1 (16 ounce) can green beans, drained
1 (16 ounce) can yellow wax beans, drained
1 (16 ounce) can red kidney beans, drained
1 cup chopped onion
1 cup chopped celery
1 cup chopped green bell pepper
1 (4 ounce) jar chopped pimento peppers, drained
½ cup vinegar
½ cup vegetable oil
¼ cup white sugar
¼ teaspoon salt, or to taste
¼ teaspoon ground black pepper, or to taste

Steps:

  • Mix green beans, yellow wax beans, kidney beans, onion, celery, green bell pepper, and pimento peppers in a bowl.
  • Combine vinegar, oil, sugar, salt, and pepper in a saucepan; bring to a boil. Cook and stir until sugar is dissolved, about 5 minutes. Remove saucepan from burner and pour dressing over bean mixture; toss to coat. Refrigerate until flavors blend, 8 hours to overnight.

Three-Bean Salad with Tomatoes and Tangy Creole Dressing image

Served as a main or side dish, this salad is sure to be a favorite.

Number Of Ingredients 14

10 ounces fresh green beans, trimmed and cut into 1 ½-inch pieces (2 cups)
1 ½ tablespoons apple cider vinegar
2 teaspoons spicy brown mustard
1 ½ teaspoons Creole seasoning (such as Tony Chachere's)
1 teaspoon pure maple syrup
1 teaspoon Louisiana-style hot sauce (such as Crystal)
½ teaspoon black pepper
½ teaspoon kosher salt, divided
⅓ cup extra-virgin olive oil
1 (16-oz.) can dark red kidney beans, drained and rinsed
1 (16-oz.) can chickpeas, drained and rinsed
3 cups packed baby arugula (4 oz.)
1 pint cherry tomatoes, halved (about 2 cups)
1 small shallot, thinly sliced (about ¼ cup)

Steps:

  • Fill a large pot with water to a depth of 4 inches; bring to a boil over medium-high. Fill a large bowl with ice water, and set aside. Add green beans to boiling water, and cook until tender, 1 to 2 minutes. Remove using a slotted spoon; transfer to ice water. Let stand until cooled, about 1 minute. Remove from ice water. Drain; set aside.
  • Whisk together vinegar, mustard, Creole seasoning, maple syrup, hot sauce, black pepper, and ¼ teaspoon of the salt in a small bowl. Gradually whisk in oil until completely combined, about 30 seconds; set aside vinaigrette.
  • Toss together cooled green beans, kidney beans, chickpeas, arugula, tomatoes, shallot, and remaining ¼ teaspoon salt in a large bowl. Add vinaigrette; toss to coat. Serve immediately, or store in refrigerator up to 1 hour.

MOOSEWOOD WHITE BEAN AND TOMATO SALAD



Moosewood White Bean and Tomato Salad image

This is one of my favorite Moosewood recipes, and it is so easy! My toddler even loves this recipe. This cold salad is perfect during the hot summer months, and goes great with meals that are cooked on the grill. I find that adding 1 T red wine vinegar makes it absolutely perfect. Moosewood categorizes this recipe as a "Main dish salad" but I prefer it as a side dish. I always omit the celery because it is the one vegetable that I do not like.

2 garlic cloves, minced
1/4 cup red onion, minced
6 celery ribs, with leaves sliced (optional)
1 lemon, juice of
2 tablespoons olive oil
1 tablespoon fresh basil or 1 teaspoon dried basil
4 tomatoes, cubed or 2 (15 ounce) cans diced tomatoes, drained
1 tablespoon red wine vinegar (optional)
salt and pepper, to taste

Steps:

  • Combine all ingredients in a bowl. Serve at room temperature.

2 stalks celery, chopped
1 (15 ounce) can kidney beans, drained and rinsed

¼ cup white sugar
½ teaspoon salt
½ teaspoon celery seed

1/2 lb. green beans, trimmed, cut in half
1/4 lb. yellow beans, trimmed, cut in half
1 can (15 oz.) no-salt-added white kidney beans, rinsed
1/4 cup KRAFT Sun Dried Tomato Vinaigrette Dressing
1 tsp. pepper

Steps:

  • Cook green and yellow beans in saucepan of boiling water 3 to 5 min. or until crisp-tender; drain. Immediately plunge into bowl of ice water. Let stand 2 min.; drain well.
  • Place cooked beans in medium bowl. Add remaining ingredients; mix lightly.

1 (15 ounce) can green beans
1 small red onion, chopped
2 medium tomatoes, chopped
1/2 cup olive oil
1 clove minced garlic
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon dried basil
1 cup balsamic vinegar

Steps:

  • Drain beans and rinse.
  • Combine all ingredients in a bowl; cover and let stand for several hours to marinate.
  • Serve cold.
