1 lb Lean Ground Meat (Raised without antibiotics preferred)
1/4 cup Ketchup (to mix with meatloaf)
1/3 cup Ketchup (For Top of Meatloaf)
2 Chipotle Peppers Adobo Sauce (Note, this will add medium heat. Reduce to 1 for mild and up to 3 for hot!)
1 Egg
1 cup Shredded Cheddar Cheese
1/2 tsp Salt
1/2 tsp Ground Pepper

Steps:

  • Preheat the oven to 400 F degrees. Line a loaf pan with foil to make it easy to remove the meatloaf and for easy clean up.
  • In a mini food processor, add 1/4 cup ketchup and the chipotle peppers in adobo sauce. Blend until smooth.
  • Next, add the egg to the mini processor and pulse until blended/combined.
  • To a large mixing bowl, add the ground beef, ketchup/chipotle mixture, salt, pepper, and shredded cheese.
  • Mix to combine. Note: it will seem a bit wet, but that is just right.
  • Transfer the meatloaf mix to the loaf pan lined with foil. Form it into a loaf shape. Then top with the remaining 1/3 cup ketchup.
  • Bake for 45 minutes uncovered. That's it! When you take it out, let it rest for 5-10 minutes until the juices soak back into the meat.
  • Slice, serve, Enjoy!

2 eggs
⅓ cup hickory flavored barbeque sauce
2 cloves garlic, minced, or to taste
2 chipotle chilies in adobo sauce, minced, or to taste
2 tablespoons adobo sauce from chipotle peppers
1 teaspoon kosher salt
1 teaspoon coarse ground black pepper
½ teaspoon celery salt
½ teaspoon ground cumin
1 tablespoon Worcestershire sauce
1 onion, chopped
½ cup dry oatmeal
2 pounds lean ground beef
2 tablespoons hickory flavored barbeque sauce

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Spray a 9x5-inch loaf pan with cooking spray.
  • Beat the eggs in a large mixing bowl until smooth, then whisk in 1/3 cup barbeque sauce, garlic, chipotle chiles, adobo sauce, kosher salt, black pepper, celery salt, cumin, and Worcestershire sauce until evenly smooth. Mix in the onion, oatmeal, and ground beef with your hands until evenly blended. Pack the mixture into the prepared pan. Brush the top of the meatloaf with 2 more tablespoons of barbeque sauce.
  • Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

2 1/4 pounds ground dark turkey meat
2 slices white bread, torn into small pieces (about 1 1/2 cups)
1 small red onion, minced (about 3/4 cup)
1/2 cup cilantro leaves, finely chopped
1 large egg, lightly beaten
2 teaspoons Worcestershire sauce
2 teaspoons minced chipotle chiles
2 teaspoons adobo sauce
Coarse salt and freshly ground pepper
1/2 cup ketchup
6 small sweet potatoes (about 7 ounces each)
2 tablespoons extra-virgin olive oil
Watercress and lime wedges, for serving

Steps:

  • Preheat oven to 375 degrees. Combine meat, bread, onion, cilantro, egg, Worcestershire, adobo sauce, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper in a bowl. Transfer mixture to a 5-by-9-inch nonstick loaf pan. Stir together chiles and ketchup; brush onto top of loaf.
  • Prick potatoes with a fork. Set loaf pan on a rimmed baking sheet; surround with potatoes. Bake until a thermometer inserted in center of loaf reads 160 degrees, 1 hour, 15 minutes. Peel potatoes; add oil, season with salt and pepper, and mash. Reserve half of loaf for next day; serve remainder with potatoes, watercress, and limes.

1 ounce dried chipotle chilies, stemmed
2 ripe Italian Roma tomatoes, cored
3 garlic cloves, peeled
2 cups water
2 tablespoons olive oil
1 onion, diced
3 celery stalks, diced
1 teaspoon ground cumin
1/8 teaspoon ground nutmeg
11/4 pounds ground beef
11/4 pounds ground pork
1/2 cup fresh white bread crumbs
11/2 teaspoons salt
3 large eggs, beaten to blend

Steps:

  • Combine chipotles, tomatoes, garlic and water in medium saucepan. Season with salt and pepper. Bring to boil. Reduce heat and simmer until reduced by 1/3, about 20 minutes. Cool. Transfer to processor. Puree until smooth. Strain.
  • Heat oil in heavy large skillet over medium high heat. Add onion and celery and saute until tender, about 10 minutes. Add cumin and nutmeg and stir 1 minute. Remove from heat. Transfer to large bowl. Cool.
  • Preheat oven to 375 degrees F. Add beef, pork, bread crumbs and salt to onion mixture. Add 1/2 cup chipotle sauce. Mix until well blended. Add eggs and mix well. Press mixture into 9x5-inch loaf pan. Brush top with some of remaining chipotle sauce. Bake meatloaf until thermometer inserted into thickest part registers 160 degrees F, about 1 hour. Transfer to rack. Cool slightly. Drain off any oil. Turn meatloaf out onto platter. Serve with remaining salsa.

2 pounds ground chuck
2 eggs
2/3 cup marinara
3/4 cup finely diced parsley leaves
2 teaspoons salt
1 teaspoon freshly ground black pepper
1 1/3 cups breadcrumbs
Two 16-ounce cans tomatoes
1 large onion, chopped
2 tablespoons tomato paste
2 tablespoons olive oil
3/4 cup dark brown sugar
1/2 cup apple cider vinegar
1 chipotle pepper, chopped
2 tablespoons chipotle sauce
1 tablespoon Worcestershire
1/2 teaspoon freshly ground black pepper
1 tablespoon lime juice
24 slices wheat bread
12 slices pepper jack cheese

Steps:

  • Preheat the oven to 350 degrees F.
  • For the meatloaf: In a large mixing bowl, combine the ground beef, eggs, marinara, parsley, salt, pepper and breadcrumbs. Mix thoroughly and put on a baking dish. Shape the meat into a loaf and cover the baking dish. Bake in the preheated oven for 60 to 90 minutes. Uncover the last 15 minutes of bake time. Remove the meat from the oven and let it sit for 15 minutes before slicing. Slice and keep warm.
  • For the chipotle ketchup: Puree the tomatoes until smooth in a blender. Cook the onions in a heavy pan, over medium heat until softened. Add the pureed tomatoes to the onions, then add all the remaining ingredients except the lime juice. Simmer uncovered, stirring frequently, until thick, about 1 hour.
  • Remove from heat and let the mixture cool down a little before adding it to a blender. Add the lime juice and puree again.
  • Put 1 piece of sliced meatloaf on half of the wheat bread slices, add a slice of pepper jack cheese and top with chipotle ketchup. Cover with remaining bread slices and serve.
