12 mint leaves
1/2 ounce fresh lime juice
2 ounces coconut rum
1/2 ounce simple syrup
1 ounce cream of coconut
club soda, to top off (1-2 oz.)

Steps:

  • Muddle the mint with the lime juice in a cocktail shaker.
  • Add rum, syrup and coconut cream, and shake well with ice.
  • Strain into tall glasses and top off with club soda.
  • Garnish with extra mint leaves.

7 fluid ounces sweetened cream of coconut (such as Coco Lopez®)
2 ½ (1.5 fluid ounce) jiggers white rum (such as Bacardi®)
5 sprigs fresh mint leaves
2 mint sprigs, for garnish
2 lime wedges, for garnish

Steps:

  • Blend the ice, limes, cream of coconut, rum, and mint leaves together in a blender until smooth. Pour into two glasses and garnish each with a mint sprig and lime wedge as desired.

1 1/2 oz fresh lime juice
4 fresh mint leaves
ice
3 oz sparkling water or club soda

1 cup packed fresh mint leaves
4 ounces fresh lime juice
4 ounces Simple Syrup, recipe follows
16 ounces coconut water, chilled
8 ounces white rum, chilled
Ice
1 cup granulated sugar

Steps:

  • Put the mint, lime juice and Simple Syrup in a pitcher. Muddle for a few seconds to release the flavor from the mint.
  • Pour in the coconut water and rum. Add ice to fill a pitcher, and stir to combine and chill.
  • Stir together the sugar and 1 cup water in a medium pot. Bring to a simmer over medium-high heat. Stir to make sure all the sugar is dissolved. Simmer for 1 minute, and then remove from the heat. Cool completely.

This is an authentic recipe for mojito. I sized the recipe for one serving, but you can adjust it accordingly and make a pitcher full. It's a very refreshing drink for hot summer days. Be careful when drinking it, however. If you make a pitcher you might be tempted to drink the whole thing yourself, and you just might find yourself talking Spanish in no time! Tonic water can be substituted instead of the soda water but the taste is different and somewhat bitter.

10 fresh mint leaves
½ lime, cut into 4 wedges
2 tablespoons white sugar, or to taste
1 cup ice cubes
1 ½ fluid ounces white rum
½ cup club soda

Steps:

  • Place mint leaves and 1 lime wedge into a sturdy glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice. Add 2 more lime wedges and the sugar, and muddle again to release the lime juice. Do not strain the mixture. Fill the glass almost to the top with ice. Pour the rum over the ice, and fill the glass with carbonated water. Stir, taste, and add more sugar if desired. Garnish with the remaining lime wedge.
