1 lb. lean ground beef
1 small onion, chopped
1 can (14-1/2 oz.) diced tomatoes, undrained
1 can (10-1/2 oz.) condensed beef broth
1 cup frozen mixed vegetables (carrots, corn, green beans)
2 cups instant white rice, uncooked
1/4 cup KRAFT Grated Parmesan Cheese

Steps:

  • Brown meat with onions in large skillet; drain.
  • Add tomatoes, broth and frozen vegetables; stir. Bring to boil, stirring occasionally.
  • Stir in rice and cheese; cover. Remove from heat. Let stand 5 min.

1 1/2 - 2 c uncooked minute rice, prepared according to box directions
1 lb ground beef
1 medium onion, chopped
3 clove garlic, minced
1 c beef broth
1/2 tsp beef bouillon paste - optional
1 c tomato sauce or chopped tomatoes in juice
2 1/2 Tbsp chili powder
1 1/2 tsp cumin
1 1/2 tsp salt
1/2 tsp pepper
1 - 15 oz can ranch style pinto beans
1 - 4 oz can green chiles
1 can(s) corn, drained - optional
1 c shredded pepper jack cheese - or cheddar
toppings - sour cream, corn chips,chopped green onion - optional

Steps:

  • 1. Cook rice according to package directions.
  • 2. Meanwhile, in a large skillet, cook the beef, onion and garlic over medium heat until meat is no longer pink; drain.
  • 3. Stir in the rice, beans, broth, tomato sauce, chili powder, salt, cumin, chiles, corn and pepper; heat through. This pic is missing the rice...oops!
  • 4. Sprinkle with cheese, cover and cook until cheese is melted - sometimes I set under broiler. I leave this set for 5 minutes to thicken up.
  • 5. Serve by itself or with your favorite toppings.

1 yellow onion, diced
1 red bell pepper, diced
2 cloves garlic, minced
1 teaspoon salt
1 teaspoon pepper
10 oz can Rotel Diced Tomatoes & Green Chilies (undrained)
1 1/2 cups beef broth
1 cup long grain rice
2 tablespoons Worcestershire sauce
1 cup shredded Cheddar cheese
parsley for garnish if desired

Steps:

  • In a large skillet, brown ground beef over medium-high heat. Drain and return to skillet. While meat is browning, dice onion and bell pepper.
  • Add onion, pepper, garlic, salt, and pepper to meat and stir to mix. Cook 3 minutes stirring occasionally.
  • Add beef broth, rice, Rotel, and Worcestershire to the skillet and stir to mix.
  • Bring to a boil, reduce heat and cover. Simmer for 20 minute or until rice is tender.

8 oz white button mushroom, sliced
2 tablespoons butter
½ onion, diced
1 lb ground beef
2 teaspoons garlic powder
3 tablespoons flour
1 teaspoon paprika
¼ cup dry sherry
4 cups low sodium beef broth
1 ½ teaspoons salt
½ teaspoon pepper
4 cups dry egg noodle
½ cup sour cream
2 tablespoons fresh parsley, chopped

Steps:

  • Add olive to a large pan over medium heat. Once the oil begins to shimmer, add the mushrooms and cook until tender, 5 to 6 minutes. Transfer the mushrooms to a plate.
  • In the same pan, add the butter. Add the onion, ground beef, and garlic powder. Stir until the meat is browned, breaking it up as you stir.
  • Drain any excess fat and return the pan to the stove.
  • Add the flour and paprika. Stir until thick, about 1 to 2 minutes.
  • Add the sherry, and stir, scraping up any brown bits from the bottom of the pan.
  • Add the beef broth and bring the mixture to a boil.
  • Add the egg noodles, salt, and pepper. Reduce the heat to simmer. Cover the pan with a lid.
  • Stir often, until the noodles are tender, about 8 to 10 minutes.
  • Return the mushrooms to the pan and stir to combine.
  • Add the sour cream and stir. Top with chopped parsley.

1/2 cup KRAFT 2% Milk Shredded Mozzarella Cheese

  • Brown meat in large nonstick skillet on medium-high heat; drain. Add onion; cook and stir until tender. Stir in dressing mix. Reduce heat to medium-low. Add zucchini, tomatoes and corn; mix lightly. Cover; simmer 5 minutes.
