We love grilled cheese sandwiches and tomato soup in our house and this is how we make our grilled cheese sandwiches. This recipe is per sandwich it turns out really crispy on the outside but creamy on the inside.

2 slices Texas toast thick bread
2 cheese slices
1 tablespoon mayonnaise
1 tablespoon butter (or margarine)

Steps:

  • Toast bread in toaster.
  • Preheat skillet over medium heat.
  • Spread mayonnaise on each slice of bread.
  • Place both slices of cheese between the two slices of bread (on the mayonnaise side).
  • Melt butter in the skillet.
  • Place the sandwich in the skillet with the butter.
  • Use a spatula to turn sandwich from side to side until cheese is melted.
  • When the cheese is melted and the outside is crispy and browned to your taste, remove the sandwich and cut into your favorite shape (diagonal, or half, or into four squares).
  • Serve on a plate with your favorite side, chips, tomato soup, BOTH!

2 ripe avocados
1/2 small onion, minced
1 garlic clove, minced
1 small jalapeno, stems and seeds removed, minced
2 tablespoons cilantro leaves, finely chopped
1 tablespoon fresh lime juice
1/2 teaspoon coarse salt
1 dash of freshly grated black pepper
1 roma tomato, chopped
4 slices crusty white bread
4 slices cheddar cheese
butter, for buttering bread

Steps:

  • To make the guacamole : Cut avocados in half. Remove seed. Scoop out avacado from the peel, put in a large bowl. Using a fork, mash the avocado. Add the onion, garlic, jalapeño, cilantro, lime juice, salt and pepper. Stir until well combined. Add the chopped tomato and stir.
  • Heat a pan or griddle to medium-high heat. Spread desired amount of guacamole on both slices of bread then top with cheese. Butter outer slices of bread and grill on one side for about 2 minutes or until golden and crispy. Flip the sandwich and grill until golden brown. Make the other sandwich the same way and serve warm.

Mexican Grilled Cheese Sandwich image

A lovely, slightly spicy, change from traditional grilled cheese sandwiches. The roasted jalapenos and taco seasoning in the butter take this over the top. Guaranteed comfort food! I roasted the jalapenos over the gas burner for several minutes until black, then cooled in a closed paper bag for about 15 minutes before scraping off the blackened skin. Then I minced them and froze the surplus for occasions just like this one! You could even dip your sandwich into a nice salsa as well. OH GOD NO! SAY IT ISN'T SO! BE STILL MY BLOOD PRESSURE!! (*ahem*.... sorry) Anyway, this went so incredibly well with Recipe #107281... I almost couldn't get it all in my mouth fast enough. :D Hope you enjoy it!

4 slices French bread
2 slices swiss cheese
1/2 cup shredded cheddar cheese
2 teaspoons roasted jalapenos, minced
1 1/2 tablespoons butter, softened
1 teaspoon taco seasoning

Steps:

  • In a small bowl, combine taco seasoning with the butter until fully mixed.
  • Thinly coat 1 side of each bread slice with butter mixture.
  • Heat skillet to medium. When hot, lay down 2 of the four slices of bread, buttered side down.
  • On each slice in the skillet, layer 1 slice of Swiss cheese, 1 teaspoon of the minced roasted jalapenos and 1/2 of the cheddar. Top each sandwich with the remaining bread slices, buttered side UP. (I actually put a little bit more of the jalapeno pieces into the butter mixture before spreading it.).
  • Cover skillet and turn pan to medium low. Cook for 5 minutes.
  • Uncover and flip when sandwiches have reached desired brownness. Raise heat to medium or medium-high and continue cooking until other side is to your preferred brownness.
  • Goes perfectly with a good bowl of soup!
