1 tablespoon butter
1 small onion, chopped
2 garlic cloves, minced
1 cup ketchup
1/4 cup packed brown sugar
1/4 cup lemon juice
2 tablespoons apple cider vinegar
2 tablespoons tomato paste
1 tablespoon yellow mustard
1 tablespoon Worcestershire sauce
2 teaspoons chili powder

Steps:

  • In a large saucepan, heat butter over medium heat. Add onion; cook and stir 2-3 minutes or until tender. Add garlic; cook 1 minute longer. Stir in remaining ingredients; bring to a boil. Reduce heat; simmer, uncovered, 15-20 minutes to allow flavors to blend.

4 slices bacon, chopped
1/2 cup finely diced onions
2 cloves garlic, minced
One 6-ounce can tomato paste
1 cup beef stock
1/2 cup loosely packed brown sugar
1/4 cup apple cider vinegar
1 teaspoon ground cumin
1/2 to 1 teaspoon cayenne pepper
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • In a medium pot, cook the bacon over medium-low heat until crispy, 8 to 10 minutes. Remove to a plate lined with a paper towel to drain, then eat the bacon as a snack.
  • Add the onions to the pot with the bacon grease and cook over medium-low heat until the onions start to caramelize, 6 to 8 minutes. Add the garlic and cook another 2 minutes. Add the tomato paste and cook, stirring occasionally, another 3 minutes. Whisk in the stock, sugar, vinegar, cumin, cayenne, salt and pepper and bring to a simmer. Cook until thickened, 15 to 20 minutes.
  • Let cool to room temperature before using. This sauce is great on brisket or beef ribs.

vegetable oil
12 ounces beer
1/2 cup apple cider vinegar
1/2 cup water
1/4 cup canola oil
1 cup diced onion
2 garlic cloves, minced
1 chipotle pepper
1 tablespoon Worcestershire sauce
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
44 ounces ketchup
1/2 cup molasses
1/2 cup honey
5 whole chipotle chili
1 tablespoon Worcestershire sauce
1/2 cup butter
1/2 cup canola oil
1/2 cup apple cider vinegar
12 ounces beer
1 tablespoon onion flakes
1 teaspoon garlic, granular
1 tablespoon soy sauce
1/2 teaspoon fresh cracked pepper

Steps:

  • RUB:.
  • Mix rub the ingredients together in a mortar and pestle grinding till nicely combined but leaving some nice pieces of pepper and salt.
  • Lightly oil the meat with vegetable oil.
  • Spread the rub generously on beef brisket. Let it marinate on the meet overnight. Bring brisket to room temperature for 30 minutes before putting in the smoker.
  • Beer Mop Sauce:.
  • Mix ingredients in a pot and simmer for 20 minutes.
  • Fire up the smoker:.
  • Start up the smoker with your favorite wood.
  • Add water in the bottom which helps keep meat moist.
  • Place brisket in a 225 degree prepared smoker fat side down. Mop a nice amount of the mop sauce on and smoke for 1 hour.
  • Flip the brisket carefully not piercing the meat. Mop with more sauce.
  • After that, turn the brisket about every two hours and mop it every time you turn it." Keeping it moist.
  • It`ll be done when you give it a taste test. The outside of the meat will look charred. Don't worry. It's supposed to look that way.
  • There should be a pretty smoke ring. This could take anywhere from 6-12 hours. Repeat the mopping and flipping until the brisket reaches 180 degrees for slicing or 195 degrees for pulling and remove from smoker.
  • It which point you can let rest before cooking or wrap it tightly in a foil pan with the heat off for 3-4 hours as it father tenderizes.
  • BBQ Sauce:.
  • Mix all ingredients in a pot and simmer till nice a thick about 1 hour. Can be made the day before.
  • Slice the brisket thick and against the grain if it is fairly tender or if it is a little tough slice it against the grain only in thinner slices. Serve with BBQ Sauce or make pulled beef mixed with the BBQ sauce.

1 tsp smoked paprika

2 tsp liquid smoke (optional, we used Stubb's Hickory Liquid Smoke, available from Waitrose)
1 garlic clove , crushed
15g butter

Steps:

  • Combine the ingredients in a saucepan, then season. Bring to the boil and bubble for 3-4 mins until the sugar and salt have dissolved and the sauce is glossy. Remove from the heat, transfer to a jar, and leave to cool. Will keep in the fridge for up to 2 weeks.

There have been so many arguments started over whose is best- but we all know Mama's is best! This makes a bucket load so use the tool to change the number of servings or freeze, can or give away the rest. "Samantha in UK states that this is not safe to can as it has butter in it. I have never had a problem but please be aware of that info. If you are concerned please try substituting with ButterBuds / Molly McButter type butter substitute or do not can. Freezing is another option as well " If you do decide to can this use a Boiling Water Bath, process half-pints and pints for 20 minutes at 0-1000 feet in elevation, 25 minutes for more elevation.

One 3- to 3 1/2-pound beef brisket
2 cloves garlic, smashed and peeled
1 stick celery, coarsely chopped
1 medium onion, coarsely chopped
One 14.5-ounce can crushed tomatoes
2 tablespoons apple cider vinegar
2 tablespoons maple syrup
1 tablespoon Dijon mustard
1 tablespoon smoked paprika
2 teaspoons chili powder
1/2 teaspoon kosher salt

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 325 degrees F.
  • For the rub: In small bowl, combine the sugar, chili powder, smoked paprika, salt and pepper.
  • Pour the beef broth into a 9- by 13-inch baking dish. Using a paring knife, score the surface of the meat all over. Massage the rub into the meat. Cover the dish tightly with foil and roast until very tender, 3 1/2 to 4 hours, adding water 1/2 cup at a time if the roasting juices start to dry up.
  • For the sauce: In a food processor, combine the garlic, celery, onion, tomato sauce, vinegar, maple syrup, mustard, smoked paprika, chili powder and salt. Blend for 1 to 2 minutes until smooth, scraping the side of the food processor bowl as needed with a spatula. Transfer the sauce to a medium saucepan. Bring the mixture to a simmer over medium heat. Cook, stirring occasionally, until thick, about 30 minutes.
  • Brush 1/3 cup of the sauce over the surface of the brisket.
  • Slice the brisket into 3/4-inch pieces and arrange on a serving platter. Serve the extra sauce alongside.

1/2 Tbsp black pepper

1 Tbsp lemon juice, fresh
1 1/2 Tbsp worcestershire sauce

This is a sweet and tangy BBQ sauce recipe perfect for brisket or ribs or anything. I have tried quite a few and this is by far the best I've made. Hope you like it. Original recipe found in Celebrating Barbecue by Dotty Griffith. For better flavor you can sub 1/4 cup pan drippings from bbq for the butter.
