THAI BASIL FRIED RICE



Thai Basil Fried Rice image

Thai basil fried rice is a delicious way to use this fragrant herb! Thai basil infuses a delicate anise flavor into this satisfying dish.

Number Of Ingredients 13

1/2 yellow or white onion
2 large garlic cloves
1 tablespoon minced ginger (about 1 inch nub)
2 large carrots
3 tablespoons sesame oil, divided
4 eggs
½ cup frozen peas
4 cups cooked jasmine rice, at least 1 day old or cooled using the shortcut below*
½ teaspoon kosher salt
2 tablespoons soy sauce or tamari
1 teaspoon fish sauce
⅓ cup Thai basil leaves
Optional: 1 pound medium small shrimp (size 51 to 60), shelled and deveined, frozen or fresh**

Steps:

  • Mince the onion. Mince the garlic. Mince the ginger. Peel the carrots, then dice them.
  • In a large skillet or wok, heat 2 tablespoons of the sesame oil medium high. Sauté the carrots and onion for 2 minutes. Add the garlic and ginger and sauté for 1 minute. Stir in the rice, peas and salt for 1 minute.
  • Push the rice to the side. Add 1 tablespoon more oil. Add the eggs and pinch of salt, and scramble them in for 1 to 2 minutes until cooked through.
  • Add the soy sauce and fish sauce, if using. Taste and add additional soy sauce if necessary. Heat for a minute or two, stirring, until all rice is coated. Add the Thai basil and turn off the heat, stirring until it wilts. Serve hot.

5 Thai basil leaves
4 inch-wide cubes pineapple
1 tablespoon simple syrup
2 ounces blanco tequila
1 1/2 tablespoons lime juice
Soda or seltzer

Steps:

  • In a cocktail shaker, crush 4 basil leaves and the pineapple to a pulp with a muddler or wooden spoon. Fill shaker about halfway with ice and add simple syrup, tequila and lime juice. Shake well and strain into a cocktail glass. Top with a splash of soda and float last basil leaf on surface.

½ onion, sliced
3 cloves garlic, sliced
1 large skinless, boneless chicken breast, cut into 1-inch pieces
¼ cup oyster sauce
3 tablespoons soy sauce
1 pinch white sugar
2 small chile peppers, sliced
⅓ cup water
½ cup fresh basil leaves

Steps:

  • Heat oil in a wok or large skillet over medium heat. Add onion and garlic; cook and stir until fragrant, about 30 seconds. Add chicken; cook and stir until no longer pink, about 5 minutes. Stir in oyster sauce, soy sauce, and sugar. Stir in chile peppers. Pour in water. Cook until slightly thickened, 3 to 5 minutes. Stir in basil before serving.

I've been searching for the perfect summer basil martini. I think I found it on the "B*tches on a Budget" website! Slight variation using agave nectar instead of simple syrup. I had to substitute ounces for "jiggers" as called for in the original recipe -- original verbage included in directions.

2 ounces vodka or 2 ounces gin
1 ounce agave nectar or 1 ounce simple syrup
4 sweet basil, fresh
2 mint leaves, fresh
juice of one lime

Steps:

  • Muddle the basil, simple syrup and lime juice together. Add gin or vodka. Combine in a cocktail shaker with loads of ice. Shake until there are shards of ice and the mix turns frothy. Strain.
  • Original recipe reads: 2 1/2 jiggers of vodka or gin. 1 jigger simple syrup. 1 jigger fresh squeezed lime juice. 4 fresh sweet basil leaves. 1 fresh spearmint leaf (or to taste).

1 ounce lemon juice
1 ounce Sichuan peppercorn simple syrup (See Cook's Note)

  • Muddle basil at bottom of cocktail shaker. Add remaining ingredients, shake well with ice and strain into chilled martini glass or coupe. Garnish with Thai basil leaf.
