I use this for my diabetic friends who come on Thanksgiving and Christmas. I got this recipe from an Equal recipe card somewhere.

Number Of Ingredients 3

2/3 cup water
2 cups fresh cranberries or 2 cups frozen cranberries
1 cup Equal sugar substitute (or 24 packets Equal sugar substitute or 7 1/4 teaspoons Equal sugar substitute)

Steps:

  • Combine water and cranberries in a medium saucepan. Bring just to boiling; reduce heat.
  • Boil gently, uncovered, over medium heat 8 minutes, stirring occasionally (skins will pop).
  • Remove from heat mash slightly.
  • Stir in Equal; cover and chill.

I got this recipe in response to a request on the diabetic forum from LARavenscroft. I just made this for my DH for Thanksgiving. It is so easy to make and looks like a whole berry sauce. This is the simplest of homemade cranberry sauces - no spices, no orange peel, nothing extra. It is about the thickness of pudding. Use it not only only with turkey, but to put over yogurt or ricotta cheese for breakfast or a snack, or accompanying cheeses and nuts as a dessert.

1 (12 ounce) bag fresh cranberries
1 cup sugar substitute, like Splenda, choose one that equals 1 cup of regular sugar
1 cup water
1/4 teaspoon salt

Steps:

  • Put cranberries in a pot on the stove, and pick through to remove soft and/or brown ones.
  • Add the rest of the ingredients, stir, and bring to a boil on medium-high heat.
  • Stir frequently - the cranberries will pop, and then release their "gel" and the sauce will come together like magic. This takes about 10 minutes.
  • Remove from heat and let cool completely before refrigerating.

1 teaspoon cornstarch
1 cup Splenda granular
1/2 cup water
3 cups cranberries
1 medium orange, chopped

Steps:

  • Combine the cornstarch, Splenda and water in a small saucepan; stir to mix and add the fruit.
  • Bring to the boil and simmer for about 10-15 minutes, stirring often.
  • This looks too watery to begin with, but will suddenly start to change into like a syrup. Keep stirring until it reaches the consistency you like.
  • Cool and then refrigerate for a few hours before serving.
