Hot Honey Bangin' Crunchy Cornflake Baked Chicken image

Incredible crunchy cornflake baked chicken tossed with delicious spices and drizzled with hot honey. This easy cornflake chicken recipe comes together with simple ingredients and in under an hour for a dinner you'll crave!

For the crunchy cornflake coating:
6 cups cornflakes
1 teaspoon paprika
1/2 teaspoon onion powder
½ teaspoon garlic powder
1/2 teaspoon ground black pepper
1/2 teaspoon salt
For the chicken:
2 large eggs
2 tablespoons almond milk (or milk of choice)
1 ½-2 pounds boneless skinless chicken thighs
For the hot honey:
½ cup honey
2-3 teaspoons hot sauce (i like cholula)

Steps:

  • Preheat the oven to 400 degrees F.
  • Add the cornflakes to the bowl of the food processor and pulse until they reach a fine crumb similar to breadcrumbs. Transfer mixture to a medium bowl and whisk in the paprika, onion powder, garlic powder, black pepper and salt until well combined.
  • In a separate medium bowl, whisk together the eggs and almond milk. Set aside.
  • Line a large baking sheet with an oven safe wire metal rack. Spray with nonstick cooking spray.
  • Dip each chicken thigh into the egg mixture, then use a tong to grab each chicken thigh and toss generously into the breadcrumb mixture to completely coat with breadcrumbs. Use tongs to transfer to the wire rack. Repeat with remaining chicken pieces.
  • Generously spray the tops of the chicken thighs with nonstick spray. Bake in the oven for 20-25 minutes until cooked through and temp reaches 165 degrees F with a meat thermometer.
  • Right before serving, make the quick hot honey: add honey and hot sauce to a small bowl, microwave for 10-15 seconds. Taste and add more hot sauce to adjust to your liking. Drizzle honey over the chicken before serving or use it as a dip for the chicken.

I know: It's called Team Flakes Chicken, yet there is no Team Flakes cereal in the recipe. I actually got the recipe as a young girl back in the '70's from the side of the cereal box, and have been making it ever since. They stopped making the cereal in the mid-1990's (our major loss), but that doesn't mean we can't still enjoy this easy and tasty chicken. I use Special K cereal, or Smart Start, but any cereal flake will do, though I don't care for corn flakes as they get soggy and are too one-dimensional in flavor. The Special K has a nice malt-flavored layer which gives the coating some crunch and offers a nice taste (though I still miss the Team Flakes). This dish is terrific when prepared with chicken tenders and served cold for a picnic (we love it at the Hollywood Bowl before a concert, served alongside a pasta salad), or, as we enjoyed it tonight, fresh from the oven, with pilaf, creamed spinach, and a wedge salad. My favorite aspect is that my family thinks it's fried chicken, and it's just cereal! I made a double recipe so we can enjoy it cold for lunch tomorrow; yum!!

6 tablespoons flour
1 teaspoon seasoning salt, divided
1/4 teaspoon ground black pepper
2 eggs, beaten
3 cups Special K cereal, crushed
2 teaspoons dried basil leaves
1/3 cup butter, melted
4 boneless skinless chicken breasts

Steps:

  • Line a baking sheet with parchment paper; set aside.
  • In a shallow pie pan, combine flour, 1/2 teaspoon seasoned salt, and ground black pepper; set aside.
  • In a second pie pan, beat eggs; set aside.
  • In a large bowl, toss crushed cereal with remaining 1/2 teaspoon seasoned salt, dried basil leaves, and melted butter.
  • Chicken breasts can be used whole, or cut into strips (about 3 per breast).
  • To assemble chicken: Dredge the chicken in the flour mixture and shake off excess.
  • Next, dip the chicken into the beaten egg.
  • Coat each chicken piece in cereal mixture and lay on prepared baking sheet.
  • Bake the chicken in preheated 350 degree oven for 30 minutes, or until juices run clear when chicken is pierced with a knife.
  • Delicious served hot or cold.

1 cup milk
3 skinless, boneless chicken breast halves - cut into cubes
1 cup crushed corn flake cereal crumbs

Steps:

4 bone-in, skinless chicken drumsticks
4 bone-in, skinless chicken thighs
Coarse salt and freshly ground pepper
1 large egg
2 cups crushed cornflakes
1 tablespoon olive oil
1/2 teaspoon cayenne pepper, (optional)

Steps:

  • Preheat oven to 400 degrees. Rinse chicken, and pat dry. Season generously with salt and pepper.
  • In a small bowl, whisk egg with 1 tablespoon water. In a large bowl, mix cornflakes with oil, cayenne, and 1 teaspoon salt.
  • Working with one piece at a time, dip chicken in egg mixture, then coat with seasoned cornflakes, pressing flakes to help them adhere. Transfer coated pieces to a rimmed baking sheet.

2 tablespoons butter, melted
1 cup crushed cornflakes
1 cup all-purpose flour
1-1/2 teaspoons seasoned salt
4 chicken drumsticks (4 ounces each), skin removed
4 bone-in chicken thighs (about 1-1/2 pounds), skin removed
3/4 cup egg substitute

Steps:

  • Preheat oven to 425°. Drizzle butter in a 13x9-in. baking dish. In a shallow bowl, combine the cornflakes, flour and seasoned salt. Place egg substitute in another shallow bowl. Dip chicken in egg substitute, then roll in cornflake mixture. Repeat., Arrange chicken in prepared dish, meatier side down. Bake, uncovered, for 20 minutes. Turn chicken over; bake until a thermometer reads 170°-175°, 10 to 15 minutes longer.
