SHREDDED THAI CHICKEN SALAD

1 small cabbage (shredded)
2 carrots (julienned/grated)
2 spring onions (finely sliced)
1 cup sugar snap peas (julienned)
1 red bell pepper (julienned)
1 yellow bell pepper (julienned)
2 cooked chicken breasts (shredded)
2 tablespoons smooth peanut butter
1 tablespoon soy sauce
2 teaspoons fish sauce
1 teaspoon crushed garlic
1 teaspoon crushed ginger
½ teaspoon finely chopped chillies
juice of 1 lime
splash of water to thin out

Steps:

  • Combine all the salad ingredients in a large bowl.
  • In a separate bowl, whisk together the salad dressing ingredients.
  • Pour the salad dressing over the salad then toss well.
  • Serve immediately.

2 cups shredded deli rotisserie chicken (from 2- to 2 1/2-lb chicken)
1 cup julienne (matchstick-cut) carrots
1 cup broccoli slaw mix
1 large green onion, chopped
2 tablespoons creamy peanut butter
2 tablespoons rice vinegar
1 tablespoon vegetable oil
1 tablespoon honey
4 teaspoons soy sauce
1/8 teaspoon red pepper sauce
Fresh cilantro, if desired

Steps:

  • In large bowl, toss salad ingredients.
  • In small bowl, beat dressing ingredients with wire whisk. Just before serving, drizzle dressing over salad; toss until evenly coated. Garnish with cilantro.

This low-fat yet satisfying salad is full of authentic Asian flavour and will add plenty of zing to al fresco dining

200g runner beans (or any other green bean), topped and tailed
1 red chilli , halved and finely sliced, use a bird's eye chilli for more heat
2 shallots , finely sliced
1 lemongrass , finely sliced
2cm piece ginger , shredded
2 cooked, skinless chicken breasts
small bunch mint leaves
large bunch Thai basil or coriander
1 lime cut in wedges or cheeks, to serve
steamed jasmine rice , to serve
100ml coconut cream
1 garlic clove , crushed
3 tbsp fish sauce
1 tsp sugar
juice 1 lime
1 bird's eye chilli , finely diced

Steps:

  • Run a potato peeler down either side of the beans to remove any stringy bits. Cut into strips using a bean slicer, or on the diagonal into 2cm pieces. Cook the beans in simmering salted water for 4 mins or until tender but still bright green. Drain and put in a bowl with the chilli, shallots, lemongrass and ginger. Pull the chicken breasts into shreds using your fingers and add to the bowl.
  • Make the dressing. Mix the coconut with the garlic, fish sauce, sugar, lime and chilli. Tear the mint and Thai basil over the chicken and toss everything together. Pile onto a plate and pour over the dressing. Serve with the lime to squeeze over and jasmine rice.

Salads are the meal of choice when our Texas temperatures hover in the 90s. In this one, I use locally grown strawberries, fresh greens and chicken strips. It makes a light and colorful lunch on a hot summer day.

DRESSING:
1/2 cup honey
1/2 cup red wine vinegar
4 teaspoons soy sauce
1 garlic clove, minced
1/2 teaspoon ground ginger
1/4 teaspoon salt
Dash pepper
SALAD:
1 pound boneless skinless chicken breasts, cut into strips
1 tablespoon canola oil
1 teaspoon butter
8 cups torn mixed salad greens
1 pint fresh strawberries, sliced
1/4 cup chopped walnuts
Additional whole strawberries, optional

Steps:

  • In a small bowl, combine the dressing ingredients. In a large skillet, cook and stir chicken in oil and butter until no longer pink. Add 1/2 cup salad dressing; cook 1 minute longer. , Place the salad greens in a serving bowl. Top with chicken, sliced strawberries and walnuts. Garnish with whole strawberries if desired. Serving immediately with remaining dressing.

2 cups chopped, cooked chicken

2 stalks green onions, chopped
2 tablespoons chopped fresh parsley
salt and ground black pepper to taste

1 box Betty Crocker™ Suddenly Pasta Salad™ classic
1/4 cup creamy peanut butter
1/4 cup natural rice vinegar
3 tablespoons soy sauce
3 tablespoons vegetable oil
2 tablespoons honey
1 teaspoon Sriracha sauce
2 cups shredded deli rotisserie chicken (from 2 to 2 1/2 lb chicken)
2 cups chopped fresh broccoli
1 cup matchstick (julienne-cut) carrots
3 tablespoons chopped honey-roasted peanuts

Steps:

  • Cook pasta as directed on box. Meanwhile in large bowl, stir together seasoning mix (from salad box), peanut butter, vinegar, soy sauce, oil, honey and Sriracha sauce with whisk or fork until blended.
  • Drain pasta; rinse with cold water. Shake to drain well.
  • Add drained pasta, chicken, broccoli and carrots to peanut butter mixture; toss to coat. Sprinkle with peanuts. Serve immediately, or cover and refrigerate until ready to serve.
