This make fluffy basmati every time- easy and comes out perfect. I like the Texmati brand of basmati-its available in many supermarkets and no rinsing is required. You can double, triple or quadruple this for more servings.

1 cup basmati rice
1 3/4 cups cold water

Steps:

  • If not using the Texmati brand, then rinse rice, in colander under cold running water, until the water runs clear.
  • In non-stick pot, place rice and water together.
  • Let soak at least 30 minutes.
  • Bring to a boil and then turn heat to lowest level.
  • Cover pot with tight-fitting foil.
  • Cook for 30 minutes.
  • Turn off heat and let set for at least 20 minutes.
  • Take off foil and enjoy.

1 cup PC Royal Blend Texmati Premium Rice Mix (or otherwise)
1 tsp concentrated chicken stock
2 tbsp chopped fresh parsley
salt and pepper
l/2 red pepper (roasted and peeled - or not) Chopped
3 green onions, sliced
1/3 olive oil
1/4 balsamic vinegar
l/2 cup roasted whole hazelnuts

Steps:

  • In medium size saucepan, combine rice, 1 1/2 cups cold water, concentrated chicken stock, parsley and 1 tsp.l salt. Bring to boil and stir once, reduce heat, cover and simmer for 15 minutes. Let cool. Combine rice with red pepper, green onions, olive oil, vinegar, nuts and salt and pepper to taste. Serve chilled or at room temperature.
