Number Of Ingredients 12

1 cup quinoa
2 cups water
1/2 tablespoon oil
4 ounces shiitake mushrooms (sliced)
2 tablespoons teriyaki sauce
1/2 teaspoon sesame oil
1/2 pound asparagus (cut into bite sized pieces and steamed)
1/4 cup edamame (blanched)
2 tablespoons teriyaki sauce
1/2 teaspoon sesame oil
1 green onion (chopped)
1 tablespoon sesame seeds (toasted)

Steps:

  • 1. Simmer the quinoa in the water until the water is absorbed, about 20 minutes. 2. Heat the oil in a pan. 3. Add the shiitake mushrooms and saute for a few minutes. 4. Add the teriyaki sauce until it is absorbed, about 1-3 minutes. 5. Add the sesame oil and remove from heat and let cool a bit. 6. Mix everything and serve.

2 teaspoons butter
1/2 pound sliced fresh mushrooms
1/2 medium green pepper, thinly sliced
1/2 small onion, thinly sliced
2 teaspoons reduced-sodium teriyaki sauce
2 teaspoons reduced-sodium soy sauce
4 lettuce leaves
2 bacon strips, cooked and crumbled

Steps:

  • In a nonstick skillet, melt butter. Add the mushrooms, green pepper, onion, teriyaki sauce and soy sauce; saute for 5 minutes or until vegetables are crisp-tender. Spoon onto lettuce leaves. Sprinkle with bacon.

1 tablespoon olive oil (or butter)
1/2 pound mushrooms (sliced)
1/4 cup teriyaki sauce
1 handful salad greens
1 handful grape tomatoes tomatoes
1 handful sliced cucumber
1 stalk celery celery
1 teaspoon toasted sesame seeds
1 green onion (sliced)
1 tablespoon goats cheese (crumbled)

Steps:

  • Heat the oil in a pan.
  • Add the mushrooms and saute until just caramelizing, about 10-15 minutes.
  • Add the teriyaki sauce and simmer to reduce to thicken.
  • Assemble the rest of the salad.
  • Pour the mushrooms and teriyaki sauce onto the salad and garnish with toasted sesame seeds, green onions and crumbled goat cheese.
