3 (1/4 inch thick) slices Boar's Head Bold® Ichiban Teriyaki™ Style Oven Roasted Chicken, cubed
¼ cup celery, diced
¼ cup scallions, diced
½ cup Mandarin oranges, diced
4 tablespoons soy sauce
4 tablespoons rice vinegar
1 teaspoon honey
1 teaspoon brown sugar

Steps:

  • Slice Teriyaki™ Chicken into small 1/4-inch cubes. Finely dice celery and scallions. Drain Mandarin oranges and slice into small pieces. Place the ingredients into a large mixing bowl and set aside.
  • In a separate large mixing bowl, combine the Teriyaki Sauce ingredients. Mix the sauce and pour into the large bowl with the other ingredients. Mix the salad and serve.

1 large carrot, julienned
3 cups cabbage, shredded
3 cups romaine lettuce, shredded
1 red bell pepper, sliced thin
2 Mandarin oranges, sliced
2 tablespoons chopped fresh basil leaves
½ cup slivered almonds, toasted
1 tablespoon white sesame seeds, toasted
½ cup fried wonton strips
1 teaspoon orange zest
½ cup orange juice
1 teaspoon finely grated fresh ginger
2 tablespoons rice vinegar
1 teaspoon honey
¼ cup light olive oil
Salt and pepper to taste

Steps:

  • Slice Boar's Head Teriyaki™ Style Chicken into strips and place to the side. In a large salad bowl, combine carrot, cabbage, lettuce, red bell pepper, oranges, basil, almonds, and sesame seeds. Toss lightly to mix all ingredients, and top with the chicken. Garnish with wonton strips.
  • In a small bowl, whisk together orange zest, orange juice, ginger, rice vinegar, honey, and olive oil. Season the dressing with salt and pepper to taste and drizzle over salad.

4 cups japanese rice
4 medium chicken thighs or 2 large chicken breasts
1 medium onion
0.5 (16 ounce) package frozen broccoli carrots cauliflower mix
1/4 head cabbage, sliced thinly
pickled ginger, called beni shoga
10 tablespoons soy sauce
5 tablespoons mirin
5 tablespoons sugar
1 teaspoon fresh ginger juice
1 garlic clove, smashed

Steps:

  • Cook rice according to directions.
  • Slice onion thinly. Cut chicken into bite-sized pieces, removing bones. Put soy sauce, sugar, mirin, sake, ginger juice and garlic in a pan. Add onion slices in the pot and simmer for a few minutes.
  • Boil enough water for 1/2 package of frozen carrots, broccoli and cauliflower. When water is at a boil, add contents of package of vegetables as well as 1/4 head of cabbage. When vegetables are almost done, (3-4 minutes), drain them. Add chicken and drained vegetables into the pan and simmer for a few minutes.
  • Serve hot steamed rice in a deep rice bowl. Put the chicken and vegetable topping on the top of rice. Place some beni shoga on the top if you would like.

Spicy Boar's Head Ichiban Teriyaki Style Chicken Grilled Sandwiches image

1 1/2 tablespoons hot pepper jelly
1 1/2 tablespoons Dijon mustard
8 slices 7-grain bread
12 slices Boar's Head Ichiban Teriyaki¿ Style Chicken
1 ripe avocado, thinly sliced
8 slices Boar's Head Bold 3 Pepper Colby¿ Jack Cheese
Kosher salt and freshly ground black pepper
3 tablespoons unsalted butter, at room temperature

Steps:

  • Stir together the pepper jelly and mustard in a small bowl.
  • To assemble the sandwiches, lay 4 slices of the bread on a cutting board. Top each with 3 slices Boar's Head Ichiban Teriyaki™ Style Chicken, one-quarter of the avocado and 2 slices Boar's Head Bold 3 Pepper Colby™ Jack Cheese. Spread the pepper jelly mixture on one side of the remaining 4 slices of bread, sprinkle with salt and pepper and then top each of the sandwiches with a slice.
  • Melt 1 tablespoon of the butter on a grill pan over medium-low heat. Spread the outsides of the sandwiches with the remaining 2 tablespoons butter. Add the sandwiches to the grill pan and toast until the cheese begins to melt and the bottoms are crisp and golden, 3 to 4 minutes. Press down with a metal spatula to compress the sandwiches, then flip them. Toast the other side, pressing again, until crisp and golden, another 3 to 4 minutes. Cut in half and serve.

Growing up in a family of race fans, watching the Daytona 500 on TV was something we always looked forward to. Mom always made these wings to snack on during the race. Once upon a time these were called Wing Dings, but somewhere along the way they were renamed Daytona Wings.

25 -30 chicken wings
1 cup soy sauce
1/4 cup water
3 tablespoons sugar
3 garlic cloves, minced
1/4 cup vegetable oil
1 teaspoon ground ginger
3/4 cup sherry wine

Steps:

  • Combine all ingredients except the wings in a large pitcher. Mix well.
  • Place chicken wings in single layer in a 9" x 13" pan.
  • Pour the liquid mixture over the wings.
  • Marinate at least 2 hours, flipping wings once. Keep wings refrigerated while marinating.
  • Bake at 350 degrees for 1 1/2 hours. Flip once during baking.

1 ripe avocado, thinly sliced
12 wasabi-flavored rice crackers
1 lime, halved
Togarashi seasoning, as desired (see Cook's Note)
3 slices Boar's Head Ichiban Teriyaki¿ Style Chicken
12 slices Japanese pickled ginger, drained
1 cup mizuna greens
2 tablespoons thinly sliced red bell pepper
1 scallion, thinly sliced

Steps:

  • Layer the avocado slices on the rice crackers on a serving tray. Squeeze a little lime juice over the avocado and sprinkle with the togarashi.
  • Cut the Boar's Head Ichiban Teriyaki™ Style Chicken slices into quarters and fold each quarter to fit on top of the crackers and avocado. Top each with a slice of pickled ginger and some mizuna. Sprinkle with the bell pepper and scallions and serve immediately.

TERIYAKI-STYLE CHICKEN

2 1/2 tablespoons soy sauce
1/2 teaspoon minced peeled fresh gingerroot
5 teaspoons honey
1 tablespoon medium-dry Sherry
1 tablespoon white-wine vinegar
1 garlic clove, minced and mashed to a paste with 1/2 teaspoon salt
1 boneless whole chicken breast (about 1 pound) with the skin on, halved

Steps:

  • In a bowl whisk together the soy sauce, the gingerroot, the honey, the Sherry, the vinegar, and the garlic paste. Flatten the chicken breast halves between sheets of plastic wrap until they are about 1/2 inch thick and let them marinate in the soy mixture, turning them once, for 20 minutes. Transfer the chicken, reserving the marinade in a small saucepan, skin sides down, to the oiled rack of a broiler pan and broil it under a preheated broiler about 6 inches from the heat for 5 minutes. While the chicken is cooking boil the reserved marinade until it is reduced by half. Brush the chicken with some of the marinade, turn it, and brush it with the remaining marinade. Broil the chicken for 6 to 8 minutes more, or until it is just cooked through, transfer it to a cutting board, and cut it on the diagonal into 1/2-inch-thick slices.
