CLASSIC THAI BEEF SALAD



Classic Thai Beef Salad image

Classic Thai beef salad recipe is made with grilled beef steak, cucumber, tomato and fresh mint and cilantro herbs. Perfect for low-carb and gluten-free diet.

3/4 lb beef tenderloin, rib-eye, sirloin, or striploin (room temperature)
1 tbsp soy sauce
dashes pepper
2 small cucumber (seeded and sliced)
4 oz cherry tomato (cut in half)
1 shallot (sliced)
1/4 cup mint (loosely packed and torn)
1/4 cup cilantro (loosely packed and torn)
1 1/2 tbsp fish sauce
1 tbsp palm sugar (or light brown sugar)
2 tbsp fresh lime juice
1 fresh red chili (finely minced)

Steps:

  • Season your beef steak with soy sauce and pepper. Let it sit for 15 minutes.
  • Grill your steak over a very hot grill to get the grill marks. Cook to your desired done-ness. Let the steak rest for 5 minutes, then slice thinly across the grain.
  • For the salad dressing, mix together the fish sauce, sugar, lime juice and chili in a small bowl. Taste and adjust sweetness, saltiness and tartness according to your taste.
  • In a large mixing bowl, combine beef, cucumber, tomato, shallot, and herbs. Drizzle about 3 tbsp of dressing and toss together. Taste and add more dressing if needed.

8 ounces beef tenderloin or sirloin
4 cups torn Boston or romaine lettuce, mesclun or any salad greens mixture (trimmed, washed and dried)
1 cup torn fresh mint leaves (trimmed, washed and dried)
1/4 cup minced red onion
1 medium cucumber, peeled, cut in half lengthwise, seeded and diced
Juice of 2 limes
1 tablespoon fish sauce (nam pla, available at Asian markets) or soy sauce
1/8 teaspoon cayenne, or to taste
1/2 teaspoon sugar

Steps:

  • Start a charcoal or wood fire or heat a gas grill or broiler. Rack should be about 4 inches from heat source. Grill or broil beef until medium rare, 5 to 10 minutes. Set aside to cool.
  • Toss greens with mint, onion and cucumber. Combine all remaining ingredients with 1 tablespoon water -- mixture will be thin -- and toss greens with this dressing. Remove greens to a platter, reserving dressing remaining at bottom of bowl.
  • Slice cooled beef thinly, reserving its juice. Combine juice with leftover dressing. Lay slices of beef over salad, drizzle dressing all over, and serve.

1 tablespoon vegetable oil
3 drops sesame oil, or to taste
½ cup diced red bell pepper
¼ cup diced onion
1 finely chopped green onion (white and light green parts)
½ teaspoon garlic powder
½ pound cooked and crumbled ground beef
⅓ cup diced fresh tomato
2 tablespoons fish sauce
2 teaspoons soy sauce
2 cups cooked jasmine rice
salt and ground black pepper to taste
2 wedges lime
1 egg, beaten

Steps:

  • Warm vegetable oil and sesame oil in a wok or large skillet. Add bell pepper, onion, and green onion; cook for 2 minutes. Add ground beef, sprinkle garlic powder over mixture, and cook for 1 minute longer.
  • Stir in diced tomato, fish sauce, and soy sauce; saute for 2 minutes. Add rice, mix until combined, and cook until heated through, 7 to 10 minutes. Season with salt and pepper and squeeze lime wedged over top.
  • Pour beaten egg into a separate, small pan and let cook for 30 seconds. Lift the edges of the omelet so that any uncooked egg runs under the cooked edges and comes into contact with the hot skillet. Shake and tilt the skillet to move the uncooked egg. Repeat until the top is set, about 4 minutes.
  • Divide rice into two portions and serve 1/2 of the omelet over each serving.

3 tablespoons vegetable or canola oil
4 cloves garlic, minced
3 Thai chiles, such as prik kee noo, or 3 serrano chiles, stemmed and thinly sliced* (See Cook's Note)
1 pound flank steak, very thinly sliced
3 shallots, thinly sliced
1 red bell pepper, stemmed, cored, seeded and cut into 1/8-inch thick slices
1/4 cup fish sauce*
2 tablespoons sweet soy sauce*
2 tablespoons black soy sauce*
1 tablespoon chili paste in soy bean oil*
1 1/2 cups chopped fresh Thai basil leaves*
1 cup whole fresh mint leaves
Serving suggestion: sticky or steamed white rice

Steps:

  • In a large skillet, heat the oil over medium-high heat. Add the garlic and chiles and cook until aromatic, about 30 seconds. Add the steak and cook, stirring frequently, for 2 minutes. Add the shallots and bell pepper and cook for 1 minute. Add the fish sauce, sweet soy sauce, black soy sauce and chili paste. Bring the mixture to a low simmer and cook, stirring frequently until the meat is cooked through and the vegetables are tender, about 3 minutes. Remove the skillet from the heat and stir in the basil and mint until wilted. Transfer to a serving dish and serve over steamed white rice.

THAI GROUND-PORK SALAD WITH MINT AND CILANTRO



Thai Ground-Pork Salad with Mint and Cilantro image

1 bunch fresh cilantro with roots
1 bunch fresh mint
1/2 small head white or green cabbage (about 1 pound)
2 small shallots
10 ounces lean ground pork
3 to 4 tablespoons fresh lime juice
2 tablespoons bread crumbs
1 to 2 tablespoons Asian fish sauce (preferably naam pla)
1/8 teaspoon cayenne

Steps:

  • Cut off and reserve roots from cilantro for Broiled Red Snapper with Tamarind Sauce . Chop enough cilantro and mint leaves to measure 2 tablespoons each. Discard tough stems from remaining cilantro and mint and arrange sprigs on a platter. Cut cabbage lengthwise into 4 wedges and cut out core. Arrange wedges on platter. Thinly slice shallots lengthwise.
  • In a small saucepan with a fork stir together pork and 2 tablespoons lime juice and cover with cold salted water. Bring pork to a simmer, stirring with fork to break up meat, and gently simmer until just cooked through, 1 to 2 minutes. In a sieve drain pork well and in a bowl toss with shallots, chopped herbs, bread crumbs, fish sauce, cayenne, and remaining lime juice to taste.
  • Transfer pork salad to a serving bowl and put on platter. Have guests serve themselves: Arrange sprigs of cilantro and mint on pieces of cabbage and spoon some pork salad on top. Close cabbage around mixture to eat.

I found this recipe on the back of a packet of 90 second microwave rice. I love the balance of flavours, although I found that sometimes the fish sauce can be overpowering and I have reduced the amount to 1tbs. Another time it was fine, so it may be best to adjust to your taste.

250 g cooked rice
1 tablespoon vegetable oil
240 g beef (rump steak)
1/2 medium cucumber, cut in half and sliced
1/2 red onion, sliced
10 cherry tomatoes, cut in halves (approx 1/2 a punnet)
1/2 bunch of fresh mint, roughly chopped
1 1/2 tablespoons fish sauce
1 tablespoon soy sauce
3 teaspoons lime juice
1 tablespoon brown sugar
1/2 red chile, seeded and diced

Steps:

  • Heat oil in a frypan and cook beef over a medium high heat until cooked to your liking. Remove from the pan and set aside to cool.
  • Mix all dressing ingedients together, stirring to dissolve the sugar.
  • In a bowl, combine all other ingredients. Slice the beef thinly and add to the salad along with the cooked rice.
