Steps:

  • Bring water to a boil in a kettle; remove from heat. Add tea bags and steep for 5 minutes; remove tea bags.
  • Stir sugar into tea until dissolved. Cool to room temperature.
  • Fill 4 glasses with ice; pour tea into each glass until almost full. Stir 1 tablespoon sweetened condensed milk into each glass. Float 1 tablespoon half-and-half atop the iced tea.

This homemade Thai iced tea gets its complex flavor from black tea, rooibos tea, star anise and cloves, and its sweetness from condensed milk. Adapted from the cookbook "Bangkok" by Leela Punyaratabandhu, this version is hardly typical: Most Thai iced tea sold on the streets of Bangkok - or in Thai restaurants stateside - contains an immoderate amount of sweetened condensed milk and uses a store-bought mix, which contains food coloring. The tea blend used here is intense on its own, but mellowed by ice and milk. Chill the tea fully before pouring it over ice so its flavors don't get diluted.

4 tablespoons loose red rooibos tea leaves (or the contents of 10 rooibos tea bags)
3 tablespoons loose black tea leaves (or the contents of 7 black tea bags)
3 tablespoons granulated sugar
10 star anise pods, broken into pieces or roughly chopped
10 whole cloves
1/2 cup half-and-half
1/2 cup sweetened condensed milk
1 tablespoon vanilla extract
Ice, for serving

Steps:

  • Add 4 cups water to a medium saucepan. Cover with a lid and bring to a boil. Remove from the heat. Add rooibos tea, black tea, sugar, star anise and cloves; cover and let steep, 10 minutes. Strain tea, pressing on tea leaves and spices to extract as much liquid as possible, then discarding solids. Refrigerate tea until chilled, at least 1 hour.
  • In a measuring glass, stir together the half-and-half, condensed milk and vanilla extract.
  • Fill a pint glass with ice. Add 3/4 cup tea mixture and top with about 2½ tablespoons condensed milk mixture. Serve immediately.

Steps:

  • In a kettle, bring the water to a boil. Place the tea in a teapot or glass container. Pour the water over the tea and let steep until bright orange in color, 3 to 5 minutes. Strain into a clean container, such as a pitcher (or, if in tea bags, remove the bags). Add sugar and stir to dissolve. Let cool to room temperature, then cover and refrigerate until ready to serve.
  • Fill 6 tall glasses with crushed ice and add tea to 3/4 full. Add 1 tablespoon cream and 1 tablespoon condensed milk to each glass.

1 teaspoon orange blossom water
1 vanilla pod (or 1 tablespoon vanilla extract)
1 pinch ground cloves
1 pinch ground cinnamon
1/2 cup loose chinese black tea leaves
1 cup granulated sugar
3 drops red food coloring (optional)
half-and-half or sweetened condensed milk

Steps:

  • Bring 1/2 gallon of cold water to a boil. Add 8 finely crushed star anise pods, 1 teaspoon orange blossom water, the scrapings of 1 vanilla pod or 1 tablespoon vanilla extract, a pinch each of ground cloves and ground cinnamon, and 1/2 cup Chinese black tea leaves.
  • Boil for 3 to 5 minutes, stirring occasionally. Remove from the heat and stir in 1 cup sugar and a few drops of red food coloring (optional, though traditional). Cover, steeping until tepid.
  • Strain & place in the refriderator for a few hours to really chill.
  • Pour the tea over plenty of crushed ice. Top with half-and-half or sweetened condensed milk.

On the streets of Thailand, where the temperature sometimes soars over 100°, there's nothing more refreshing than a plastic bag of Thai tea! Since most of the tea shops don't have seating, the Thai people take their sweetened iced tea "to go" in a plastic bag with a straw sticking out of it. The flavors of these teas were the inspiration for this dessert. The thing that makes this dish so special is the lime in the caramel, which adds an unusual tang to the sweetness. Another bonus is the crunch and spice of the cashews that are sprinkled over the top of the pudding, adding a wonderful surprise.

