THERMOMIX BREAD RECIPE #2
Another simple basic bread recipe for the thermomix. This dough can be made into a loaf or divided up for dinner rolls.

Steps:
- Lightly oil a loaf pan, or line a baking sheet with parchment paper.
- Place water in TM bowl. Cook 4 minutes/50 degrees/speed soft.
- Add all remaining ingredients. Mix 20 seconds/speed 3 to combine. The mixture should form a ball and the dough will begin to clean the sides of the TM bowl. If the dough is too dry (a common problem if using heavy organic flours) add more water a teaspoon at a time, mixing for two or three seconds after each addition.
- Set the timer for 1 minute 30 seconds. Set to Closed Lid position. Press Wheat button. The mixture should end up soft and pliable and slightly tacky.
- Remove TM lid. Turn TM bowl upside down and undo base unit. The dough will drop out, bringing the blades with it. Remove blades and gather the dough into a ball.
- Press dough lightly into the prepared pan, or shape rolls as desired. Brush the loaf or rolls with olive oil.
- Cover with a tea towel and set in a warm place to rise until doubled, about one hour.
- Bake at 425 degrees F 20-30 minutes for a loaf, 10-12 minutes for rolls - the cooked bread should be golden brown, and sound hollow when tapped.
THERMOMIX VEGAN APPLE BANANA BREAD
Lots of spices add wonderful flavor to this delicious banana bread. Go as heavy or light as you like. I often add ginger and mace to this recipe, but I didn't have any on hand when I made this loaf - so I just wrote up the recipe exactly as I made it.

- Chop apples 15 seconds/speed 4.
- Add lemon juice and spices to TM bowl. Cook 8 minutes/90 degrees/speed 2. Scrape down,.
- Add the banana, maple syrup, and oil. Puree the mixture 15 seconds/speed 6. Scrape down.
- Add flours and mix 30 seconds/speed 4. Scrape down.
- Add the baking powder, baking soda and salt. Mix 20 seconds/speed 4.
- Pour batter into greased loaf pan - mine is 9x5 inches.
- Bake at 375 F or 190 C for approximately 1 hour. Insert a skewer into the center of the loaf to check for doneness.
THERMOMIX BANANA BANANA BREAD
A deliciously banana-y banana bread! I adapted this recipe (#25885) so that I could prepare it using my Thermomix machine. This is a very simple recipe - either with the Thermomix or without.

- Preheat oven to 350 degrees F. Spray two small (mine are 8x3 in.) loaf pans with cooking spray.
- Beat the sugar and butter together for 15 seconds on speed 4. Scrape down the sides of the bowl and add the eggs and bananas. Beat the mixture for 15 seconds on speed 5.
- Add in the remaining dry ingredients and beat on speed 4 for 10 - 20 seconds, just until combined.
- Pour the batter into the prepared pans and bake for 40 to 45 minutes.

Steps:
- Add the milk and water to the TM bowl. Mix at 4 minutes/speed soft/ 50 degrees. Add the sugar mix 3 seconds/speed 7. Add the yeast, salt , butter, olive oil flour and egg to the TM bowl mix 10 seconds/speed 7.
- Set dial to Closed Lid position Knead for 3 minutes/interval speed.
- Remove dough and let rise for 30-60 minutes, or until doubled.
- After dough has risen, divide in 2 and place in loaf pans, or further divide each half and make braided loaves.
- Bake in a hot oven 400 F for about 30 minutes.
