This is a recipe that I've tweeked and adjusted to yield a warm noodle side-dish. It can also stand alone as a main dish. It's quick and easy and full of flavor! I serve it with Chicken Satay. Leftovers are yummy hot or cold.

12 ounces linguine
4 tablespoons sesame oil
1/2 cup green onion, chopped
1 cup finely shredded carrot
2 cups frozen stir fry vegetables
3 tablespoons minced fresh garlic
1/2 tablespoon ground ginger or 1 tablespoon fresh ginger, minced
1/4 cup honey
1/4 cup creamy peanut butter
1/4 cup soy sauce
3 tablespoons rice vinegar
1/2 tablespoon chili-garlic sauce

Steps:

  • Cook pasta in a large pot of salted water according to package directions.
  • Drain and return to pot.
  • Add 2 TBSP sesame oil and toss to coat.
  • Set aside.
  • Heat remaining 2 TBSP sesame oil in heavy pot over medium-high heat.
  • Add green onions, carrots, stir-fry veggies, garlic and ginger.
  • Saute until vegetables soften, about 4 minutes.
  • Add honey, peanut butter, soy sauce, vinegar and chili-garlic sauce and mix well.
  • Simmer sauce 2 minutes.
  • Pour sauce over pasta and toss well.
  • Transfer to platter and serve warm.
  • Garnish with additional green onions, if desired.
  • Yields 8 side dish servings or 4 main dish servings.
  • **Chili-Garlicsauce can be increased or decreased depending on how spicy you like your dish.
  • As written, this recipe has some heat, but is still edible for my toddler son.

1 pound udon noodles or linguine pasta
2 teaspoons sesame oil
1/4 cup light soy sauce
2 teaspoons grated fresh ginger
2 cloves garlic, minced
4 Thai chiles, halved lengthwise, and seeds removed
4 chicken breasts, cut into bite-size cubes
1/2 cup creamy peanut butter
1 tablespoon grated fresh ginger
2 cloves garlic, minced
3 tablespoons sugar
1/4 cup rice vinegar
3 tablespoons soy sauce
2 tablespoons sesame oil
1 teaspoon chile oil
2 tablespoons grapeseed oil
1 orange, rind removed, flesh segmented
2 Thai chiles diced, seeds removed
1 small bunch fresh cilantro, chopped

Steps:

  • Bring a large pot of salted water to a boil. Cook the noodles according to the package directions for al dente. Drain the noodles, then transfer to a large bowl and toss with the sesame oil. Set the noodles aside.
  • In a medium mixing bowl, whisk together the soy sauce, ginger, garlic, and chiles. Add the cubed chicken to the marinade, toss gently to coat the chicken. Cover the bowl and refrigerate for 30 minutes.
  • For the dressing: In a small saucepan, whisk together the peanut butter, ginger, garlic, sugar, rice vinegar, soy sauce, sesame oil, and chile oil, and bring to a simmer over medium-low heat.

  • Thread the chicken pieces and orange segments alternately on the skewers.

3 cups reduced-sodium beef broth
2 tablespoons reduced-sodium soy sauce
2 tablespoons creamy peanut butter

1 teaspoon peeled and minced fresh ginger
2 cloves garlic, minced
1 medium red bell pepper, seeded and diced

1/2 cup creamy peanut butter
1/4 cup soy sauce

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the sweet potato noodles on a large baking sheet and bake "naked" until slightly crispy and yielding, about 10 minutes.
  • Meanwhile, whisk together the peanut butter, soy sauce, lime juice, honey, rice wine vinegar, ginger, sesame oil, garlic and fish sauce. Adjust the seasoning if necessary. If it's too thick, add up to 1/4 cup warm water.
  • Season the shrimp with the chile lime seasoning and some salt and pepper. Place the shrimp on top of the par-cooked noodles. Roast until the shrimp turn opaque, 8 to 10 minutes more.
  • Toss half of the peanut sauce with the warm sweet potato noodles straight from the oven. Transfer to a large serving platter. Top with the shrimp, crushed peanuts, scallions and fresh mint and serve with more peanut sauce alongside.

1/3 cup water
1 garlic clove, minced
1/2 teaspoon dark soy sauce

  • Thai Peanut Sauce Preparation: Place the first 12 ingredients (from the peanuts to the lime zest), in a blender. Blend until sauce is smooth. If you prefer a runnier peanut sauce, add a little more water. Do a taste test for salt and spice, adding more fish sauce if not salty enough, and more chili sauce &/or red pepper flakes, if not spicy enough. If too salty, add another squeeze of fresh limejuice.
  • Beef Pad Thai Preparation: Cook the noodles according to the package directions. Drain, transfer to a large bowl, and cover with aluminum foil or plastic wrap to keep warm.
  • Heat the peanut oil in a large skillet over medium-high heat. Add the ginger and garlic - cook, stirring, for 2 minutes. Add the sliced onions & mushrooms, stir-fry for 2 minutes. A spicy thai-inspired dish with rice noodles and a sweet peanut curry sauce! Loaded with veggies and chicken. My family likes to run/workout a lot and they love this dish because it is loaded with protein, veggies, carbs, and good fats. They call it "Magic Noodles" because it fuels their workouts.

