My mom got this recipe 30 years ago from a friend of hers who was from Australia. I don't know if this is an Australian dessert, I have heard that it is similar to a Canadian dessert called Nanaimo bars, though. This is a Christmas tradition in my family, but is wonderful anytime!

2 cups graham cracker crumbs
1 cup flaked coconut
1/2 cup chopped nuts
1 large egg, beaten
1/2 cup butter, melted
1 teaspoon vanilla extract
5 tablespoons sugar
1/2 cup baking cocoa (not sweetened)
1 lb powdered sugar
3 1/2 ounces instant vanilla pudding (1 small box)
1/3 cup melted butter
milk, as needed
1 drop yellow food coloring (optional)
1 (12 ounce) package chocolate chips
1 tablespoon butter

Steps:

  • First Layer - Mix all ingredients together to form a crumbly mixture.
  • Press into the bottom of a 9 x 13" pan, pressing firmly.
  • Place pan in the freezer to set while preparing the next layer.
  • Second Layer - Mix the first three ingredients together, using enough milk to make a stiff, frosting-like consistency.
  • If desired, add a drop of yellow food coloring.
  • Do not add too much milk, you want the mixture to be pretty stiff, but still spreadable.
  • Remove the pan from the freezer and scrape the second layer onto the first, spreading as evenly as possible, and then using your hands to press down to smooth.
  • Return pan to freezer.
  • Third Layer - Melt the chocolate chips together with the butter. You can use a double boiler, but I have had good luck using a small saucepan and very low heat, with stirring.
  • Remove the pan from the freezer.
  • Pour the melted chocolate mixture over the second layer.
  • Working quickly (before the chocolate sets), spread the chocolate layer evenly.
  • Return the pan to the freezer for no more than a few minutes. You want the chocolate to begin to set before you cut the bars - but if you wait too long, the chocolate will be too hard and you won't be able to cut through it without it breaking. The point at which the chocolate loses its shine and takes on a dull appearance is the right time to remove the pan from the freezer and cut into small squares.
  • After cutting, return to the freezer to harden completely, then remove from the pan.
  • Store in the refrigerator.

1-1/4 cups all-purpose flour
2/3 cup sugar
1/3 cup baking cocoa
1/4 cup packed brown sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup cold butter
2 large eggs
TOPPING:
1 package (7 ounces) sweetened shredded coconut
1 can (14 ounces) sweetened condensed milk
2 cups semisweet chocolate chips
1/2 cup creamy peanut butter

Steps:

  • In a large bowl, combine the first six ingredients. Cut in butter until crumbly. Beat in eggs. Spread in a greased 13-in. x 9-in. baking pan. , Bake at 350° for 8 minutes. Sprinkle coconut over crust; drizzle with milk. Bake 20-25 minutes longer or until lightly browned. , Meanwhile in a microwave, melt chocolate chips and peanut butter; stir until smooth. Spread over brownies. Cool on wire rack. Cut into bars.

½ cup butter
1 ½ cups graham cracker crumbs
7 ounces flaked coconut
14 ounces sweetened condensed milk
12 ounces semisweet chocolate chips
½ cup creamy peanut butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In one 13x9 inch baking dish, melt the butter. Sprinkle the graham cracker crumbs over the melted butter . Top with the coconut, then the sweetened condensed milk and bake for 25 minutes or until golden brown.
  • In a saucepan over low heat melt the chocolate chips and peanut butter together. Stir until creamy and pour over the baked bars. Let cool thoroughly then cut into bars. Garnish with more flaked coconut. Store bars in an airtight container.

My college friend's Mom used to make these and I loved them. I lost the recipe, but I found this in a cookbook and think its very similar. Hope you enjoy!

1ST LAYER
2 c graham cracker crumbs
1 c flaked coconut
1/2 c chopped nuts
1/2 c butter not margarine
1/2 c sugar
1 egg
2 ND LAYER
1 1/2 c powdered sugar
1/2 c butter
1 1/2 Tbsp milk
1 1/2 tsp vanilla
3 RD LAYER
8 oz semi-sweet chocolate chips

Steps:

  • 1. Mix the graham cracker crumbs, flaked coconut, and nuts together in a medium bowl. Cream together butter, sugar and egg. Cook in double boiler until egg is cooked and slightly thick, about 5 minutes. Pour the cooked mixture of graham cracker crumb mixture. Mix well and put in a 9 x 13 inch buttered pan. Press with fingers to form the first layer. Chill a few hours or overnight in the refrigerator.
  • 2. For the second layer cream together powdered sugar, butter, milk, and vanilla. Spread on chilled layer in pan. Chill again.
  • 3. For the third layer melt the chocolate chips (you can use a Hershey Bar if you like) in double boiler. Watch carefully while melting so it does not burn. Once melted spread on top of second layer quickly by spoonfuls. It hardens very quickly. It is best to cut bars as soon as the chocolate has set. Store in refrigerator,

These are very easy to put together, you'll be done in under 30 mins. There is no baking but there is a 1 hr chill time. The bars look so tempting when cut and the layers are showing.

1 cup granulated sugar
1 cup light-color corn syrup
2 cups peanut butter
3 cups crisp rice cereal
3 cups corn flakes
3/4 cup butter
4 cups powdered sugar
2 vanilla flavor instant pudding and pie filling mix, mix (4-serving-size packages)
1/4 cup milk
1 (12 ounce) package semisweet chocolate pieces
1/2 cup butter

Steps:

  • Line a 15x10x1-inch baking pan with foil, extending the foil over the edges of the pan; set aside.
  • BASE LAYER:.
  • In a large saucepan, combine granulated sugar and corn syrup; heat and stir just until mixture boils around edges.
  • Heat and stir for 1 minute more. Remove from heat and stir in peanut butter until melted.
  • Stir in rice cereal and cornflakes until coated.
  • Press mixture into the bottom of prepared pan.
  • PUDDING LAYER:.
  • in a medium saucepan, melt the 3/4 cup butter.
  • Stir in powdered sugar, dry vanilla pudding mixes, and milk.
  • Spread pudding mixture over cereal layer; set aside.
  • FROSTING:.
  • In a small saucepan, combine chocolate pieces and the 1/2 cup butter; heat and stir over low heat until melted.
  • Spread frosting over pudding layer.
  • Cover and chill about 1 hour or until set.
  • SERVING:.
  • Remove set mixture from pan by lifting foil.
  • Place on a cutting board; cut into 64 bars.
  • TO STORE: Layer bars between waxed paper in an airtight storage container; cover. Store in the refrigerator for up to 2 days.
