1 cup finely shredded green cabbage
3 cups finely shredded red cabbage
3 cups finely shredded napa cabbage
1/2 cup green onion, sliced
1/4 cup red bell pepper, chopped small
2 cups carrots, shredded
kosher salt
fresh ground black pepper
1/3 cup rice wine vinegar
2 teaspoons fresh lime juice (to taste)
2 -3 tablespoons chili-garlic sauce
1 1/2 teaspoons honey
1 teaspoon minced fresh ginger, peeled
1 teaspoon minced garlic
1 tablespoon fresh basil, chopped
1 tablespoon fresh mint leaves, chopped
1 tablespoon fresh cilantro leaves, chopped
1/4 teaspoon black pepper
1 1/2 teaspoons toasted sesame seeds
1/2 teaspoon ground coriander
kosher salt
1 tablespoon toasted sesame oil
1/2 cup peanut oil (or corn oil)

Steps:

  • Whisk all ingredients except oils in a large bowl. Slowly drizzle in oils while whisking. Taste and adjust seasoning with more salt and lime juice if needed.
  • Combine the vegetables in a large bowl, season with salt and pepper. Toss to mix thoroughly. Pour in the Thai vinaigrette to taste and toss to mix. Adjust, adding more if desired. Enjoy!

1 small red chilli , finely chopped
3 tbsp fish sauce

2 tsp caster sugar
handful roughly chopped coriander

Steps:

  • Combine carrots, red pepper and red onion in a bowl with the beansprouts. Mix the chilli with fish sauce, lime juice and sugar. Pour dressing over the slaw and stir through coriander just before serving.

1 (16 ounce) shredded cabbage (coleslaw mix)
1/4 seedless European cucumber, sliced thin (I used 1/2)
1 small red pepper, seeded and thinly sliced (I've also used green ones, whatever I have on hand)
4 scallions, thinly sliced
20 leaves fresh basil, shredded
toasted sesame seeds
1/2 teaspoon crushed red pepper flakes
1 garlic clove, minced (I use my micro plane)
1/4 cup rice wine vinegar
2 tablespoons honey
1 tablespoon soy sauce
2 tablespoons vegetable oil
1 teaspoon toasted sesame oil

Steps:

  • Combine veggies in a bowl. Combine dressing ingredients in a small plastic container and shake well for 1 minute.
  • Drizzle sauce over veggies and toss to coat evenly. Let stand 10 minutes and re toss before serving and garnish with toasted sesame seeds.

1/2 cup white wine vinegar
1/2 cup honey

  • In a small bowl, whisk the first 7 ingredients until blended. Pour 1 cup marinade into a bowl or shallow dish. Add chicken and turn to coat. Cover and refrigerate overnight. Cover and refrigerate remaining marinade., Preheat oven to 350°. Drain chicken, discarding marinade from the bowl. Place chicken in a 13x9-in. baking dish coated with cooking spray. 1 teaspoon Thai chili garlic sauce
1 teaspoon mai poi sauce (Thai sweet chili sauce)

1/4 teaspoon green onion, chopped, plus more for garnish
1/4 teaspoon paprika
1/4 teaspoon freshly chopped parsley

Steps:

  • For the Thai saute shrimp: Mix the shrimp, Thai chili garlic sauce, mai poi, basil, garlic, onion, paprika, parsley and sprinkle with salt and pepper. Let the shrimp marinate in the sauce, about 1 hour.
  • Meanwhile for the Asian slaw: Whisk the mayonnaise, vinegar, garlic, ginger, canola oil and sesame oil in a bowl. Mix the mayonnaise mixture with the jicama, red pepper, yellow pepper, radish, cilantro and green onions. Chill the slaw in the refrigerator, about 30 minutes.
  • Heat the canola oil in a saute pan. Remove the shrimp from the marinade, reserving the marinade. Cook the shrimp until golden brown on both sides. Add the leftover marinade to the pan and stir until it thickens to a sauce consistency.
  • Place the rice in the center of a plate. Place the shrimp around the rice and drizzle the sauce over the shrimp. Place the Asian slaw on top of the rice. Garnish with Thai basil, cilantro and green onion.

