Nick's Authentic Italian Spaghetti comes straight from Italy. Tomatoes, basil, onions, and carrots flavor the two kinds of meat to make the perfect sauce!

1 tablespoon olive oil
1 small onion (finely chopped)
3 carrots (peeled, chopped)
1 pound ground beef
1/2 pound ground pork ((optional))
1 1/2 pounds tomatoes ((fresh peeled and diced tomatoes or canned San Marzano tomatoes))
6 fresh basil leaves (chopped (or 1-2 tsp. dried basil))
1/2 teaspoon sugar
1 teaspoon Kosher salt
1/2 teaspoon pepper
beef broth ((if needed, to taste))
1 pound spaghetti noodles

Steps:

  • Heat oil on medium heat in a large, deep skillet. Add onion, carrots, and garlic and saute for 1 minute. Add ground beef and pork and continue to cook.
  • When meat is browned and onions are soft, add tomatoes.
  • When tomatoes have softened and have started to release their juices (about 4-5 min) add basil, sugar, salt and pepper (if you are whole tomatoes, mash the them with a potato masher or spatula to release all their juices).
  • Simmer for at least 3 hours (and up to 6 hours), stirring occasionally. The longer you simmer, the better. Important: tomatoes burn easily so keep an eye on them and add beef broth a little at a time to thin sauce if needed.
  • In a large pot, cook spaghetti in salted water to al dente, drain completely and return to pot. Add sauce to the spaghetti noodles and toss until noodles are covered.
  • Serve immediately.

1 lb ground beef (15% fat)
1 medium onion (finely diced)
1 tsp salt
1/2 tsp ground cumin
1/4 tsp black pepper
2 garlic cloves (minced)
24 oz marinara sauce
1/4 cup water
1 tsp granulated sugar
12 oz spaghetti (to serve)

Steps:

  • Place a pot or dutch oven over medium heat, add 1 lb ground beef and sautee, breaking it up with a spatula until no longer pink (5 minutes).
  • Add chopped onion, 1 tsp salt, 1/2 tsp ground cumin 1/4 tsp pepper and sautee until onions are soft.
  • Add garlic and sautee another 1-2 minutes until fragrant then pour in 1 jar of marinara sauce, 1/4 cup water and 1 tsp sugar. Cover and simmer over low heat 20 minutes.
  • Meanwhile, cook 12 oz of spaghetti in salted water to desired doneness according to package instructions then drain. Serve sauce with cooked pasta.

1 onion, chopped
4 cloves garlic, minced
1 small green bell pepper, diced
1 (28 ounce) can diced tomatoes
1 (16 ounce) can tomato sauce
1 (6 ounce) can tomato paste

2 teaspoons dried basil
1 teaspoon salt
½ teaspoon black pepper

Steps:

1/2 pound sliced fresh mushrooms

2 tablespoons virgin olive oil
2 pounds lean ground beef - chuck or round
2 tablespoons virgin olive oil
2 large onions - chopped
4 medium carrots - cut into small dice
2 stalks celery - cut into small dice
1/2 pound medium-size cremini mushrooms - sliced
8-10 large cloves garlic - thinly sliced
5 Roma/plum tomatoes - blanched, peeled and coarsely chopped
1 20 oz. can Roma/plum tomatoes with juice - tomatoes coarsely chopped
1 small can tomato paste
2-1/2 cups V-8 juice
1 cup dry red wine
1/4 cup ketchup
1/2 teaspoon Tabasco sauce
1/2 teaspoon red pepper flakes
1 teaspoon celery seeds
2 teaspoons chili powder
3/4 teaspoon ground cloves
2 teaspoons garlic powder
1 tablespoon dried oregano
1 tablespoon dried basil
2 bay leaves
3/4 teaspoon salt
1 tablespoon freshly ground black pepper
1 tablespoon sugar
1 tablespoon butter
Parmigiano-Reggiano cheese - finely grated

Steps:

  • Heat the olive oil in a large, non-stick skillet over medium-high heat. Add the ground beef and cook, stirring frequently and breaking up large pieces, until nicely browned. Drain off any fat. While beef is browning, heat olive oil in a large Dutch oven or stock pot over medium-high heat. Add onions, carrots and celery and saute until softened. Add mushrooms and garlic, and continue to cook until mushroom liquid is almost evaporated and vegetables are just beginning to brown. Add the browned beef and stir to blend. Add all remaining ingredients (except butter) and stir to mix thoroughly. Bring to a fast simmer, stirring frequently, add butter and allow to melt into sauce without stirring. Reduce heat to low, partially cover and simmer gently 5-6 hours, stirring occasionally. If sauce seems too thick, add more V-8 juice or water to desired consistency. Taste and adjust for sugar and seasonings as necessary, remove bay leaves and continue to simmer 15 minutes. Do a final taste test and adjust seasonings again as per your preference. Serve over spaghetti and liberally sprinkle with parmesan and basil.

ZAPPA FAMILY SPAGHETTI SAUCE



Zappa Family Spaghetti Sauce image

I have spent a lifetime trying to duplicate the red sauce and meatball recipe my mother, Anne Marie Zappa, cooked every week when I was growing up. I'll never do it, but this is close. This is a forgiving recipe. Maybe you want to add a couple of chicken thighs, or mix in a few browned hot sausages. Just keep a good ration of pork to beef.

Salt and pepper
1 pound pork spareribs, neck bones or pork chops
1 pound beef chuck roast, blade steak or brisket
3 tablespoons olive oil
3/4 cup chopped onions
2 cloves garlic, minced
1 6-ounce can tomato paste
1 teaspoon dried oregano
1 tablespoon dried basil
1 teaspoon dried red pepper flakes
1 1/2 teaspoons kosher salt
1 bay leaf
1 28-ounce can crushed tomatoes, preferably Italian
1 28-ounce can tomato sauce
1/2 teaspoon sugar
2 tablespoons fresh parsley, roughly chopped
4 small or 2 large pickled peperoncini
Cooked meatballs
1 pound dried spaghetti for serving
Grated Parmesan for serving

Steps:

  • Sprinkle salt and pepper all over pork and beef. Place large pot over medium-high heat; when hot, add olive oil and brown meat. (Or cook meat in same pot used for meatballs, browning in the leftover fat.) Remove meat to a platter. Turning heat under pot to medium, add onions, and cook 3 minutes, stirring. Add garlic, and cook 2 minutes longer. Add tomato paste, and stir: cook until it absorbs fat in pan. Add oregano, basil, red pepper flakes, kosher salt and bay leaf, stirring to combine.
  • Add cans of tomatoes and tomato sauce, then 4 1/2 cups water. Stir in sugar, parsley and peperoncini. Return meats to pot with their juices. Bring sauce to a gentle boil. Turn heat down to a simmer, partly cover and leave sauce to simmer 21/2 hours or more, stirring regularly.
  • About 20 minutes before serving, add meatballs to pot. Boil spaghetti according to package directions. Drain, return spaghetti to pan and add 3 cups sauce. Toss pasta in pan for a minute to coat with sauce, and place on a large platter. Pour 2 more cups sauce over pasta. Place meat and meatballs on pasta, slicing large pieces. Serve with bowls of remaining sauce and Parmesan.
