HERB CRUSTED BEEF TENDERLOIN

2 pounds center cut beef tenderloin, trimmed
1/4 cup olive oil
2 teaspoons chopped fresh rosemary
2 teaspoons chopped fresh Italian parsley
2 teaspoons chopped fresh thyme leaves
2 teaspoons minced garlic
1 tablespoon kosher salt
1 tablespoon freshly ground black pepper
Potato Flan, recipe follows
1 cup Red Onion Marmalade, recipe follows
1 tablespoon unsalted butter
3 tablespoons minced garlic
9 Yukon Gold potatoes, very thinly sliced (about 3 pounds)
1/2 pound gruyere, grated
3 eggs
1 1/2 cups heavy cream
1 tablespoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon grated nutmeg
2 tablespoons olive oil
1 1/2 pounds red onion, thinly sliced
1/4 cup plus 2 tablespoons sugar
1 1/2 teaspoons kosher salt
1/2 cup ruby port
1/2 cup red wine vinegar
1 1/2 teaspoons chopped fresh thyme

Steps:

  • Preheat the oven to 400 degrees F.
  • Tie the beef with butcher's string and rub with the olive oil. Combine the rosemary, parsley, thyme, and garlic and pat the mixture on the beef. Season the beef with salt and pepper.
  • Over high heat sear the beef in an ovenproof skillet, turning to brown on all sides, about 5 minutes. Place the skillet directly into the oven and roast the beef for 20 to 25 minutes. Let the beef rest for 10 minutes before removing the string and slicing.
  • Preheat the oven to 375 degrees F.
  • Line the bottom and sides of an 8 by 8 by 2-inch baking pan with parchment paper. Rub the parchment paper with butter and a little bit of the garlic. Lay the potatoes in overlapping rows to cover the bottom of the parchment paper. Sprinkle with some of the cheese and garlic. Repeat the layering process until all the potatoes, cheese and garlic have been used.
  • Whisk together the eggs, cream, salt, pepper, and nutmeg. Pour the egg mixture over the potatoes. Press down on the potatoes to distribute the egg mixture. Cover the dish with parchment paper and bake for 1 1/2 hours. (Remove the parchment paper from the top for the last 20 minutes to brown the top).
  • Allow the flan to rest for at least 15 minutes before turning out of the pan and cutting into serving sizes. This dish is best made a day ahead, then portioned and reheated in 400 degree F oven for 10 to 15 minutes.
  • In a medium pot heat the olive oil over medium-high heat, add the onions, and cook for 7 minutes until soft, stirring frequently. Stir in the sugar and salt, and cook for a further 7 minutes. Add the port and vinegar, and bring to a boil. Reduce the heat to medium-low and simmer for 30 minutes or until thickened. Stir in the thyme. Keeps for 1 week stored in the refrigerator in an airtight container

1/2 teaspoon salt
4 teaspoons butter
2/3 cup half-and-half cream
2 tablespoons minced fresh parsley

1 teaspoon beef bouillon granules
1/2 to 3/4 teaspoon crushed red pepper flakes

Steps:

  • Cut each tenderloin into 12 slices; sprinkle with salt. In a large nonstick skillet, heat butter over medium heat; brown pork in batches, 3-4 minutes per side. Return all pork to pan., Mix remaining ingredients; pour over pork. Cook, uncovered, over low heat until sauce is thickened and a thermometer inserted in pork reads 145°, 2-3 minutes, stirring occasionally. Let stand 5 minutes before serving.

1 teaspoon steak seasoning
2 tablespoons butter
1 cup sliced fresh mushrooms
1/2 cup reduced-sodium beef broth
1/4 cup heavy whipping cream
1 tablespoon steak sauce
1 teaspoon garlic salt with parsley
1 teaspoon minced chives

Steps:

  • Sprinkle steaks with steak seasoning. In a large skillet, heat butter over medium heat. Add steaks; cook until meat reaches desired doneness, 4-5 minutes on each side. Remove steaks from pan., Add mushrooms to skillet; cook and stir over medium-high heat until tender. Add broth, stirring to loosen browned bits from pan. Stir in cream, steak sauce and garlic salt. 4 teaspoons blue cheese
4 teaspoons yogurt
2 teaspoons onion
1 dashes white pepper
4 units beef tenderloin steaks
1 cloves garlic
0.5 teaspoons salt
2 teaspoons parsley

Steps:

  • Combine cream cheese, blue cheese, yogurt, onion and pepper; reserve. Rub each side of beef steaks with garlic.
  • Place steaks on rack in broiler pan so surface of meat is 2 to 3 inches from heat. Broil 5 to 6 minutes. Season with salt. Turn and broil 3 to 4 minutes.

3 tablespoons butter, softened
3 tablespoons flour
3 cups beef broth
6 tablespoons madeira wine
2 1/4 lbs beef tenderloin
1/4 cup breadcrumbs
6 tablespoons blue cheese
1/4 cup parsley, chopped
1/4 cup chives, chopped
1/4 teaspoon black peppercorns, crushed
1 tablespoon olive oil

Steps:

  • Combine the butter and the flour together.
  • Bring the beef broth and madiera to a boil.
  • Whisk in the butter and flour mixture until completely dissolved.
  • Simmer for about 15 to 20 minutes, until the liquid is thickened and reduced by half.
  • While the sauce is simmering, preheat the oven to 350*F.
  • Spray the rack of a roasting pan with nonstick spray and place in the pan.
  • Slice the tenderloin into 6 portions that are approximately 3 inched in diameter and 1 1/2 inches thick.
  • Tie butcher's twine around the beef medallions so they maintain their shape while cooking if desired.
  • Combine the breadcrumbs, blue cheese, parsley, chives and pepper to form a paste.
  • Heat the olive oil in a nonstick skillet over high heat.
  • Sear the medallions until just browned, 2 to 3 minutes on each side.
  • Arrange the medallions in a roasting pan.
  • Coat the top side of each medallion with 3 TBs of the blue cheese and herb crust.
  • Roast until the crust is golden brown and the meat is cooked as desired, about 6 to 8 minutes for medium rare, depending on the size of the medallions.
  • If butchers twine was used, be sure to remove it.
  • Serve the medallions on a pool of the warm madiera sauce.