One of my family's favorite meals! We vary the toppings by sometimes using cabbage slaw and other times broccoli slaw. Super healthy and low in fat! We've also substituted iceberg lettuce leaves for the buns to lower the calories. Messier but so yummy! Serve any extra slaw on the side. You can serve these over rice or on a bed of salad, too. We've also turned them into lettuce wraps to save more calories!

8 hamburger buns, split
2 tablespoons butter
½ onion, chopped
2 tablespoons tomato paste
2 cloves garlic, minced

2 pounds boneless, skinless chicken breast, or more to taste, cut in bite-size pieces

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Arrange hamburger buns, cut-sides facing up, in a single layer on a baking sheet.
  • Toast buns under the preheated broiler until toasted, 30 to 60 seconds.

A seared salmon fillet on a bed of spicy broccoli slaw makes for a very filling and delicious meal. This recipe is designed for 2 but can easily be increased to serve 4 or more. This recipe was developed for RSC #13.

2 (4 ounce) salmon fillets
2 teaspoons olive oil
1 piece gingerroot, grated (Approximately 2 inch length.)
1/4 cup rice wine vinegar (Use lite if available.)
1 tablespoon soy sauce
1/2 teaspoon lime juice
3 tablespoons peanut butter
1/2-3/4 teaspoon red pepper flakes
1 -2 tablespoon water
2 cups broccoli slaw mix
2 green onions, white and green, sliced on diagonal
1/3 medium cucumber, peeled, cut in half lengthwise, seeded, sliced
3 tablespoons finely chopped fresh cilantro
2 tablespoons dry roasted peanuts, coarsely chopped
salt, to taste
black pepper, to taste

Steps:

  • Place all the dressing ingredients (except water) in a blender container and process until smooth. Thin with water if necessary, it should be a little thicker than a vinaigrette. Reserve 2 tablespoons for basting fish.
  • In a large bowl combine the broccoli slaw, cucumber, green onion and cilantro; drizzle with dressing and toss to coat; stir in coarsely chopped peanuts, reserving a small amount for garnish, add salt and freshly ground black pepper to taste; mix well. Set aside while cooking salmon.
  • In a heavy skillet heat the olive oil unit hot; add salmon fillets, skin side down, baste with reserved dressing. Sear for 3 to 4 minutes; turn the salmon, remove skin and brush with dressing; continue to cook for an additional 3 minutes. Turn and sear until salmon is done and flakes easily when tested with fork, approximately 1 to 2 minutes more.
  • To serve, divide the slaw on 2 serving plates and top with cooked salmon; garnish with reserved peanuts.

1/8 pound jumbo lump crab meat, dried
1 teaspoon brunoise-cut red pepper
1 teaspoon brunoise-cut red onion
1/2 teaspoon diced chives
1 teaspoon mayonnaise
1/4 teaspoon Dijon mustard
Salt and freshly ground black pepper, to taste
1/2 pinch Caribbean Jerk seasoning
2 tablespoons fine panko breadcrumbs, plus 2 more tablespoons
Vegetable oil, for frying
Jicama and Chayote Slaw, recipe follows
Coconut Thai Red Curry Sauce, recipe follows
1 tablespoon jicama, julienned
1 tablespoon chayote, julienned
1/8 red pepper, julienned
3 chives, minced
1/2 teaspoon fresh lime juice
1/4 teaspoon Mirin
Salt and freshly ground black pepper, to taste
1/2 stalk lemon grass
1/2 teaspoon grated ginger
1 kaffir lime leaf
1/2 cup sugar
1/8 teaspoon red curry paste
1/2 can Thai coconut milk

Steps:

