Thyme tea is a wonderful winter time drink It is a a powerful antiseptic, antibacterial infection and inflammation reliever. For a wonderful refreshing blend try Lemon-thyme! I love it straight but you can add sugar or honey if you prefer. But sip it plain first it is one of very few herbs you don't need to sweeten to get down. If you grow thyme you can dry it and put in the press and seal tea bags, to give as gifts for those sick co-workers.

2 - sprigs fresh thyme
1 - mug boiling water

Steps:

  • Put fresh thyme in boiling water in a cup and steep 30 minutes then use as a tea (reheat if desired or drink as is) or as a healing wash for infections

Teatime? Try this thyme tea (actually a tisane). The herb gets steeped with coriander and fennel seeds -- a nice break from the usual herbal tea assortments.

3 cups water
8 to 10 thin, tender thyme sprigs
1/2 teaspoon whole coriander seeds, lightly crushed
1/2 teaspoon whole fennel seeds, lightly crushed

Steps:

  • Bring water to a boil. Steep thyme and the coriander and fennel seeds for 10 minutes. Strain through a fine sieve. Serve warm or chilled. Strained tea can be refrigerated up to 1 day.

This recipe calls for only one herbal ingredient, and you probably have it in your kitchen pantry. As you sip your drink, take a moment to think of cozy French farmhouses surrounded by fields just beginning to thaw after the long cold winter. Oh, for the simple life..... 1 cup boiling water
1/2 teaspoon dried thyme (1 teaspoon fresh)
honey (optional)
lemon (optional)

Steps:

  • Place thyme in tea cup and pour over boiling water to cover. Cover cup and allow to steep for 10 minutes.
  • Strain and serve, with honey and/or lemon, if you so desire. Enjoy!
