1 lb ground pork
1/2 tablespoon garlic powder
1/2 cup dry breadcrumbs
2 teaspoons soy sauce
2 teaspoons sesame oil
1/2 teaspoon salt
1 egg, lightly beaten
1 cup thai chili-garlic sauce

Steps:

  • Mix the ground pork, garlic, bread crumbs, soy sauce, sesame oil, salt and egg in a large bowl with your hands until well combined.
  • Roll mixture into one and a half inch balls (about 25) and place on a baking sheet. Refrigerate for 1 hour.
  • Preheat oven to 425° F and bake meatballs for 15 to 20 minutes.
  • Toss the meatballs with the Thai chili garlic sauce and serve.

These nuoc cham-inspired meatballs are perfect to fill lettuce cups topped with fresh basil or cilantro. (Add steamed rice for a more substantial meal.) The Ritz crackers here make for a juicier meatball, but feel free to substitute plain dry bread crumbs. To make the Ritz crumbs, place the crackers in a resealable plastic bag and lightly crush them with the back of a wooden spoon or measuring cup. For an easy dipping sauce, spike 1/4 cup mayonnaise with 2 teaspoons toasted sesame oil or soy sauce. And save any leftover meatballs: They're great simmered in chicken broth the next day. The ginger and garlic in them release their aromatics into the broth for a deeply flavorful soup base.

1 tablespoon fish sauce
1 teaspoon freshly ground black pepper

1/2 cup finely crushed Ritz crackers (12 crackers)
1 pound ground pork

Steps:

  • Heat oven to 425 degrees. In a large bowl, combine all the ingredients and use your hands to gently mix.
  • Shape the meat into 12 golf-ball-size rounds (about 2 inches in diameter) and arrange on a greased rimmed baking sheet.

3 tablespoons granulated sugar
3 tablespoons fresh lime juice
1 tablespoon thinly sliced green onion
1 tablespoon asian fish sauce
2 teaspoons asian garlic sauce (Sriracha)
1 lb ground chuck (80% lean)
1/4 cup thinly sliced green onion
1 tablespoon cilantro or 1 tablespoon sweet basil
1 tablespoon finely chopped Thai red chili peppers or 1 tablespoon jalapeno
1 teaspoon asian fish sauce
1 teaspoon sugar
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1 bunch Thai basil
12 wooden skewers, soaked in water for at least 30 minutes

Steps:

  • Mix all the ingredients for the sauce in a small bowl until the sugar has dissolved; set aside.
  • In a large bowl, gently combine the ground chuck with the rest of the filling ingredients.
  • Shape a tablespoon of the filling into a small log. Wrap 1 basil leaf around the beef and thread onto a skewer. Repeat until all of the filling is gone.
  • Clean and oil the cooking grate. Grill the rolls until the filling is fully cooked and slightly firm, about 6 to 8 minutes, turning once during cooking. Serve immediately with the dipping sauce. An alternate method would be to bake or pan fry.
