This classic cocktail is said to be the predecessor of the Martini. Bartender Eben Freeman developed this version at Tailor restaurant in New York City.

- In chilled cocktail shaker or pint glass, stir together vermouth, gin, Maraschino liqueur, bitters, and ice until well combined. Strain into chilled coupe glass. Twist lemon peel over glass, drop into drink, and serve.
THE MARTINEZ
The Martinez cocktail blends the boozy sweetness of a Manhattan with the dry, floral qualities of a martini. Orta sticks to the classic recipe by using Old Tom Gin, a sweeter, aged variety that was created to cater to 19th-century tastes.

Steps:
- In a cocktail pitcher, combine gin, sweet vermouth, a bar-spoon's worth of maraschino liqueur, and orange bitters (Orta uses 3 light dashes instead of 2 heavy dashes). Fill the pitcher with ice cubes. Place the cocktail spoon down the side of the pitcher; then run the spoon around the edge of the pitcher quickly but gently to stir, about 30 seconds. Strain into a coupe or martini glass. Garnish with an amarena cherry.
