12 large eggs
4 ounces Monterey Jack cheese, shredded (about 1 cup)
1/2 cup whole milk
1/2 teaspoon table salt
1/4 teaspoon black pepper
1 (32-oz.) package frozen Tater Tots
4 ounces sharp Cheddar cheese, shredded (about 1 cup)
6 thick-cut smoked bacon slices, cooked and crumbled

Steps:

  • Preheat oven to 350°F. Whisk together eggs, Monterey Jack cheese, milk, salt, and pepper in a large bowl. Arrange Tater Tots in an even layer in a lightly greased (with cooking spray) 13- x 9-inch baking dish. Pour egg mixture evenly over Tater Tots. Top evenly with Cheddar cheese.
  • Bake in preheated oven until set and cheese is golden brown, 40 to 45 minutes. Let stand 10 minutes. Sprinkle with crumbled bacon.

6 large eggs
1/2 cup whole milk
1/2 teaspoon salt
1/4 teaspoon ground pepper
1/4 cup finely chopped onion
8 ounces bacon, sausage, or diced ham (see notes)
1 cup shredded cheese, divided
16 ounces frozen tater tots

Steps:

  • If your protein isn't cooked, cook it, then set it aside to cool a bit. Cook the onion in the same skillet for 3-4 minutes until softened.
  • Preheat your oven to 375 F and spray a 9 1/2-inch pie dish with nonstick spray (see notes). Set aside.
  • In a large mixing bowl, whisk together the eggs, milk, salt, and pepper. Stir in the protein, onion, and 1/2 cup of the shredded cheese.
  • You may either add the tater tots to the prepared baking dish and then pour the egg mixture over *or* pour in the egg mixture and arrange the tater tots in a decorative pattern on top of the egg mixture.
  • Top with the remaining cheese and bake for 35-45 minutes until the eggs are cooked through, the tater tots are nice and hot, and the shredded cheese topping is lightly browned.

1 can (10.5 oz.) condensed cream of potato soup
1 tsp. red pepper flakes

Steps:

  • Preheat oven to 350 degrees F.
  • In large casserole dish, combine all ingredients, leaving ½ cup of the cheese for topping, to ensure even spread of ingredients around the TATER TOTS.
  • Cover and bake 35 minutes. Sprinkle remaining cheese over the top and bake uncovered an additional 5 minutes, or until cheese is melty.

1 pound bacon
1 pound bulk pork sausage
3 ½ cups frozen bite-sized potato nuggets (such as Tater Tots®)
½ cup unsalted butter, melted
3 cups grated Colby-Jack cheese, divided
8 large eggs
2 cups milk
1 small onion, chopped
1 ½ tablespoons prepared yellow mustard
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Spray a 9x12-inch baking dish with cooking spray.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and let cool.
  • Heat the same skillet over medium-high heat and add sausage. Cook and stir until browned and crumbly, 5 to 7 minutes. Remove from heat. Crumble cooled bacon.
  • Place potato nuggets in the bottom of the prepared baking dish, distributed evenly. Drizzle evenly with melted butter. Sprinkle with 1 1/2 cups of Colby-Jack cheese.

Butter, for the baking dish
1 tablespoon olive oil
1 pound spicy bulk breakfast sausage
1 medium onion, very finely diced
1 cup milk
1/2 cup half-and-half
1/4 teaspoon seasoned salt
1/4 teaspoon cayenne
4 large eggs
1 red bell pepper, very finely diced
1 green bell pepper, very finely diced
2 cups grated Cheddar cheese
1 cup grated pepper jack cheese
Kosher salt and freshly ground black pepper

Steps:

  • Line up the tater tots in a buttered 9-by-13-inch baking dish.
  • Add the olive oil to a large skillet over medium heat. Add the sausage and onion and cook, breaking the sausage up with a wooden spoon, until browned and cooked through, 8 to 10 minutes. Set aside to cool slightly, then sprinkle it over the tater tots.
  • In a large bowl, mix the milk, half-and-half, seasoned salt, cayenne, eggs, bell peppers, half of both cheeses and some salt and pepper. Pour over the tots and sausage mixture, then top with the rest of the cheese. Cover with foil and refrigerate overnight.
