This makes such a light batter. You can find Kewpie mayo at most Asian stores. I also like this with Yum Yum sauce

FOR THE BATTER
1 c cake flour
3/4 c very cold club soda
RED SNAPPER
4 red snapper fillets
salt and pepper
oil for deep frying
kewpie mayo for drizzling

Steps:

  • 1. Whisk the cake flour and club soda together to make a thin batter but not runny. Season the fish with salt and pepper
  • 2. Bring oil to the 350 degree temperature. Dredge the fish in the tempura batter. Deep fry about 5 to 7 minutes depending on the thickness of the fish and until it's golden brown.
  • 3. Drain on paper towels. Served drizzled with Kewpie Mayo
