2 pounds ground chicken
1 cup dry bread crumbs
4 green onions, sliced
1 tablespoon ground coriander seed
1 cup chopped fresh cilantro
ΒΌ cup sweet chili sauce
2 tablespoons fresh lemon juice
oil for frying

Steps:

  • In a large bowl, mix together the chicken and bread crumbs. Season with green onion, ground coriander, cilantro, chili sauce and lemon juice; mix well.
  • Using damp hands, form mixture into evenly shaped balls that are either small enough to eat with your fingers, or large enough to use as burgers.
  • Heat oil in a large skillet over medium heat. Fry the chicken balls in batches until well browned all over.

1 egg, lightly beaten
450 g ground chicken
1 cup dried breadcrumbs
2 teaspoons ginger, minced
1 teaspoon lemongrass, minced
3 tablespoons fresh coriander, chopped
1/3 cup Thai fish sauce
1 tablespoon lime juice
1/2 teaspoon garlic, minced
2 hot red chili peppers, sliced
1 teaspoon sugar

Steps:

  • Place a steamer or colander coated with cooking spray over a pan of boiling water and cover with the lid or firmly sealed with foil.
  • In a large bowl, combing the egg, chicken mince, breadcrumbs, ginger, lemongrass and coriander.
  • Mix well using your hands.
  • Form spoonfuls of the mixture into 24 balls.
  • Place in the steamer, cover and cook for 10 mins or until cooked though.
  • While chicken balls are cooking, combine the fish sauce, lime juice, garlic, chili and sugar.
  • Place in small bowls for dipping.
  • Remove the balls from the steamer and serve accompanied by the dipping sauce.
  • Enjoy.

1 kg chicken mince
1 cup (90g) fresh breadcrumbs
4 spring onions, sliced
1 tablespoon ground coriander
1 cup (50g) chopped fresh coriander
3 tablespoons sweet chilli sauce
1-2 tablespoons lemon juice
2 tablespoons oil

Steps:

  • 1) Pre heat oven to 200c 2) Mix the mince and breadcrumbs in a large bowl 3) Add the spring onions, ground coriander, fresh coriander chilli sauce and lemon juice and mix well 4) Using damp hands, form the mixture into evenly shaped balls that are either small enough to eat with your fingers or large enough to use as burgers 5) Heat the oil in a large non-stick frying pan and cook the chicken balls over high heat until browned all over 6) Drain well on paper towels and then place them on a baking tray and bake until cooked through (small chicken balls will take ~5 minutes to cook and larger ones will take 10-15 minutes)

I got this recipe from a cooking show - they were demonstrating the oven I think!! Very popular at parties!!

500 g minced chicken, lean
1/2 cup fresh breadcrumb (packet are okay)
2 tablespoons sweet chili sauce
1/2 cup fresh coriander, chopped
4 spring onions, chopped finely

Steps:

  • Combine all the ingredients in a bowl and mix well.
  • Roll into balls.
  • Bake in the oven for 10-15 minutes- basically until they are cooked though and look cooked!
  • I line the tray with baking paper.
  • Serve with extra sweet chilli sauce for dipping.
  • **I often add more breadcrumbs/coriander and chilli sauce-- just judge how wet/dry the mixture is.