2 large eggs
1/3 cup cornstarch
1 quart half-and-half

Steps:

  • Whisk the milk, eggs, and cornstarch together in a medium mixing bowl.
  • Combine the half-and-half, sugar, Thai tea mix, and salt in a medium saucepan, and bring to a boil over medium-high heat, 5 to 6 minutes. Pour the mixture through a fine-mesh strainer into a bowl, and then slowly whisk it into the egg mixture until well incorporated.
  • Wash the saucepan and then return it to the stove. Pour the tea-egg mixture back into the pan and cook over medium-low heat, whisking constantly and scraping the sides and bottom of the pan so that the ingredients don't stick and burn, until the mixture is noticeably thicker, 5 minutes. Remove the pan from the heat and pour the pudding into 6 dessert cups. Chill in the refrigerator for at least 2 hours before serving.
  • Serve topped with the lime caramel, candied cashews, and lime whipped cream.

⅓ cup sugar
2 ½ cups whole milk
½ cup thai tea, loose leaf
5 large eggs
½ teaspoon kosher salt
3 tablespoons cornstarch

2 tablespoons unsalted butter, room temperature
¼ cup chocolate hazelnut spread, melted
2 tablespoons toasted coconut flakes
1 cup whipped cream, for topping

Steps:

  • Preheat the oven to 325˚F (160˚C).
  • Make the crust: Add the cornflakes to a zip-top bag, seal, and crush into crumbs with a rolling pin.
  • Transfer the crumbs to a large bowl and add the melted butter and sugar. Stir to combine.
  • Add the crumb mixture to a 9½-inch (24 cm) pie dish and press evenly into a ¼-inch-thick (6 mm) layer against the bottom and up the sides of the pan.
  • Bake until the crust is golden brown, about 15 minutes. Let cool completely.
  • Make the filling: In a small saucepan over medium heat, bring the milk to a simmer.
  • Add the Thai tea leaves and stir into the hot milk. Turn off the heat and let the tea steep for 30 minutes.
  • In a medium bowl, whisk together the egg yolks, salt, cornstarch, and sugar.
  • Line a fine-mesh sieve with cheesecloth and set over the bowl with the egg mixture. Slowly pour in the Thai tea mixture, pressing the leaves to extract as much liquid as possible. Whisk to combine.
  • Return the Thai tea mixture to the saucepan over medium heat and cook, stirring constantly, until thickened, about 8 minutes. Add the butter and whisk until melted and the filling is smooth. Remove from the heat.
  • Brush the chocolate hazelnut spread over the bottom of the cooled crust. Sprinkle the toasted coconut flakes over the chocolate hazelnut spread.
  • Pour the Thai tea filling into the crust and spread evenly. While still hot, cover the pudding with plastic wrap to prevent a skin from forming . Refrigerate the pie until set, at least 4 hours.
  • Before serving, remove the plastic wrap and spread whipped cream over the top of the pie. Serve chilled.

Steps:

  • Heat heavy cream, 1 cup half-and-half, and milk in a saucepan over medium heat until it begins to simmer, about 10 minutes; stir in Thai tea mix and bring to a boil. Reduce heat to low; simmer 5 minutes, or up to 10 minutes for more tea flavor.

There are several recipes in the data base for Thai Iced Tea, but none like this one. Nancie McDermott was credited for this recipe found at "Quick & Easy Thai: 70 Everyday Recipes". From her intro: "Sold in 1 lb cellophane-wrapped packets in Asian markets, this finely chopped black tea is spiced w/cinnamon, star anise & vanilla, & then tinged w/a bit of food coloring to create its gorgeous terra-cotta hue. Like Thai coffee, Thai tea is traditionally sweetened well w/sugar as it brews & crowned w/a generous splash of evaporated milk or half-&-half just before serving. You can brew Thai tea in a teapot, drip coffeemaker or French press (making it very strong & adding sugar while the tea is still very hot). Time has been estimated & does not include cool & chill time. Enjoy!

  • Combine all ingredients except sugar substitute and milk in a saucepan. Bring to a boil, reduce to a simmer, and allow to simmer for 15 minutes.
  • Strain into a pitcher. Add the sugar substitute and stir until dissolved. Chill until very cold.
  • To serve, pour 2 tablespoons of evaporated milk over ice in a tall glass. Pour over 6-8 oz of iced tea, stir and enjoy!

  • Make the simple syrup: in a small pot over high heat, combine the sugar and water. Bring to a boil and cook, stirring occasionally, until the sugar has dissolved and the syrup is clear.
  • Assemble the tea: divide the ice between 2 glasses, then add simple syrup, tea, and half-and-half.