  • In a medium bowl, mix all ingredients except the remaining 2 tablespoons of the breadcrumbs. With your hands, mold into 1 large cake, about 1 inch high. Then coat the crab cake with the remaining 2 tablespoons breadcrumbs.
  • In a 10-inch skillet, heat enough oil to come 1/4-inch up the sides of the skillet over medium heat. Carefully place the crab cake in the hot oil and fry until golden brown and crispy, about 4-5 minutes on each side.
  • To serve, place the Jicama and Chayote Slaw on a serving plate and top with the Crab Cake. Drizzle the plate and Crab Cake with the Coconut Thai Red Curry Sauce.
  • In a small bowl, mix together all ingredients with a rubber spatula. Use a slotted spoon to place slaw on plates so that mixture is not too liquidy.
  • In a small saucepan over medium heat, simmer the lemon grass, ginger, lime leaf, and sugar with 1/2 cup water until slightly reduced, about 15 to 25 minutes. Strain mixture through a sieve into a heat-proof bowl, and reserve the liquid.
  • In a separate small saucepan over high heat, boil the curry paste and 1 tablespoon of the coconut milk until brown. Slowly add the rest of the coconut milk. Reduce the heat and simmer until liquid has reduced by 1/4. Add the reserved sugar mixture, and continue simmering until the sauce thickens and reaches a nappe consistency (thick enough to coat the back of a spoon). Drizzle sauce over Crab Cake and around plate.

1/3 cup rice vinegar
1/2 cup granulated sugar
1 tablespoon chili paste (sambal)
4 teaspoons fresh lime juice
2 teaspoons canola oil
1/2 teaspoon salt
2 ounces soba noodles, cooked (1 1/2 cups)
10 cups thinly sliced napa cabbage (approx. 1 head)
2 cups mixed baby greens
1 1/2 cups julienned carrot (approx. 1 carrot)
1 cup julienned zucchini, (approx. 1/2 zucchini)
1 cup cilantro, chopped
1 cup dry roasted unsalted peanuts
1/2 cup sliced almonds

Steps:

  • 1. Prepare the dressing first by combining the ingredients in a small bowl or glass measuring cup. Heat up this mixture in the microwave on high for 30 to 60 seconds or until dressing is hot, but not boiling. This will help to dissolve the sugar and salt. Stir the dressing well and set it aside to cool. 2. Cook 2 ounces of soba noodles following the directions on the package (the directions will say something like: "Cook noodles for 5 minutes in rapidly boiling water"). Drain the soba noodles, run cold water over them and let them sit to cool while you prepare the other ingredients. 3. Use a large sharp knife to thinly slice a medium head of napa cabbage. You can also use a mandolin to slice the cabbage into thin, uniform strips so that you have 10 cups of sliced cabbage. You can use a mandolin with a julienne attachment for slicing the carrots and zucchini as well. Make sure to chop the julienne slices into bite-size strips.

Steps:

  • For the chicken: In a large bowl, mix the rice, coconut, green onion, basil, cilantro, chili sauce, 1 tablespoon lime juice, and zest from 1 lime. Place chicken between 2 sheets of plastic wrap and pound to even thickness. Place equal amounts of rice mixture on each breast half. Wrap chicken around filling, securing with toothpicks. In a glass pie plate, mix together flour, zest of 1 lime, salt and pepper. In another plate, mix coconut milk, and 2 tablespoons lime juice. Beef Tenderloin with Parsnip Slaw and Thai Peanut Sauce image

1/2 cup mayonnaise
1/4 cup peanut butter
1 tablespoon sugar
1/4 cup white wine vinegar
1 head Napa cabbage, shredded
4 parsnips, peeled and grated
2 carrots, peeled and grated
1 bunch fresh cilantro, chopped
1 small onion, diced
1 clove garlic, minced
3 tablespoons olive oil
1 beef tenderloin (about 2 pounds)
Kosher salt and freshly ground black pepper, to taste

1/4 cup soy sauce
Thai Peanut Sauce, recipe follows
1/2 cup peanut butter
1 (8-ounce) can coconut milk
1/2 cup agave nectar
1/2 cup fresh lime juice
1/4 cup soy sauce
Garlic powder
Red pepper flakes

