TEXAS-STYLE PEACH COBBLER



Texas-Style Peach Cobbler image

Fresh peaches sweetened with sugar and topped with a creamy buttery cake-like topping. A Texas favorite dessert!

12 Tablespoons Butter ((divided))
1 1/2 cups Sugar ((divided))
8 medium Fresh Ripe Peaches ((peeled and sliced))
1 teaspoon Fresh Lemon Zest
1 1/2 cups Flour
2 1/2 teaspoons Baking Powder
1/2 teaspoon Salt
1 1/2 cups Buttermilk ((or milk))

Steps:

  • Preheat oven to 350 degrees. Place 4 Tablespoons butter in a 9 x 13 baking dish. Place in the oven and let the butter melt, watching carefully. Remove from oven.
  • In a medium-size bowl, stir together 1/4 cup of sugar, fresh sliced peaches, and lemon zest. Set aside.
  • In a large bowl, stir together flour, baking powder, remaining 1 1/4 cup of sugar, and salt. In a microwave-safe bowl, melt the remaining 8 Tablespoons of butter. Whisk in melted butter (let cool for several minutes before adding) and buttermilk. Stir until smooth.
  • Pour batter into the pan with the melted butter. Sprinkle the peach mixture evenly over batter. Generously sprinkle with sugar. Bake until golden brown and edges are crisp -- about 42-48 minutes.
  • Serve with vanilla ice cream or homemade whipped cream.

1 cup self-rising flour
1 cup white sugar
1 cup milk
1 cup butter, melted
1 (28 ounce) can sliced cling peaches in heavy syrup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix self-rising flour and sugar in a bowl. Stir milk into the flour mixture.
  • Pour melted butter in an oven-safe bowl. Pour flour mixture over melted butter. Layer peaches in heavy syrup atop flour mixture. Do not stir!
  • Bake in preheated oven until peaches are bubbly and crust is lightly browned, 50 to 60 minutes.

8 fresh peaches - peeled, pitted and sliced into thin wedges
¼ cup white sugar
¼ cup brown sugar
¼ teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
1 teaspoon fresh lemon juice
2 teaspoons cornstarch
1 cup all-purpose flour
¼ cup white sugar
¼ cup brown sugar
1 teaspoon baking powder
½ teaspoon salt
6 tablespoons unsalted butter, chilled and cut into small pieces
¼ cup boiling water
3 tablespoons white sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly, and pour into a 2 quart baking dish. Bake in preheated oven for 10 minutes.
  • Meanwhile, in a large bowl, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt. Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal. Stir in water until just combined.
  • Remove peaches from oven, and drop spoonfuls of topping over them. Sprinkle entire cobbler with the sugar and cinnamon mixture. Bake until topping is golden, about 30 minutes.

4 cups peaches (ripe, sliced and peeled)
2 tablespoons sugar
1 teaspoon lemon juice
1/4 teaspoon vanilla
6 tablespoons butter
1 1/4 cups flour (all purpose)
3/4 cup sugar
2 tablespoons baking powder
1/8 teaspoon salt
1 dash cinnamon
1 cup 1% low-fat milk
1/2 teaspoon vanilla
1 tablespoon turbinado sugar (you can find this at Henry's, Sprouts, or Trader Joes)

Steps:

  • Preheat over to 350.
  • To prepare filling, combine peaches, sugar, lemon juice & vanilla. Set aside.
  • To prepare batter, place butter in an 8 inch square baking dish. Place dish in over 5 minutes or until butter melts. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 4 ingredients (through dash of cinnamon) in a medium bowl. Combine milk and 1/2 tsp vanilla; add milk mixture to flour mixture, stirring just until moist. Spoon batter over butter, spreading evenly (do not stir).
  • Spoon peach mixture over batter, gently pressing peaches into batter. Bake at 350 for 40 minutes. Sprinkle with turbinado sugar, and bake for an additional 10 minutes or until crust is golden.
