1 (10 ounce) bag nacho cheese-flavored corn chips (such as Doritos®), crushed
1 tablespoon butter
1 small onion, finely chopped
1 (14.5 ounce) can diced tomatoes
1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can cream of mushroom soup
1 (4.5 ounce) can chopped green chiles
⅓ cup milk
2 tablespoons sour cream
1 teaspoon chili powder
1 teaspoon ground cumin
2 ½ cups chopped cooked chicken
1 (8 ounce) package shredded sharp Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Lightly grease a 9x13-inch baking dish. Spread corn chip crumbs over the bottom of the baking dish and press crumbs into place.
  • Melt butter in a large skillet over medium-high heat; cook and stir onion in melted butter until tender, 6 to 7 minutes.
  • Stir diced tomatoes, cream of chicken soup. cream of mushroom soup, green chiles, milk, sour cream, chili powder, and cumin in a large bowl. Add chicken and cooked onion; stir to combine. Pour mixture over corn chips and top with Cheddar cheese.
  • Bake in the preheated oven until bubbly and cheese is melted, 55 to 60 minutes. Let stand for 10 minutes before serving.

4 oz tortilla chips (broken into large pieces (2 cups))
1 cup corn (canned or frozen)
15 oz can black beans (drained and rinsed (can do pinto beans too))
3 cups cooked chicken breast (diced)
2 cups shredded Mexican-style cheese
3 cups your favorite salsa ((I like Frontera))
1 bunch scallions (sliced)
2 tbsp taco seasoning
sour cream (for garnish (optional))
avocado slices (for garnish (optional))
fresh chopped tomato (for garnish (optional))

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large bowl, combine the tortilla chips, corn, black beans, diced chicken, cheese, salsa, scallions, and taco seasoning. Stir it all together very well, being careful not to crush the tortilla chips too much. Taste the mixture and adjust seasoning if necessary (and keep in mind this will taste wetter than when it comes out of the oven).
  • Pour the entire mixture into an 8×12 or 9×13 casserole dish, and cover tightly with foil. Bake for 30 minutes, then serve with your favorite garnishes (like avocado slices, sour cream, fresh chopped tomatoes, scallions, etc). Enjoy!

A tasty twist on a classic casserole! This Tex-Mex chicken and rice casserole has got bold flavors and is incredibly easy to put together!

1 medium onion (diced)
1: 6.9 ounce box of chicken flavored rice & vermicelli
2 cups chicken broth
1 3/4 cups water
2 large boneless, skinless chicken breasts (cubed)
1: 15 ounce can of fire-roasted diced tomatoes
1: 4.5 ounce can of chopped green chiles
1 teaspoon ground cumin
2 teaspoons chili powder
1/4 teaspoon cayenne pepper
Mexican blend shredded cheese
Salt and pepper (to taste)

Steps:

  • Preheat oven to 425 degrees Fahrenheit. Set aside a 9x13" oven-safe casserole dish and lightly spray it with cooking spray.
  • In a large pot or skillet over medium-high heat, add cooking oil and once heated, add the onions. Cook until tender.
  • Pour in the box of rice and vermicelli, including the seasoning packet.
  • Stir for two minutes then pour in the chicken broth and water.
  • Bring to a boil then bring down to a simmer and cover for 20 minutes.
  • After the rice mixture has cooked for 20 minutes (note: not all the liquid will have cooked away, it finishes in the oven), add in the chicken. It's okay it doesn't cook all the way through as it finishes up in the oven.
  • Remove from heat and add diced tomatoes, green chiles, cumin, chili powder, cayenne, salt, and pepper. Stir together.
  • CAREFULLY pour mixture into prepared casserole dish.
  • Bake for 25 minutes, covered, then uncover the casserole and sprinkle cheese on top and let it melt.
  • After removing from oven, let sit for 10-15 minutes. The waiting time is crucial because the liquid will continue to absorb into the rice and the casserole will have a thicker consistency.

My family loves this quick and easy casserole! This dish is spicy, but you can cut the heat of this dish by using "mild" enchilada sauce.

1 lb ground beef
1 medium white onion, finely chopped
2 cloves garlic, minced
8 flour tortillas
1 (16 ounce) can ranch style beans
1 (12 ounce) can hot enchilada sauce
1 (10 ounce) can cream of chicken soup
1 cup shredded cheddar cheese
1 (16 ounce) can diced tomatoes
1 (4 ounce) can diced green chilies

Steps:

  • Brown ground beef with onions and garlic in a large skillet; drain.
  • Line a 9X13X2-inch baking dish with 4 torn flour tortillas.
  • Place ground beef mixture over tortillas.
  • Layer with beans, enchilada sauce, and cream of chicken soup over ground beef.
  • Next, top with shredded cheese, 4 more torn flour tortillas, tomatoes and green chilies.
  • Cover with foil and bake at 350°F for 45 minutes.
  • Uncover and top with a little extra cheese if desired; return to oven just long enough to melt the cheese.

1 lb extra lean ground beef (drained or rinsed!)
1/2 cup onion (chopped)
1/4 cup canned jalapeno slices, chopped
2 cups fresh tomatoes, chopped or 1 (15 ounce) can diced canned tomatoes
1 (15 ounce) can kernel corn (drained)
1 (15 ounce) can black beans (rinsed and drained)
1 (1 1/4 ounce) package taco seasoning mix
8 corn tortillas
3/4 cup nonfat sour cream
1/3 cup reduced-fat Mexican cheese blend, shredded
1/3 bunch fresh cilantro, chopped, to taste (or less (or more)

Steps:

  • Brown ground beef and chopped onions in large skillet; brown 10 to 12 minutes or until thoroughly cooked, stirring constantly. Drain well and rinse with warm water to remove all fat; return beef/onions to skillet.
  • Add corn, black beans, tomatoes, chilies/jalapenos and taco seasoning mix; mix well. Reduce heat; simmer 5 minutes.
  • Meanwhile spray 12x8-inch (2-quart) baking dish with nonstick cooking spray. Cut each tortilla in half; place 8 halves in bottom of sprayed baking dish, overlapping slightly.
  • Spoon half of beef mixture evenly over tortillas. Spoon sour cream over beef mixture; spread evenly. Top with remaining 8 tortilla halves and remaining beef mixture. (Cover tightly with foil & Freeze for later OR cook as directed below...).
