3 cups fresh or thawed frozen cranberries, chopped
1 can (20 ounces) unsweetened crushed pineapple, drained
2 cups miniature marshmallows
1 medium apple, chopped
2/3 cup sugar
1/8 teaspoon salt
2 cups heavy whipping cream
1/4 cup chopped walnuts

Steps:

  • In a large bowl, mix first 6 ingredients. Refrigerate, covered, overnight., To serve, beat cream until stiff peaks form. Fold whipped cream and walnuts into cranberry mixture.

4 ounces cream cheese (, softened)
4 cups cool whip
8 ounce can crushed pineapple (, drained)
1 cup sweetened coconut flakes
14 ounces canned whole cranberry sauce
12 ounces mini marshmallows

Steps:

  • Mix the cream cheese and cool whip together until well combined.
  • Add in the crushed pineapple and coconut flakes.
  • Remove the cranberry sauce from the can and mash well in a small bowl before adding gently to the mixture.
  • Refrigerate until completely chilled (preferably an hour).
  • Fold in the marshmallows just before serving.

Cranberry Salad (A.k.a. Thanksgiving Pink Stuff) image

My mother got this recipe from a dear family friend in the 1950's. No matter who in our family is making Thanksgiving dinner, you can bet this dish will be served. Note: the times indicated do not include refrigeration time. Cranberries from Wisconsin make this a Midwest U.S. regional recipe. (Also, I first enjoyed it in Missour - another fine Midwestern state).

2 cups cranberries
2/3 cup water
1 cup sugar
1 cup chopped pecans
3 large bananas, chopped
28 ounces fruit cocktail in light syrup, drained
1 pint whipping cream
1/2 teaspoon vanilla
6 tablespoons sugar

Steps:

  • The day before serving, cook cranberries in water over low heat until soft.
  • Add sugar and mash.
  • Add chopped nuts.
  • Stir, cover and refrigerate overnight.
  • About 4 hours before serving, add the fruit cocktail.
  • Just before serving, whip cream, add sugar and vanilla and whip until soft peaks form.
  • Add bananas to fruit mixture.
  • Gently fold whipped cream into fruit mixture until well blended.
  • Serve immediately.
  • Note: You can use Cool Whip instead of whipping the cream, but the flavor is so much better with the real thing!

My Aunt made up this recipe and my mom adapted it to have with our holiday family dinners. When my youngest nephew had it for the first time, he talked for weeks about "the pink stuff." So now that's the only name that it goes by.

1 can(s) whole cranberries
1 can(s) (the half size can 8 oz.) crushed pineapple
1 pkg cream cheese (8 oz)
1 pkg cool whip (8 oz)
2 pkg raspberry jello or cranberry jello (we like to use one of each, and the suger free variety does not change the taste)
1 apple (pealed, cored and cut into 1/2" chuncks)
1 c chopped walnuts
water

Steps:

  • 1. Empty the cranberries and pineapple into a sieve and strain out the liquid. You may have to stir up the fruit and press on it to get all the liquid.
  • 2. Put the liquid into a measuring cup and fill to 2 cups with water. Boil the liquid. and mix it with the two packages of Jello.
  • 3. Allow the jello to partially set for about 45 minutes. It should not be hard, if you stick a finger in the jello it should come out coating you finger with no lumps.
  • 4. About 15 minutes prior to taking the jello out of the fridge, mix the left over cranberries and pineapple with the apple chunks and walnuts.
  • 5. In a separate bowl whip the cream cheese until it is easily stirred and them add the cool whip. Dump in the partially set jello and mix well. It's ok if there are cheese chunks it adds to the overall presentation.
  • 6. Fold in the fruit and walnut mixture and transfer to a presentation bowl. (We put it in a beautiful blue pie plate.) Refrigerate for at least 3 hours until set, but it always tastes better if you make it the day before.

2 (12 ounce) packages fresh cranberries
1 cup white sugar
1 (20 ounce) can crushed pineapple, drained

1 pint heavy whipping cream

  • Coarsely chop the cranberries in a food processor; put in a large, non-metal bowl and mix in the sugar. Cover and refrigerate for 12 hours.

2 (3 ounce) packages cream cheese (brought to room temperature)
2 tablespoons mayonnaise
2 tablespoons sugar
1/2 pint whipping cream
1 (9 ounce) can crushed pineapple, drained
1/2 cup chopped pecans or 1/2 cup walnuts
16 ounces whole berry cranberry sauce

Steps:

  • Blend softened cream cheese, mayonnaise and sugar.
