1 (15 ounce) can black-eyed peas, drained
1 (11 ounce) can corn, drained (white corn if you can get it)
1 medium tomatoes, chopped
1 medium green pepper, chopped
2 -4 green onions, sliced
1/3 cup chopped fresh cilantro
1 cup picante sauce
2 tablespoons cider vinegar
2 garlic cloves, minced

Steps:

  • Combine the peas, corn, tomatoes, green pepper, green onions, cilantro, picante sauce, vinegar and garlic in a bowl; mix gently.
  • Chill about 8 hours.
  • Drain.
  • Serve with tortilla chips.

Two 15-ounce cans black-eyed peas, drained and rinsed
1/4 red onion, finely chopped
1/4 cup roughly chopped fresh parsley
1/4 cup red wine vinegar
2 tablespoons extra-virgin olive oil
3 cloves garlic, minced
2 plum tomatoes, seeded and chopped
1 small red bell pepper, seeded and finely chopped
1 jalapeno, seeded and finely chopped
Dash hot sauce, such as Tabasco
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
Tortilla chips, for serving

Steps:

  • Combine the black-eyed peas, red onions, parsley, vinegar, oil, garlic, tomatoes, bell peppers, jalapeno peppers and hot sauce in a bowl. Season with salt and pepper. Cover with plastic wrap and refrigerate at least 3 hours and up to 24 hours. Serve with tortilla chips.

1 large green bell pepper, chopped
1 large onion, chopped
1/2 cup chopped jalapeno pepper
1/2 hot salsa
1/4 cup cider vinegar
3/4 cup sliced green olives
3/4 cup Italian salad dressing
2 bay leaves
1 teaspoon salt (optional)

Steps:

  • Combine peas, green pepper, onion, jalapeƱos, salsa, vinegar, olives, and salad dressing in bowl; mix well.
  • Stir in bay leaves and salt (optional).
  • Chill, covered, overnight.
  • Remove bay leaves and serve with dip-sized corn chips.