1 (14 ounce) package of linguine style rice noodles
1 1/2 cups peanut butter (chunky is good!)
2 tablespoons Thai sweet chili sauce (1 tablespoon if you don't enjoy a little kick!)
1 tablespoon soy sauce
1 tablespoon brown sugar, level
2 tablespoons yellow curry paste (red works too!)
2 (10 ounce) cans coconut milk (shake well before opening)
1/2 cup chopped peanuts
1 green bell pepper
1 red bell pepper
1/2 cup broccoli floret
1/2 cup asian style pea pods
8 ounces chicken breasts or 8 ounces firm tofu

Steps:

  • Begin by poaching the chicken breast. (If you are using tofu, bake, fry, or steam your tofu. That is up to you!).
  • Wrap chicken in a tin-foil wrapper and place in a baking dish. Bake at 425 for about 30 minutes or until cooked completely through. While the chicken is baking, begin the sauce.
  • Pour the coconut milk into a large skillet with high sides and gently warm on medium heat for a couple minutes. Add the peanut butter and melt. As the peanut butter melts, add in the rest of the sauce (save 1/2 cup chopped peanuts) ingredients and stir fully. Let gently simmer on low heat for about 10 minutes.
  • Start a large pot of water to boil for the noodles.
  • Rinse and slice the peppers into thin strips.
  • Rinse the rest of the veggies and add all of the veggies to the sauce.
  • Cover and let continue to simmer on lowest heat.
  • When the chicken is finished cooking, remove it from the oven and the foil & let it rest for a few minutes or until cool enough to slice. Slice the chicken into slices or chunks and add to the sauce and toss.
  • Rice noodles cook fairly quickly, so keep your eye on them. Add rice noodles to boiling water and let cook according to the package directions (about 6-8 minutes). Test by eating one of the noodles for doneness. Noodle should be al dente -- cooked but not overcooked.
  • Drain noodles.
  • Turn off heat.
  • Add a small amount of the coconut peanut butter sauce to the large pasta pot.
  • Return the noodles to the pot.
  • Pour the rest of the sauce with veggies on top of the noodles.
  • Toss thoroughly.
  • Serve with a garnish of chopped peanuts on top.

Time saver: I often put together the sauce ingredients (first ingredient through garlic) together in the morning in a two cup measuring cup and stir so that my before meal prep is super simple. 1 cup chicken broth
1/2 cup soy sauce
1/2 cup smooth peanut butter
1/4 cup honey
1 1/2 tablespoons fresh ginger, minced
4 teaspoons ground cumin
2 teaspoons coriander powder
1 teaspoon red pepper flakes
8 garlic cloves, minced
12 ounces spaghetti
1 cup carrot, julienned
1 cup green onion, sliced
4 chicken breasts

Steps:

  • Cook pasta until al dente and set aside in a pasta bowl.
  • Saute green onions and carrots in a tiny bit of oil over high heat for 3-5 minutes; throw this on top of pasta.
  • Saute chicken until done; slice into strips and throw on top of pasta.
  • In a saucepan, add sauce ingredients: broth, soy sauce, peanut butter, honey, ginger, cumin, coriander seed, red pepper flakes and garlic.
  • cover and cook slowly over medium heat until heated through and stir frequently.
  • Add over pasta and mix using forks or salad spoons until the sauce is evenly distributed.

THAI PEANUT SHRIMP, ASPARAGUS AND NOODLES

I made up this recipe after experimenting with several different recipes from many different sources. I like to serve this with recipe #101790 (Oriental Cucumber Salad) and either potstickers or hot and sour soup. You can also make it with other meats like chicken or pork, or rice instead of noodles. This is one of my DH's favorite meals.

2 quarts water, cold
1/4 cup salt
1/4 cup sugar
1 lb shrimp, shelled and deveined
1/2 cup peanut butter, smooth
1/2 cup hoisin sauce
1/2 cup water
3 -4 tablespoons brown sugar
2 tablespoons sesame oil
2 tablespoons soy sauce
2 tablespoons lime juice
2 tablespoons red wine vinegar
1 teaspoon garlic salt (optional)
1 teaspoon ginger, minced
1 teaspoon garlic, minced
1 teaspoon chili-garlic sauce
1/2 teaspoon hot sauce (I like Cholula)
2 tablespoons cornstarch, mixed with 2 T Water (optional)
1 tablespoon canola oil
1 onion, diced
1 red pepper, diced
2 teaspoons garlic, minced
2 cups asparagus, cut into 1 inch pieces
3 cups noodles, cooked and drained

Steps:

  • Mix water, salt and sugar together with a whisk until salt and sugar are dissolved. Add shrimp and let it sit in the brine for at least 30 minutes. Longer doesn't hurt. Drain shrimp well and pat dry with a paper towel when ready to cook.
  • While shrimp is brining, combine all sauce ingredients except cornstarch and water slurry in a small saucepan. Heat over low heat for 30 minutes. Cornstarch/water slurry can be whisked in if sauce isn't thick enough after heating.
  • Pour canola oil into a large, hot, non-stick skillet over medium high heat. Add onion, red pepper and garlic. Stir-fry for 7 minutes, until veggies are softened. Add asparagus and continue stir-frying for about 5 more minutes. Pour veggies into a large bowl and set aside.
  • Re-heat skillet over medium high heat. Add additional canola oil if desired. Add drained shrimp and stir-fry until they are pink, about 5 - 7 minutes. Add reserved veggies and noodles and stir well. Pour peanut sauce over everything and combine.

