Sheet Pan Teriyaki Chicken is an easy one pan meal made with tender chicken, crispy veggies with the most flavorful sweet and tangy Asian sauce.

Number Of Ingredients 15

1 cup low sodium soy sauce
4-5 tablespoons honey (depending on how sweet you like it)
3 1/2 tablespoons rice wine vinegar
1 1/2 teaspoons sesame oil (plus more for drizzling on vegetables)
3 garlic cloves (minced)
3/4 teaspoon grated ginger
1 tablespoon cornstarch
1/4 cup water
Salt and black pepper (to taste)
3 boneless skinless chicken breasts (cut in half lengthwise (about 1 1/2 pounds))
3 cups broccoli florets (about 2 bunches)
1 cup sliced carrots
Additional vegetables (optional)
1/4 cup edamame beans (1/4 cup pineapple chunks)
Green onions and sesame seeds for garnish

Steps:

  • In a medium saucepan over medium heat, whisk together soy sauce, honey, vinegar, sesame oil, garlic, ginger, cornstarch and water until combined. Bring to a simmer, stirring frequently, until sauce thickens and bubbles. Remove from heat and set aside.
  • Preheat oven to 400°F. Line a large sheet pan with parchment paper or foil coated with cooking spray and set aside.
  • Season each side of the chicken with salt and black pepper then drizzle spoonfuls of glaze over the chicken coating well on both sides. Reserve at least half of the glaze for later.
  • Cook in preheated oven for 20 minutes then remove the pan. Top chicken with additional glaze, flip chicken and glaze again.
  • Arrange the broccoli florets, carrots, edamame and pineapples in a single layer around the chicken. Season with black pepper and drizzle with 1/4 teaspoon of sesame oil and teriyaki glaze and toss to coat. Return to the oven and bake for another 15-20 minutes, or until the chicken is cooked through and juices run clear.**
  • Remove pan from oven, slice chicken into strips and drizzle with remaining sauce. Serve over rice or quinoa and garnish with green onions and sesame seeds, if desired.

2 carrots, sliced
1 bunch spring onions, green tops left whole (halved if thick), white parts finely sliced
8 free-range skinless, boneless chicken thighs
6 tbsp teriyaki sauce (we used Kikkoman Teriyaki Sauce with Roasted Garlic)
2 tbsp mirin (Japanese rice wine; from the world food aisle of large supermarkets)
Finely grated zest and juice 1 lime, plus wedges to serve
160g mix of asparagus, green beans and tenderstem broccoli
1 red chilli, sliced (optional)
Large handful coriander leaves, roughly chopped
2 x 250g packs microwaveable rice

Steps:

  • Heat the oven to 200°C/180°C fan/gas 6. Put the carrots and spring onion greens in a large baking dish or roasting tin, then lay the chicken thighs on top. Spoon over the teriyaki sauce and mirin, then add the lime zest and juice with a splash of water. Massage to coat the chicken, then roast for 30 minutes.
  • Remove the dish/tin from the oven, scatter over the asparagus, beans and tenderstem broccoli, then cover tightly with foil. Roast for 10 minutes more until everything is tender.
  • Serve scattered with the sliced spring onion, chilli (if using) and coriander leaves, with the rice (heated to the pack instructions) and lime wedges to squeeze over.

Roasted chicken thighs can be the juicy, meaty center of many weeknight meals. Add delicata squash, quickly tossed in a maple syrup-butter glaze, along with slices of lemon and sage, and you have a something more unusual, an interplay of flavors that don't generally meet on the same sheet pan. This recipe is a little too fussy to count as a fast weeknight dish, but there is nothing difficult about any of the steps. And it's a fine introduction to delicata squash, if you haven't cooked with them yet. Unlike many other winter squash varieties, they have a thin skin and don't need to be peeled (just cut them in half and remove the seeds), making them as easy to prepare as they are sweet.

1/2 lemon, ends trimmed, halved lengthwise, seeds removed, and thinly sliced crosswise into wedges
4 bone-in, skin-on chicken thighs (about 1 and 1/2 pounds)
1 tablespoon plus 1 teaspoon extra-virgin olive oil
1 tablespoon chopped sage
1 and 1/2 teaspoons coriander seed
1 and 1/2 teaspoons kosher salt
1 teaspoon black pepper
1/4 cup maple syrup
3 tablespoons unsalted butter, cut into cubes
Large pinch chile powder
1 delicata or acorn squash (1 and 1/4 pounds), seeded and sliced into 1/4-inch-thick rings
1/4 cup thinly sliced scallions, white and light-green parts

Steps:

  • Bring a small pot of salted water to a boil; drop in lemon slices and cook for two minutes. Drain well.
  • In a large bowl, toss chicken with lemon slices, 1 tablespoon oil, sage, coriander, 1 teaspoon salt and pepper. Let stand 30 minutes.
  • Heat oven to 425 degrees.
  • In a small saucepan over medium heat, combine syrup, butter, remaining 1/2 teaspoon salt and chile powder. Simmer for 3 minutes. Toss mixture with squash.
  • Spread squash in a 9-by-13-inch pan or on a large rimmed baking sheet. Nestle chicken and lemon on top of squash. Roast for 15 minutes. In a small bowl, toss scallions and remaining 1 teaspoon oil. Scatter over chicken and squash; keep roasting until chicken is no longer pink, about 20 minutes more.

6 zucchini
6 yellow squash
2 (5 ounce) bottles teriyaki marinade
1/2 cup parmesan cheese, fresh grated

Steps:

  • Wash and slice (butterfly) zucchini and squash starting about 1 1/2 inches from the stem end slicing down to the other end. Make about 4 slices per vegetable.
  • Place in a container and pour teriyaki marinade to coat all slices. Cover container and refrigerate for 12 hours.
  • When ready to cook, fan out slices on a medium heated grill and baste with leftover marinade. Grill five minutes each side. Just before removing from grill, top with parmesian cheese (allow cheese to melt). Serve fanned out.