Steps:

  • 1. Preheat oven to 350°F. Use butter wrapper to grease an 8-inch loaf pan, 8-inch square cake pan, or 8-inch round cake pan.
  • 2. Brew tea with 3/4 cup boiling water, covered, for 10 minutes. Strain tea leaves and discard. In a mixing bowl, combine butter and freshly brewed tea until butter is completely melted. Whisk vanilla, half of the sweetened condensed milk, and the eggs. Mixture should be bright orange and very creamy. Gently stir in salt, flour, and baking powder. Pour into prepared pan and bake for 35-45 minutes or until a toothpick inserted into the center comes out clean. Allow cake to cool for 20 minutes.
  • 3. While cake cools, make the glaze. Whisk together remaining sweetened condensed milk and powdered sugar until a thick, creamy mixture forms.
  • 4. To serve cake, run a knife along the edge of the cooled cake to gently loosen it from its pan. Turn cake out onto a plate and drizzle glaze over the top, allowing it to run down the sides of the cake.
  • 5. Cake can either be served immediately or chilled and served cold.

6 star anise pods
1/2 teaspoon ground turmeric
1 teaspoon pure vanilla extract
1 1/2 teaspoons loose Ceylon tea leaves
Sweetened condensed coconut milk

Steps:

  • Bring star anise, turmeric, vanilla, and 5 cups water to a boil; reduce heat to medium and simmer 10 minutes. Remove from heat; add tea leaves. Steep 10 minutes; strain and let cool completely. For each serving, pour over ice; stir in condensed coconut milk to taste. Tea will keep in the refrigerator for up to 2 weeks.

Made with light coconut milk and half sugar substitute, these little cakes are rich, moist, and guilt free. Dust with confectioners' sugar and served warm, at room temperature, or refrigerated.

1 teaspoon vegetable oil for brushing, or as needed
1 teaspoon white sugar
1 cup light coconut milk
¼ cup powdered Thai tea
⅓ cup granular sucralose sweetener (such as Splenda®)
½ teaspoon vanilla extract
½ teaspoon coconut extract
2 eggs, separated
1 pinch cream of tartar
⅓ cup white sugar
¼ cup all-purpose flour
1 pinch salt

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease insides of four 6-ounce ramekins; lightly dust with 1 teaspoon sugar.
  • Heat milk in a small saucepan over medium heat until it begins to bubble.
  • Place coconut milk in the top of a double boiler over simmering water. Heat until edges start to bubble, about 5 minutes. Whisk in Thai tea powder. Cook, scraping the sides and bottom of the bowl, until dissolved, about 5 minutes.
  • Strain coconut milk into a separate bowl through a fine sieve or cheesecloth; whisk in sucralose sweetener, vanilla extract, and coconut extract.
  • Place egg whites and cream of tartar in a glass, metal, or ceramic bowl. Beat with an electric mixer until stiff peaks form.
  • Whisk egg yolks and 1/3 cup sugar together in a separate bowl. Add coconut milk mixture, flour, and salt. Whisk until batter is evenly mixed. Fold in egg whites until smooth. Ladle the batter into the prepared ramekins. Set ramekins on a baking pan. Pour boiling water into the pan to reach halfway up the ramekins.
  • Bake in the preheated oven until tops are lightly browned and cakes pull way from the edges of the ramekins, 40 to 50 minutes. Let cool until set, at least 10 minutes. Loosen edges of cakes with a sharp knife; invert onto small plates.

There are almost as many ways of making Thai tea as there are Thai restaurants. I love the richness the cardomom, cloves and cinnamon add. You can also skip the sugar and use sweetened condensed milk in place of the half-and-half. No other tea will substitute for Thai tea--you can find Thai tea in Asian markets, or if you are really lucky, in the Asian section of your grocery store. Prep time does not include chill time.

6 cups water
1 cup thai tea leaves
4 cardamom pods, crushed
1 whole clove, crushed
1/4 teaspoon cinnamon
1 cup sugar
1 cup half-and-half

Steps:

  • Bring 6 cups of water to a boil.
  • Stir in tea leaves, cardamom pods, crushed clove and cinnamon.
  • Cover.
  • Remove mixture from heat and let steep 5 minutes.
  • Pour tea through a fine wire-mesh strainer into a pitcher, discarding tea leaves (caution--don't pour hot tea into a glass pitcher as it may break).
  • Add sugar, stirring until dissolved; cool.
  • Cover and chill 2 hours.
  • Serve in a glass over crushed ice.
  • Top with 3 to 4 tablespoons half-and-half.