1/2 cup chunky peanut butter
1 3/4 cups coconut milk
2 tablespoons soy sauce
1/4 cup fresh lemon juice
2 tablespoons brown sugar
4 garlic cloves, minced
salt
cayenne pepper, to taste
1/4 cup chicken broth
1 lb vermicelli
2 tablespoons peanut oil
6 -8 scallions, thinly sliced
6 boneless skinless chicken breasts, thinly cut, poached
1 lb snow peas, trimmed, julienne cut, blanched 30-60 seconds, cooled in ice water, drained
dry roasted peanuts, chopped
sesame seeds, toasted
fresh coriander sprig, garnish

Steps:

  • Combine the peanut butter, 1 1/2 cups of the coconut milk, soy sauce, lemon juice, brown sugar, garlic, salt, and cayenne in a small saucepan over low heat. Stir constantly and cook until thickened. Blend or process to puree.
  • Add broth and remainin 1/4 cup of coconut milk and blend until smooth. Cover and set aside (can be made ahead and refrigerated covered).
  • Cook vermicelli, drain and rinse. Toss with peanut oil and cool to room temperature, stirring occasionally.
  • Just before serving place pasta on individual plated. Spoon over the sauce and sprinkle with scallions.
  • Slice chicken on the diagonal and re-assemble 1/2 breast on top of each serving. Surround with snow peas to resemble a nest. Sprinkle with garnishes.

2 cups small fresh broccoli florets
1 1/2 cups sliced fresh mushrooms (4 oz)

1 medium bell pepper (any color), cut into thin bite-size strips
1 package (9 oz) frozen diced cooked chicken, thawed
1/4 cup coarsely chopped dry-roasted peanuts

Steps:

  • Cook and drain noodles as directed on package; cover to keep warm.
  • Meanwhile, in small bowl, beat peanut butter, gingerroot, pepper flakes and 2 tablespoons of the soy sauce with wire whisk until blended. Gradually beat in remaining 2 tablespoons soy sauce and the water until smooth. Set aside.

1-1/2 pounds boneless skinless chicken breasts, cut into 3/4 inch cubes
1 medium onion, chopped
3/4 cup salsa
1/4 cup creamy peanut butter
2 tablespoons black bean sauce

1 tablespoon canola oil
1/2 pound sliced baby portobello mushrooms

  • Place the chicken and onion in a 4-qt. slow cooker. Combine salsa, peanut butter, bean sauce and soy sauce; add to slow cooker. 1/2 cup Coconut Milk
1/2 cup Peanut Butter
1 tablespoon Thai Red Curry Paste
2 tablespoons Hoisin Sauce
1 tablespoon Brown Sugar
1 tablespoon Sriracha Plus More to Taste
1 tablespoon Soy Sauce
1/4 teaspoon Ginger
2 tablespoons Seseme Oil
1 package Extra Firm Tofu, Cubed Into 1/2 inch Dice
2 Sweet Potatoes, Medium (Optional)
1 pound Sugar Snap Peas

Steps:

  • In the bowl of a food processor, combine the coconut milk, peanut butter, red curry paste, hoisin sauce, brown sugar, sriracha, soy sauce, and ginger. Pulse to combine until smooth. Season to taste with more soy sauce and sriracha. Set aside.
  • Heat the oil in a large pan or wok over medium-high heat. Add the tofu and sweet potatoes to the pan and saute, stirring frequently, until sweet potatoes are tender, about 8-10 minutes.
  • Stir the sugar snap peas into the pan and saute or a minute or two, until bright green.
  • Add in the noodles and saute until heated through.
  • Stir the sauce into the pan and cook for a few minutes to heat through, stirring frequently. Serve with more hot sauce at the table.

1/2 cup chopped cilantro
1/2 cup lightly salted roasted peanuts, roughly chopped
Sesame seeds, for garnish (optional)
1/2 cup creamy peanut butter
1/4 cup warm water
3 tablespoons soy sauce
2 tablespoons honey
2 tablespoons Sriracha (more or less to taste)
2 tablespoons fresh lime juice
1 1/2 tablespoons peeled and minced fresh ginger
1 tablespoon minced garlic
1 tablespoon sesame oil

Steps:

  • Cook spaghetti according to directions listed on package. Meanwhile prepare peanut sauce by combining all sauce ingredients in a mixing bowl, whisking until well blended and smooth. Drain pasta and pour into a large serving bowl. Toss with sauce then add bell pepper, cucumber, green onions, cilantro and peanuts and toss lightly. Sprinkle with sesame seeds and serve.
