between two plates, and top each with a tilapia fillet.

2 tablespoons extra-virgin olive oil, twice-around-the-pan
1 small onion, finely chopped, about 1/3 cup
2 cloves garlic, chopped
1/2 cup dry white wine
1 (15-ounce) can stewed tomatoes
3 tablespoons chopped flat-leaf parsley
2 pounds cod or haddock, rinsed and dried
Salt and pepper
2 tablespoons butter
1/2 pound angel hair, cooked just shy of al dente, about 4 or 5 minutes

Steps:

  • Preheat oven to 375 degrees F.
  • To a small skillet preheated over medium heat, add extra-virgin olive oil, onion and garlic. Cook onions 5 minutes, until translucent. Add wine to the pan and reduce for 30 seconds. Add tomatoes and break up the sliced stewed tomatoes with a wooden spoon as they heat through. When the sauce comes to a boil (2 or 3 minutes) remove it from the heat and stir in the parsley. Season the fish with salt and pepper. Pour a few spoonfuls of sauce into the bottom of a shallow baking dish. Add fish to the dish in a single layer. Add remaining sauce and bake 15 to 17 minutes until fish is firm and opaque.
  • Remove fish to serving plate or dinner plates. Spoon a few bits of tomato and sauce over the fish. To the remaining sauce in the baking dish add 2 tablespoons butter cut into small pieces. Add hot pasta to butter and sauce and turn pasta in dish to coat evenly and to allow pasta to absorb juices. Pile pasta alongside fish and serve. If you are entertaining, try bundling portions of pasta around a large, 2-pronged meat fork, by twisting the fork in the pasta allowing it to curl up the fork. Shimmy the twisted pasta off the fork on to a plate you will create pasta "nests." This simple "twist" adds a lot to the plate presentation.

1/2 cup Land O Lakes® Butter with Olive Oil & Sea Salt
1 medium onion, chopped (1/2 cup)
4 cloves garlic, finely chopped
3 tablespoons julienne-cut sun-dried tomatoes in oil, drained
1 teaspoon dried oregano leaves
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon salt
3 teaspoons capers, drained
1 lb uncooked medium shrimp, peeled, deveined
Juice of 2 lemons

Steps:

  • Cook pasta as directed on package; drain, reserving 1/2 cup cooking water. Return pasta to saucepan; cover to keep warm.
  • Meanwhile, in large skillet, melt butter over medium heat. Cook onion and garlic in butter about 5 minutes, stirring frequently, until onion has softened. Add sun-dried tomatoes, oregano, pepper flakes, salt and capers. Cook 3 minutes longer.
  • Stir in shrimp. Cover; cook until shrimp just turn pink, about 5 minutes. Stir in lemon juice. Gradually stir in reserved pasta cooking water.
  • Add pasta to skillet; toss with shrimp and sauce. Serve immediately.

2 cups milk
2 tablespoons butter
2 tablespoons flour
1/2 teaspoon Old Bay Seasoning
nutmeg
1 -2 tablespoon olive oil
6 ounces red onions, chopped
4 cloves garlic, minced
5 ounces snow peas, slice on an angle
1 1/2 lbs lobsters, cut into the same size as shrimp or 1 1/2 lbs crab, all shelled and cleaned
1/2 teaspoon Old Bay Seasoning
2 tablespoons parsley, chopped
salt and pepper
1 lb angel hair pasta, cooked as directed on box

Steps:

  • In a pot melt butter and add flour stir to blend add milk, 1/2 old bay, and nutmeg stir and simmer till thickened.
  • Season seafood with old bay set aside.
  • In a hot large pan place oil, add red onion cook still softened add garlic, snow peas, shrimp, lobster cook stirring till seafood turns pink add crab meat, and (add more oil or butter if needed) parsley and salt and pepper and sauce.
  • Stir pasta into seafood mixture and garnish with parsley leaves.
