Number Of Ingredients 11

1/2 pound 225 g fresh Cheddar cheese, shredded (smoked, sharp or American cheddar)
1 tablespoon butter
3/4 cup green onions, (finely chopped)
2 large cloves garlic (minced)
3.5 oz (100 g) diced tomatoes, ((Roma, grape or cherry tomatoes))
1/2 teaspoon each ground cumin and onion powder
1/2 teaspoon cayenne pepper, ((add more to taste if desired))
1 tablespoon cornstarch (cornflour)
13 oz (375 g) evaporated milk, ((full fat))
4 oz 120 g fire roasted green chiles, (or jalapeños)
1/4 cup fresh cilantro, (finely chopped)

Steps:

  • Melt butter in a medium-sized pot over medium-heat. Sauté the green onions (white parts only) for 4 minutes, until soft. Then add the garlic and sauté until fragrant, about 30 seconds.
  • Add the tomatoes in with juices with the chiles, cumin, onion powder and cayenne pepper. Cook while stirring occasionally, for 2 minutes until soft and fragrant.
  • Mix cornstarch into the pot, then pour in the evaporated milk, stirring well to combine.
  • Bring to a boil, then add the cheese, mixing well. Cook, while stirring, until cheese just melts through the milk and transforms into a smooth sauce. Take off heat immediately.
  • Stir in cilantro, green onions (reserved green parts) and season with salt to taste if needed. Mix well.Serve warm.Tip: Queso thickens when cooled.

1/3 pound firm alpine-style cheese (such as gruyere)
1/3 pound fontina
1/3 pound gouda
2 tablespoons cornstarch
1 cup dry white wine (such as Sauvignon Blanc)
1 clove garlic (minced)
1 tablespoon fresh lemon juice
1 tablespoon brandy
1 teaspoon Dijon mustard
1/8 teaspoon nutmeg
Boiled baby new potatoes in their skins (quartered if large)
Lightly steamed broccoli florets
Lightly steamed cauliflower florets
Lightly steamed asparagus
Button mushrooms (wiped clean and stems removed)
Cherry tomatoes
Sliced firm apples (such as Granny Smith)
Cooked sliced hot sausage
Cubed French, sourdough, and/or pumpernickel bread

Steps:

  • Grate all of the cheeses. In a medium bowl, combine the cheeses with the cornstarch, tossing thoroughly to coat all pieces.
  • In a stove-safe fondue pot or large heavy saucepan, bring the wine, garlic, and lemon juice to a simmer over medium-low heat. Add the cheeses to the simmering liquid a little at a time, stirring well between each addition to ensure a smooth fondue. Once smooth, stir in the brandy, mustard, and nutmeg.
  • Arrange an assortment of bite-size dipping foods on a platter. If necessary, carefully pour the fondue into a fondue pot. Serve with fondue forks or wooden skewers. Dip and enjoy!

1 1/4 lbs gruyere or 1 1/4 lbs swiss cheese, grated
1 lb monterey jack cheese, grated
1/4 cup flour
2 garlic cloves, halved
2 1/2 cups white wine
3 tablespoons tequila
1/4 cup fresh cilantro, chopped
2 tablespoons jalapeno peppers, chopped (use the seeds too for an extra kick)
salt
pepper
crusty bread cubes (the restaurant I went to used an assortment of breads, I thought this is a great way to use leftover)
sausage, cooked and sliced (kielbasa or hot Italian)
vegetables, sliced in big chunks

Steps:

  • Place both cheese in a large bowl and add flour, toss.
  • Rub inside of fondue pot with garlic. Discard garlic.
  • Add wine and tequila to pot and warm over medium heat until tiny bubbles appear.
  • Add one handful of cheese mixture to wine mixture and stir constantly until cheese melts. ADJUST HEAT SO MIXTURE DOES NOT BOIL.
  • Repeat with remaining cheese; stirring until thick. Stir in cilantro and chilies and season with salt and pepper.
  • Set pot over candles or Sterno on serving table. Serve with skewers of bread cubes, sausages and/or vegetables.
  • Serve with tortilla chips if desired.

CLASSIC CHEESE FONDUE

200ml dry white wine
1 tbsp lemon juice
200g comte or gruyère, grated
200g emmental, grated
2 tsp cornflour
1 tbsp kirsch or schnapps
1 garlic clove, halved (optional)
crusty bread, boiled new potatoes, vegetable crudités and cornichons, to serve

Steps:

  • Pour the wine and lemon juice into a heavy-based pan over a medium-low heat and warm until steaming. Add all of the cheese, a handful at a time, whisking between each addition until all the cheese has been added. Continue to stir for 4-5 mins until everything is fully melted, smooth and creamy. Mix the cornflour with the kirsch in a small bowl, then stir this into the cheese mixture. Continue to cook over a low heat for a minute more.
  • Rub the garlic on the inside of the fondue pot, if you like, then carefully pour the cheese mixture into the pot and immediately place it over the flame. (If you don't have a fondue set, add the garlic along with the wine in step one, then remove and discard it before you add the kirsch mixture.) Serve immediately with crusty bread, boiled new potatoes, vegetable crudités or cornichons for dunking, if you like. You can place the fondue back over a low heat if you need to reheat it after serving.

black pepper
3 tablespoons butter
2 cups canned diced tomatoes (undrained)
1/4 cup canned green chili pepper, finely minced
Tabasco sauce (to taste)
1 tablespoon butter
1 tablespoon flour
1/2 cup heavy cream
3/4 cup grated cheddar cheese

Steps:

  • Melt the butter in the fondue pot at medium heat.
  • Cook the onion until golden.
  • Pepper to taste.
  • Add tomatoes and simmer over low heat until the liquid is reduced.
  • Add chili peppers and tabasco sauce.
  • Mix the flour and butter and mix into the tomato mixture.
  • Stir in the cream and mix well.
  • Add the cheese and stir until melted.
  • Avoid boiling at this point, boiling will cause the sauce to separate.
  • Things to dip: Chunks of bread, breadsticks, natcho chips, corn chips.

1 tablespoon butter
1 tablespoon all-purpose flour
7 ounces Gruyere cheese, cubed

  • Bring the wine to a boil in a small saucepan.
  • Meanwhile, melt the butter in a medium saucepan over medium low heat. Whisk in the flour, and cook for about 5 minutes, stirring constantly to avoid sticking and burning.
