5 cups chicken nuggets (, precooked)
1/2 cup BBQ Sauce (, (we used Sweet Baby Ray's))
1 cup sweet orange marmalade
3 tablespoons soy sauce
2 teaspoons sesame oil (, optional)

Steps:

  • Cook the chicken nuggets according to the directions on bag.
  • Mix together the bbq sauce, orange marmalade, soy sauce and sesame oil in a microwave safe bowl and cover with a damp paper towel.
  • Microwave for 45 seconds.
  • Toss the hot, crispy, chicken nuggets with the orange bbq sauce.

ORANGE CHICKEN SAUCE
1 cup BBQ Sauce (Sweet Baby Ray's)
1 cup sweet orange marmalade (Smucker's)
2 tablespoon Soy Sauce
CRISPY CHICKEN
3 to 4 chicken breasts, We used 3)
1 cup flour or cornstarch, You can use both or either/or)
2 eggs
Oil (We used vegetable oil)

Steps:

  • In a sauce pan, add the BBQ sauce, marmalade, and soy sauce. Turn the heat on low and let it simmer for 20 minutes, stirring a few times. Meanwhile, cut up your chicken breasts into cubes. In one bowl beat 2 eggs, while the other bowl should mix the dry ingredients. Dip pieces of chicken in the egg and then cover in flour/cornstarch. Set on an extra plate. Add a thin layer of oil to a frying pan and turn your stove on medium/high heat. Once it sizzles, add half the chicken to the pan then cook the other half so they cook evenly. Let it cook for 3-5 minutes each side until it's brown and cooked on the inside. Add the chicken to the sauce and toss!

16 ounces frozen popcorn chicken (about 4 cups)
1 tablespoon canola oil
2 medium carrots, thinly sliced
1 garlic clove, minced
1-1/2 teaspoons grated orange zest
1 cup orange juice
1/3 cup hoisin sauce
3 tablespoons sugar
1/4 teaspoon salt
1/4 teaspoon pepper
Dash cayenne pepper
Hot cooked rice

Steps:

  • Bake popcorn chicken according to package directions., Meanwhile, in a large skillet, heat oil over medium-high heat. Add carrots; cook and stir until tender, 3-5 minutes.
