A spicy twist on the cheesy hash brown casserole that we all love. This has Mexican Velveeta, green chilies and a little cayenne pepper for bite!

Number Of Ingredients 10

1 (30 ounce) package frozen shredded hash browns, thawed slightly
1 (10 3/4 ounce) can cream of chicken soup
1 (8 ounce) carton sour cream
2 cups cubed mild Velveeta Mexican cheese
1/2 cup finely diced onion
1 (3 ounce) package cream cheese, cubed
1/4 teaspoon cayenne pepper
1 (4 1/2 ounce) can diced green chilies
1 1/2 cups corn flake crumbs
3 tablespoons melted butter

Steps:

  • Mix all ingredients except topping, in a large bowl.
  • Spread evenly in a greased 9x13 baking dish.
  • Mix melted butter and corn flake crumbs in small bowl.
  • Sprinkle over potatoes.
  • Cover with tin foil and bake for 20 minutes at 350°F.
  • Uncover and continue to bake for 30 to 35 minutes more, until heated through.

Use an air fryer to make this crispy, tasty potato hash featuring bell peppers and jalapenos with Tex-Mex seasoning.

1 ½ pounds potatoes, peeled and cut into 1-inch cubes
1 tablespoon olive oil
1 red bell pepper, seeded and cut into 1-inch pieces
1 small onion, cut into 1-inch pieces
1 jalapeno, seeded and cut into 1-inch rings
½ teaspoon olive oil
½ teaspoon taco seasoning mix
½ teaspoon ground cumin
1 pinch salt and ground black pepper to taste

Steps:

  • Soak potatoes in cool water for 20 minutes.
  • Preheat the air fryer to 320 degrees F (160 degrees C). Drain the potatoes, dry them with a clean towel, and transfer to a large bowl. Drizzle 1 tablespoon olive oil over the potatoes and toss to coat. Add them to the preheated air fryer basket. Set the timer for 18 minutes.
  • Put bell pepper, onion, and jalapeno in the bowl previously used for the potatoes. Sprinkle in 1/2 teaspoon olive oil, taco seasoning, ground cumin, salt, and pepper. Toss to coat.
  • Transfer potatoes from the air fryer to the bowl with the vegetable mixture. Return the empty basket to the air fryer and raise the temperature to 356 degrees F (180 degrees C).
  • Quickly toss the contents of the bowl to mix the potatoes evenly with the vegetables and seasoning. Transfer mixture into the basket. Cook for 6 minutes, shake the basket, and continue cooking until potatoes are browned and crispy, about 5 minutes more. Serve immediately.

1 lb chorizo sausage (see Chorizo)
1/2 cup diced onion
1 clove garlic, minced
4 cups frozen hash brown potatoes, cubed or diced
1 (4 ounce) can diced green chilies, your heat preference
1 medium tomatoes, diced
salsa
4 -8 eggs, cooked to your preference (poached, sunnyside up, scrambled)
chopped cilantro
shredded cheddar cheese or monterey jack cheese

Steps:

  • In a large skilled cook the chorizo over medium heat until browned and done.
  • Drain reserving 3 T.
  • drippings, setting sausage aside.
  • Return drippings to the pan and over medium heat saute the onions and garlic for 4-5 minutes.
  • Add the chiles and stir well.
  • Add the potatoes, reduce heat to medium low and cook for 20 minutes, stirring often.
  • Add the tomatoes to heat through.
  • Spoon onto plates, top with eggs and offer salsa at the table.
  • Garnish with chopped cilantro and cheese if you wish.

1 tablespoon oil
3 cups frozen o'brien hash browns
1 cup salsa
2 teaspoons chili powder
4 ounces colby-monterey jack cheese, blend

Steps:

  • In skillet, brown beef.
  • Remove ffrom skillet and cover to keep warm.
  • Drain.
  • In same skillet, heat oil over medium heat until hot.
  • Add potatoes.
  • Cook and stir 8 to 10 minutes.
  • Stir in salsa, chili powder and ground beef.
  • Cook 5 to 8 minutes or until thoroughly heated, stirring occasionally.
  • Sprinkle with cheese.
  • Cover,cook 2 to 4 minutes.
