ITALIAN HOME FRIES

Number Of Ingredients 12

3 tablespoons butter
3 cloves garlic, smashed into a paste with the back of a chef's knife
1 small Spanish onion, halved and thinly sliced
1 small red bell pepper, diced
1 small yellow pepper, diced
1 1/2 pounds small new potatoes, par-cooked and diced
8 ounces Italian sausage, hot, mild or a combination, removed from the casing
1 teaspoon paprika
Salt and freshly ground black pepper
1 tablespoon finely chopped fresh rosemary
2 tablespoons finely chopped fresh flat-leaf parsley
3 tablespoons olive oil

Steps:

  • Heat the butter on a cast-iron griddle or in large saute pan over medium-high. Add the garlic and onions and cook until softened, 2 to 3 minutes. Add the peppers and cook another 2 minutes. Add the potatoes, sausage, paprika and sprinkle with salt and pepper. Cook, stirring, about 2 minutes. Stir in the rosemary, and then start pressing the mixture onto the griddle so that the bottom gets brown and crispy and the potatoes stick together. Turn the mixture occasionally to distribute the crispy bits. Toss the mixture with the parsley and transfer to a serving platter. Drizzle with olive oil and serve hot or at room temperature.

These are a great side dish with any meal. The potatoes are fried and seasoned with Italian spices and herbs.

Number Of Ingredients 12

Around 4 peeled fresh potatoes cut lengthwise into stick form ( I use Russet Potatoes)
These can be cut into any shape you like using a sharp knife (or you can use frozen if you prefer around 2 cups or more) cut enough for your family size
sea salt and freshly cracked pepper to taste
Garnishes
Italian grated cheese ( I used Romano and Parmesan mixed) generously sprinkled on top of cooked fries
Sprinkles of granulated garlic (lightly dust the tops with this)
1 teaspoon from a small sprig Fresh chopped rosemary or dried
1 tablespoon freshly chopped Italian parsley
1/2 teaspoon each dried oregano
1 teaspoon fresh chopped basil or 1/2 teaspoon dried
Optional: red pepper flakes or cayenne pepper
Marinara sauce for dipping

Steps:

  • Cut the potatoes into 4 to 5 vertical slices then into sticks or other shapes you like.
  • Deep fry the french fries in 300-degree oil (or in an air fryer if you have one to manufacturer instructions.) It takes around 25 minutes or more to brown. If using frozen, check the package instructions for times.
  • Drain on paper towels.
  • In a large bowl or paper bag place the fries in with all seasoning to taste, stir or shake gently to coat. Sprinkle with cheese to your taste, red pepper flakes if using and more garlic if you like. Salt, pepper to taste.
  • Serve hot with your favorite marinara sauceor condiments for dipping.
  • Optional: to make loaded potato fries: add shredded mozzarella and cooked loose sausage on top and fried long hots.

4 russet potatoes, scrubbed
3 tablespoons olive oil, divided, or as needed
2 teaspoons salted butter, or to taste
1 medium onion, sliced
3 cloves garlic, minced
salt and ground black pepper to taste
½ cup pitted Kalamata olives, halved
1 tablespoon minced fresh parsley, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Stab the potatoes with a fork and microwave until cooked, about 9 minutes. Let cool, about 10 minutes. Slice into wedges.
  • Heat 1 tablespoon oil and butter in a small pan over medium-low heat. Saute onion and garlic with salt and pepper until tender and sweet, 5 to 7 minutes. Remove from heat.
  • Heat enough remaining oil to coat the bottom of a large nonstick pan over medium-high heat. Cook potatoes in batches, making sure they aren't crowded in the pan. Turn carefully until golden and crispy, 7 to 10 minutes. Keep the first batch in the preheated oven until the second batch is done.
  • Add olives to the second batch and cook for 1 minute. Add potatoes from the oven and onion-garlic mixture. Toss in the pan until everything is heated. Drain on paper towels and sprinkle with parsley, salt, and pepper.

2 pounds baking potatoes, each cut into six wedges
2 tablespoons olive oil
½ teaspoon dried thyme leaves
¼ teaspoon ground black pepper
salt to taste
¼ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Arrange potato wedges on a baking sheet. Drizzle olive oil over the wedges; season with thyme, pepper, and salt. Turn wedges with a spatula to coat with oil and seasonings.
  • Roast potato wedges for 15 minutes, turn, and continue roasting until soft in the center, about 15 minutes more. Transfer wedges to a platter and sprinkle cheese over them.

31/2 lb russet potatoes
1/2 tsp baking soda
3 Tbsp butter, cut into pieces
1 pinch salt and pepper
1 pinch cayenne pepper
3 Tbsp vegitable oil
2 large onions, cut into ½-inch dice
3 Tbsp minced fresh chives

Steps:

  • 1. Instructions 1. Adjust oven rack to lowest position, place rimmed baking sheet on rack, and heat oven to 500 degrees.
  • 2. 2. Bring 10 cups water to boil in Dutch oven over high heat. Add potatoes and baking soda. Return to boil and cook for 1 minute. Drain potatoes. Return potatoes to Dutch oven and place over low heat. Cook, shaking pot occasionally, until any surface moisture has evaporated, about 2 minutes. Remove from heat. Add butter, 1½ teaspoons salt, and cayenne; mix with rubber spatula until potatoes are coated with thick, starchy paste, about 30 seconds
  • 3. 3. Remove baking sheet from oven and drizzle with 2 tablespoons oil. Transfer potatoes to baking sheet and spread into even layer. Roast for 15 minutes. While potatoes roast, combine onions, remaining 1 tablespoon oil, and ½ teaspoon salt in bowl.
  • 4. 4. Remove baking sheet from oven. Using thin, sharp metal spatula, scrape and turn potatoes. Clear about 8 by 5-inch space in center of baking sheet and add onion mixture. Roast for 15 minutes.
  • 5. 5. Scrape and turn again, mixing onions into potatoes. Continue to roast until potatoes are well browned and onions are softened and beginning to brown, 5 to 10 minutes. Stir in chives and season with salt and pepper to taste. Serve immediately.

2 pounds medium white- or yellow-skinned potatoes, cut into 1-inch-thick wedges
Kosher salt
1/4 cup EVOO
3 large cloves garlic, crushed
3 tablespoons chopped fresh rosemary

Grated Pecorino Romano or Parmigiano-Reggiano, for serving

Steps:

  • Put the potatoes in a large pot and cover with water. Bring to a boil, salt the water, and cook 5 minutes. Drain.
  • Heat the EVOO in a large skillet over medium-high heat. Add the garlic and cook until golden, about 2 minutes. Remove to a cutting board with a slotted spoon, then chop and reserve.
  • Add the potatoes and rosemary to the skillet and season with salt and pepper. Cook until browned and crisp, 5 to 10 minutes. Transfer to a serving bowl and top with the garlic and cheese.

2 tablespoons olive oil
4 garlic cloves, minced
2 tablespoons dried parsley flakes
1 teaspoon dried basil
1 teaspoon dried oregano
3/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Place potatoes in a large bowl. Drizzle with oil; toss to coat evenly. Combine the garlic, parsley, basil, oregano, salt and pepper; sprinkle over potatoes and toss to coat evenly.
