1 ½ cups uncooked instant brown rice
1 pound lean ground turkey
1 onion (chopped)
1 garlic clove
15 ounce pinto beans (undrained)
1 cup beef broth
8 ounce tomato sauce
10 ½ ounces diced tomatoes and green chiles
15 ounces corn (drained)
2 teaspoons chili powder
½ teaspoon salt
½ teaspoon cumin
ground pepper to taste
½ cup shredded Colby Jack cheese

Steps:

  • Cook rice according to package directions.
  • While the rice cooks, heat a large skillet over medium heat. Add in the ground turkey, onion, and garlic and cook until the turkey is no longer pink.
  • Stir in the rice, beans, beef broth, tomato sauce, tomatoes, corn, chili powder, salt, cumin, and ground pepper. Let cook over medium heat for 8-10 minutes to let the flavors really come together.
  • Top with shredded cheese and let cook for 2-3 more minutes or until cheese is melted.
  • Garnish with your favorite toppings - tomatoes, shredded lettuce, salsa, sour cream, etc.

1 pound lean ground turkey
2 medium green peppers, chopped
1 medium sweet red pepper, chopped
1 medium onion, chopped
2 medium carrots, halved lengthwise and sliced
2 garlic cloves, minced
1 tablespoon olive oil
2 cans (15 ounces each) black beans, rinsed and drained
1 jar (16 ounces) salsa
2 tablespoons chili powder
1 tablespoon ground cumin
24 taco shells
3 cups shredded lettuce
1-1/2 cups diced fresh tomatoes
1/2 cup minced fresh cilantro

Steps:

  • In a large nonstick skillet coated with cooking spray, cook turkey over medium heat until no longer pink; remove and set aside. In the same skillet, saute the peppers, onion, carrots and garlic in oil for 8-10 minutes or until vegetables are tender., Add the turkey, beans, salsa, chili powder and cumin; bring to a boil. Reduce heat; simmer, uncovered, for 10-15 minutes or until thickened. Fill each taco shell with 1/3 cup turkey mixture. Serve with lettuce, tomatoes and cilantro.

1 tablespoon olive oil
½ cup minced onion
3 cloves garlic, minced
2 teaspoons chili powder
½ teaspoon cumin
½ teaspoon oregano
4 cups water
1 (10.75 ounce) can condensed tomato soup
1 (28 ounce) can diced tomatoes
1 cup salsa
4 cups shredded cooked turkey
1 tablespoon dried parsley
3 chicken bouillon cubes
1 (14 ounce) can black beans, rinsed, drained
2 cups frozen corn
½ cup sour cream
¼ cup chopped fresh cilantro
6 cups corn tortilla chips
¾ cup chopped green onion
1 cup shredded Cheddar-Monterey Jack cheese blend
½ cup chopped fresh cilantro
½ cup sour cream

Steps:

  • Heat olive oil in a large saucepan over medium heat. Add minced onions and cook until onions begin to soften, about 4 minutes. Add garlic, chili powder, cumin and oregano and cook, stirring, for 1 minute.
  • Stir in water, tomato soup, diced tomatoes, salsa, shredded turkey, parsley and bouillon cubes. Bring to a boil, then reduce heat, and simmer 5 minutes or until bouillon cubes dissolve. Add black beans, corn, sour cream and cilantro. Simmer for 20 to 30 minutes.
  • Serve soup with crushed tortilla chips, chopped green onion, shredded cheese and additional cilantro and sour cream.