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large bowl, whisk together the mayonnaise, peanut butter, sugar, and vinegar. Add in the cabbage, parsnips, carrots, cilantro, onion, and garlic. Toss to coat with the dressing.
  • Heat a large oven-proof saute pan over medium-high heat and add the olive oil. Season the beef tenderloin with salt, and pepper, and sear on all sides until brown. Transfer the pan to the oven and cook the tenderloin for about 20 to 30 minutes, or until medium-rare and internal temperature is 145 degrees F. Remove the beef from the pan. Place the pan back on medium heat and de-glaze with the soy sauce. Stir the sauce to scrape up the brown bits from the bottom of the pan. Remove the pan from the heat. Thinly slice the tenderloin and lay on a bed of parsnip slaw. Serve with a side of Thai Peanut Sauce.
  • In a blender or food processor, mix the peanut butter, coconut milk, agave nectar, lime juice, soy sauce, garlic powder, to taste, and red pepper flakes, to taste together until the texture is smooth and loose.

1 1/2 tablespoons lime juice
1 tablespoon fish sauce
2 teaspoons Splenda sugar substitute, granulated Stevia or 2 teaspoons sugar
1/4-1/2 teaspoon dried red chili pepper flakes
3 -4 cups cabbage, red and green thinly sliced and chopped (more red than green makes a pretty salad)
1/4 cup thinly sliced green onion
1/2 cup chopped mint leaf
1/2 cup chopped cilantro
1/3 cup chopped salted peanuts (or more)

Steps:

  • Whisk together the lime juice, fish sauce, sweetener of your choice and red chili flakes to make the dressing.
  • Thinly slice and chop enough red and green cabbage to make 3-4 cups of sliced cabbage. Put the cabbage in medium-sized bowl and toss with the dressing. Let the cabbage marinate while you prepare the other ingredients.
  • Slice the green onions. Wash and spin dry the mint leaves and cilantro, using a salad spinner or drying with paper towels, then chop enough to make 1/2 cup each chopped mint and cilantro. Coarsely chop peanuts.
  • Add the green onion, chopped mint, chopped cilantro and most of the peanuts to the cabbage and toss to combine. Garnish with additional chopped peanuts. Best if served immediately.

1/2 teaspoon unseasoned rice wine vinegar

A few drops nam pla (Thai fish sauce), optional
1 tablespoon chopped Thai basil
1 tablespoon coarsely chopped fresh cilantro

1½ pounds Alaska Cod fillets, fresh or thawed
1/4 cup fresh lime juice
1/4 cup rice wine vinegar
3 Tablespoons Thai fish sauce
1 Tablespoon sambal or sriracha
2 Tablespoons palm sugar or brown sugar
1/3 cup canola oil
8 small (6-inch) corn tortillas, warmed
1 cup peeled and shredded green papaya
1 cup finely shredded Napa cabbage
1 Roma tomato, halved lengthwise and thinly sliced
1/3 cup finely shredded carrot
1/4 cup snipped cilantro leaves
3 Tablespoons slivered mint leaves
1/2 cup Mexican crema (sour cream or mayonnaise)
2 teaspoons sambal or sriracha
1 teaspoon fresh lime juice

Steps:

  • Place Alaska Cod fillets in shallow glass dish. Whisk together lime juice, vinegar, fish sauce, sambal, sugar and oil. Pour half the mixture over fish and reserve remaining for slaw. Let fish marinate 15 minutes. For Slaw: Combine green papaya, cabbage, tomato, carrot, cilantro and mint. Toss with reserved dressing until combined. For Crema: Whisk together crema, sambal and lime juice. Refrigerate until serving. Preheat grill or stovetop grill pan to medium-high heat. Remove fish from marinade and grill until barely done, 2 to 5 minutes per side, depending on thickness. Cook just until fish is opaque throughout. Remove fillets from grill and break into large chunks. Line each tortilla with Green Papaya Slaw. Top with chunks of fish and drizzle with Sambal Crema. Serve immediately.
