This is a great change from the usual fruit dip recipes and it is so easy to make with only three simple ingredients. It is a recipe from my niece who got it from a friend who prepares fruit trays for a major grocery store. The preparation time is an estimate of the time it takes to prepare the fruit.

1 cup sour cream
2 tablespoons brown sugar
1/2 teaspoon vanilla extract

Steps:

  • Mix sour cream, brown sugar and vanilla extract together.
  • Let stand in refrigerator for flavors to combine (at least an hour or two or even better overnight).
  • Cut fruit such as apples, bananas, grapes, melon, oranges, peaches, pears, strawberries or watermelon into pieces, chunks, wedges as desired.
  • Dip apples and bananas in lemon juice to prevent discoloration.
  • Place prepared fruit around the edge of a serving dish or tray.
  • Place dip in a pretty dish in the center of the tray.

I first tried this years ago when a friend passed on the recipe. I whipped the ingredients together until thick and loved the result but later found my friend just stirred hers so her dip was quite liquidy. I actually prefer it whipped but either way guests enjoy it. I have also used Godiva or Mozart Liqueur (chocolate) depending on what I have available. I made this yesterday with Mozart Liqueur for JanS - she requested I submit the recipe.

300 ml pure sour cream, light will not whip
2 -3 tablespoons brown sugar, to taste
4 tablespoons Tia Maria, to taste

Steps:

  • Whip ingredients together until thick.
  • Serve with fresh fruit cut into reasonable sized chunks for easy dipping.
  • I like to use rockmelon, pineapple, kiwi fruit, strawberries and then maybe another fruit in season, whatever looks nice arranged in colours.

PASTRY CREAM ( FOR FILLING ECLAIRS AND FRUIT FLANS)

A rich and dense recipe for filling eclairs, fruit tart. Pastry cream may be varied with other flavours such as Rum, Brandy, Tia maria, Passion fruit, orange, lemon, whisky, praline. To make chocolate pastry cream add 50g cocoa to the milk.

2 eggs
100 g caster sugar
50 g flour
10 g custard powder
500 ml milk
vanilla pod or vanilla flavoring

Steps:

  • Whisk the eggs and sugar in a bowl until almost white.
  • Mix in the flour and custard powder.
  • Boil the milk in a thick based pan.
  • Whisk onto the egg mixture, mix well.
  • Return to the heat and stir to the boil. Add the vanilla.
  • Remove from the heat and pour into a basin. Stir occasionaly to avoid a skin forming on the surface of the pastry cream.
  • Cool, and use as needed.

TIA MARIA LIQUEUR

The third recipe of liqueurs my girlfriend gave me oh so long ago. Again I will mention that being a Quebec recipe it asks for "Alcool" which is basically a 40% alcohol. Not sure if alcohol is available in the USA. I love having a glass of this mixed into some milk, absolutely delicious.

2 tablespoons instant coffee (Tasters Choice Please)
1 1/2 cups dark brown sugar
1 1/2 cups white sugar
1 teaspoon vanilla
1 cup water
25 ounces alcohol

Steps:

  • Bring first 5 ingredients only to a boil. Let stand to cool.
  • Skim & put through strainer or cheesecloth.
  • Cool completely.
  • Add 25 oz alcohol and stir well.
  • Store for 30 days if you can. Just makes it taste better.

  • Beat the cream cheese with an electric mixer on the lowest speed until smooth. Gradually add the sour cream, beating continually. Mix in the brown sugar, vanilla, and milk. Cover and chill at least 1 hour before serving.
