1 large thinly rolled out pizza dough
3 Tablespoons peanut butter (smooth or chunky)
2 teaspoons rice vinegar
2 teaspoons low-sodium soy sauce
1 teaspoon olive oil
1/2 teaspoon crushed red pepper flakes
1 Tablespoon freshly grated ginger
2 teaspoons honey
1/2 teaspoon sesame oil
2-3 Tablespoons water
1 heaping cup cooked, shredded chicken
1/4 cup chopped red or green onion
3 Tablespoons shredded carrot (, moisture squeezed out)
1 1/4 cups freshly shredded mozzarella cheese
1/4 cup fresh chopped cilantro

Steps:

  • Preheat oven to 475 degrees F.
  • Peanut Sauce: In food processor or blender, combine peanut butter, vinegar, soy sauce, oil, red pepper flakes, ginger, honey and sesame oil. Add enough water to thin to a smooth sauce spreading consistency. Set aside.
  • Assemble: Spread peanut sauce over the surface of pizza crust.
  • Scatter chicken pieces over top and sprinkle with green onions, carrot and cheese.
  • Bake for 7-12 minutes or until crust is cooked and cheese is bubbly. Remove from oven and garnish with fresh cilantro.

1 pizza dough, any brand
1/2 cup duck sauce or plum sauce
1/2 teaspoon crushed red pepper flakes
1 package (2 cups) shredded provolone or Monterey Jack cheese
1/2 red bell pepper, thinly sliced
1 tablespoon vegetable oil
2 tablespoons soy sauce
1 rounded tablespoonful peanut butter
2 teaspoons hot sauce
2 teaspoons grill seasoning (recommended: Montreal Steak Seasoning) eyeball it
4 chicken breast cutlets, 1/2 pound
2 tablespoons honey
2 tablespoons rice wine vinegar or cider vinegar
1/4 seedless cucumber, peeled and cut into matchsticks
4 scallions, chopped
1 cup bean spouts, a couple of handfuls
Palm full cilantro leaves, chopped
1/4 cup chopped peanuts, 2 ounces

Steps:

  • Preheat oven to 425 degrees F.
  • Form pizza crust on pizza pan or cookie sheet. Top with duck or plum sauce - spread it around like you would pizza sauce. Sprinkle the pizza with some crushed red pepper flakes then top with cheese and peppers. Bake until golden and bubbly, 15 to 17 minutes.
  • Preheat a grill pan over medium-high heat. Combine vegetable oil, soy sauce and peanut butter with hot sauce and grill seasoning. Use the microwave to loosen up peanut butter if it is too cold to blend into sauce, 10 seconds ought to do it. Add chicken and coat evenly with mixture. Let stand 10 minutes then grill chicken cutlets 2 to 3 minutes on each side, until firm. Slice chicken into very thin strips.
  • While chicken cooks, mix honey and vinegar and add the cucumber. Turn to coat evenly.
  • Top the hot, cooked pizza with chicken, scallions, sprouts and cilantro. Drain cucumbers and scatter over the pizza. Garnish pizza with peanuts, cut into 8 wedges and serve.

1 tablespoon olive oil
4 ounces ready-to-serve roasted chicken breast strips
2 to 3 large fresh mushrooms, thinly sliced
1/4 cup plus 2 tablespoons Thai peanut sauce, divided
2 cups shredded part-skim mozzarella cheese, divided
1/4 cup thinly sliced red onion
1/2 cup fresh snow peas, halved
1/4 cup chopped sweet red pepper
1/4 cup julienned carrot
2 green onions, sliced
1/2 cup salted peanuts

Steps:

  • Place crust on an ungreased 12-in. pizza pan; brush with oil. In a small bowl, combine the chicken, mushrooms and 1/4 cup peanut sauce; spread over crust. Sprinkle with 1 cup cheese. , Layer with the red onion, snow peas, red pepper and carrot. Sprinkle with remaining cheese. Top with green onions and peanuts. 1 1/2 tablespoons thai green curry paste
1 (13 1/2 ounce) can unsweetened coconut milk
2 tablespoons Thai fish sauce
2 tablespoons packed dark brown sugar
1 1/2 teaspoons fresh lime juice
1 boneless skinless chicken breast, cut crosswise into thin strips (14 oz.)
1/3 cup coarsely chopped fresh basil leaf
1/4 cup diced canned bamboo shoot
22 ounces california-style pizza dough (Tony's Pizza Dough)
unbleached bread flour, for dusting
2 cups coarsely shredded mozzarella cheese
1/2 red bell pepper, julienned
1/3 cup grated carrot
3 basil leaves, cut crosswise into thin strips, for garnish

Steps:

  • Position an oven rack on the second-lowest level in the oven; place a baking stone on the rack.
  • Position another rack in the upper third of the oven; preheat oven to 500°.
  • Prepare toppings: in a saucepan, warm the oil over low heat; stir in the curry paste.
  • Add in the coconut milk, fish sauce, brown sugar, and lime juice.
  • Increase heat to medium; bring to a simmer.
  • Add in the chicken, chopped basil, and bamboo shoots; simmer until chicken is cooked through, about 10 minutes.
  • Using a slotted spoon, drain the chicken and bamboo shoots and transfer to a plate to cool.
  • Increase heat to medium-high; boil the sauce until it is reduced to about 2/3 cup; set aside to cool.
  • Coat a 14-inch pizza screen or perforated pizza pan with cooking spray.
  • Place dough on a lightly floured work surface; lightly dust the dough with flour.
  • Using a rolling pin, roll the dough into a 10-inch round without rolling over the edges.
  • Lift dough and check to make sure the dough isn't sticking to the work surface.
  • Shake excess flour from the dough; lay dough on prepared pan and gently stretch dough into a 14-inch round.
  • Top the pizza: spread the reduced sauce over the dough, leaving a 1-inch border.
  • Drain and discard any juice from the chicken and bamboo shoots; arrange them in a single layer over the sauce; sprinkle mozzarella evenly over the top.
  • Place the pizza in the oven on the upper rack; bake 10 minutes, until the crust is crisp and golden brown.
  • Using a pizza peel, lift the pizza off the pan and place the crust directly on the baking stone (remove pizza pan from oven).
  • Bake about 3 minutes, until the bottom of the crust is golden brown.
  • Using the peel, remove the pizza from the oven and transfer to a cutting board.
  • Scatter bell pepper, carrot, and basil ribbons over the pizza; slice pizza into wedges and serve immediately.

3 pounds boneless skinless chicken thighs
3/4 cup sugar
3/4 cup reduced-sodium soy sauce
1/3 cup cider vinegar
1 garlic clove, minced
3/4 teaspoon ground ginger
1/4 teaspoon pepper
1 cup Thai peanut sauce
2 prebaked 12-inch pizza crusts
2 cups coleslaw mix
2 cups shredded part-skim mozzarella cheese
4 green onions, thinly sliced
1/2 cup chopped salted peanuts
1/4 cup minced fresh cilantro

Steps:

  • Place chicken in a 4- or 5-qt. slow cooker. In a small bowl, mix sugar, soy sauce, vinegar, garlic, ginger and pepper; pour over chicken. Cook, covered, on low 4-5 hours or until chicken is tender., Preheat oven to 450°. Remove chicken from slow cooker; discard cooking juices. Shred chicken with 2 forks; transfer to large bowl. 1 tablespoon rice wine vinegar

2 cloves garlic, finely chopped
1 1/2 cups shredded deli rotisserie chicken breast
3/4 cup red bell pepper, cut into thin bite-size strips (2x1/4x1/4 inch)

1 1/2 teaspoons toasted sesame oil
1 can (11 oz) refrigerated Pillsbury™ Thin Crust Pizza Crust
1 cup part-skim shredded mozzarella cheese (4 oz)

Steps:

  • Heat oven to 400°F. Spray dark 15x10x1-inch pan with cooking spray.

  • Unroll dough; place in pan. Starting at center, press out dough to edges of pan. Bake about 7 minutes or until edges of crust just begin to turn golden brown.
